  • PREHEAT oven to 350º F. Grease 9-inch-square baking pan.
  • Microwave chocolate pieces in medium, uncovered, microwave-safe bowl on HIGH (100%) power for 45 seconds; stir.
  • If pieces retain some of their original shape, microwave at additional 10- to 15-second intervals, stirring just until melted; cool to room temperature.
  • Beat cream cheese and 1/4 cup sugar in small mixer bowl until smooth. Beat in 1 egg and 1/2 teaspoon vanilla extract.
  • Combine flour and salt in small bowl.
  • Beat remaining 3/4 cup sugar and butter in medium mixer bowl until creamy.
  • Add remaining 3 eggs, milk and remaining teaspoon vanilla extract; beat until well mixed.
  • Beat in melted chocolate.
  • Stir in flour mixture until blended.
  • Spread into prepared baking pan.
  • Drop tablespoons of cream cheese mixture randomly over chocolate mixture.
  • Swirl mixtures deeply with spoon, pulling chocolate mixture up to surface.
  • Bake for 33 to 38 minutes or until wooden pick inserted in center comes out slightly sticky.
  • Cool completely in pan on wire rack.
  • Refrigerate for 1 hour.
  • Cut into bars.

Steps:

  • Preheat the oven to 325 degrees F. Grease a 9-by-9-inch baking dish with the softened butter and set aside.
  • In a medium saucepan over medium-low heat, melt the 2 sticks butter and the chocolate together, stirring constantly, until smooth. Remove from the heat and stir in the cocoa powder, granulated sugar, salt, 1 cup of the flour and 5 of the eggs. Pour the batter into the prepared baking dish.
  • Using an electric mixer, beat the cream cheese until smooth, 3 to 4 minutes. Add the confectioners' sugar, vanilla, the remaining 1/4 cup flour and the remaining egg. Mix until smooth. Dollop the cream cheese mixture over the brownie batter. With a butter knife or fork, swirl the mixtures together to form a design.
  • Bake until the brownies just slightly pull away from the sides of the baking dish, 45 to 50 minutes. Allow to cool in the pan for 15 minutes. Slice into 9 squares and serve.

  • Preheat oven to 350 degrees. Brush a 9-inch square baking pan with butter. Line bottom and two sides with a strip of parchment paper, leaving a 2-inch overhang on the two sides. Butter paper, and set pan aside. In a small bowl, whisk 1 cup flour, cocoa, baking powder, and salt; set aside.
  • Place 8 tablespoons (1 stick) butter and chocolate in a large heat-proof bowl set over (not in) a saucepan of gently simmering water. Heat, stirring occasionally, until smooth, 2 to 3 minutes; remove bowl from pan. Add 1 1/4 cups sugar; mix to combine. Add 3 eggs, and mix to combine. Add flour and cocoa mixture; mix just until moistened (do not overmix).
  • Prepare cream-cheese mixture: Whisk cream cheese with 2 tablespoons room-temperature butter. Whisk in 1/4 cup sugar, 1 egg, and 2 tablespoons all-purpose flour. Alternately spoon chocolate batter and cream-cheese mixture into pan; with the tip of a paring knife, swirl to marble.
  • Bake until a toothpick inserted in center comes out with a few moist crumbs attached, 50 to 60 minutes. Cool in pan for 30 minutes. Using paper overhang, lift brownies out of pan; transfer to a rack to cool completely (still on paper). On a cutting board, using a dampened serrated knife, cut into 16 squares.

  • Preheat the oven to 350 degrees F. Butter an 8-by-8-inch baking pan with the 1 tablespoon butter.
  • Melt the chocolate with the butter and cream in a double boiler. Once melted, remove from the heat and mix in the marshmallow creme and sugar with a hand mixer. Mix in the eggs, one at a time, and then the vanilla.

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking pan.
  • Combine cream cheese with 1/4 cup sugar and 1 egg in a mixing bowl; beat until smooth. Stir 1 cup chocolate chips into the cream cheese mixture. Set aside.
  • Fill a saucepan with water and bring to a boil. Turn the heat off, and set a heatproof mixing bowl over the water. In the mixing bowl, combine butter with the remaining cup of chocolate chips; stir until just melted and blended together.   • Preheat the oven to 325°F.
  • Lightly grease a square 8X8-inch pan.
  • To make the cream cheese layer, put the cream cheese in a mixer bowl and mix with the paddle attachment until it's smooth.
  • Add the rest of the cream cheese layer ingredients, beating well and scraping down and of the batter that dares try to escape up the sides of the bowl.
  • To make the brownie layer, melt the butter and the chocolate together until smoothly melted.
  • Put aside and let come to room temperature.
  • Be patient, it's worth it.
  • In a separate bowl from the cream cheese mixture, mix the eggs and the sugar until it's thick and a gorgeous lemon color.
  • Add the chocolate mixture and mix well until combined.
  • Again, scrape down the sides of the bowl.
  • Add the flour, vanilla, baking powder, salt and the chocolate chips, mix well until combined.
  • Pour half the chocolate mixture into the prepared pan.
  • Dollop the cream cheese mixture over that.
  • Don't worry if it doesn't cover the chocolate. It won't.
  • Add the remaining chocolate mixture.
  • Take a knife and gently draw it through the batters, from left to right and from top to bottom, making a checkerboard pattern.
  • Don't allow the mixtures to combine, be careful.
  • Sprinkle with the nuts.
  • Bake in the oven until the sides, but not the tops, begin to brown, about 25 to 30 minutes.
  • Don't wait until a tester comes out clean, if you do then you have overbaked and basically murdered the brownies.
  • Set aside to cool for about 10 minutes, cut into 12 or 16 brownies, cover and refrigerate.

Steps:

  • Preheat oven to 325 degrees. Butter a 9-by-13-inch baking pan; set aside. Make the cream cheese batter: Beat cream cheese, butter, and sugar in the bowl of an electric mixer fitted with the paddle attachment until well blended. Add eggs, one at a time, beating well and scraping down the sides of the bowl at least once. Add vanilla, and beat until combined. Using a large rubber spatula, fold in the flour and chocolate chips.
  • Make the chocolate batter: Melt chocolate and butter in a medium heatproof bowl set over a pan of barely simmering water. Remove bowl from heat, and let cool completely.
  • In a large bowl, using a handheld whisk, beat the eggs, gradually adding the sugar, until mixture is thick and pale. Whisk in the cooled chocolate mixture. Add the vanilla, and combine well.
  • Combine flour, baking powder, and salt in a medium bowl, and fold into the chocolate mixture. Fold in chocolate chips. Measure out about 1/2 cup chocolate batter, and set aside. Spoon the rest of the batter into prepared baking pan, and spread cream cheese batter evenly over the top. Drop reserved chocolate batter in dollops on top. Run a knife or offset spatula all the way through the batters to create a swirling effect.
  • Bake until a cake tester inserted near the edges comes out clean, about 35 minutes. The center will still be fairly soft, but will continue to firm after being removed from the oven. Transfer to a wire rack; let cool in pan before cutting into squares and serving.

Brownies are a common dessert in our household - they're just about the only form of chocolate my husband will eat! I love this version that makes a big batch and has a rich cream-cheese layer in the center.

  • Preheat oven to 350°. In a microwave, melt chocolate and butter; stir until smooth. Cool slightly. In a large bowl, beat eggs and sugar. Stir in vanilla and the chocolate mixture. Gradually add flour to chocolate mixture (batter will be thick). Stir in nuts if desired. , Spread half of the batter evenly into a greased 13x9-in. baking pan; set aside. , In a small bowl, beat filling ingredients until blended. Gently spread over batter. Spoon remaining batter over filling; spread to cover., Bake 45-50 minutes or until filling is set. Cool on a wire rack 1 hour. Refrigerate at least 2 hours. Cut into bars. Refrigerate leftovers.,

THE ULTIMATE CREAM CHEESE SWIRLED BROWNIE

This is a Crisco recipe and is totally decadent. Everyone asked me to make these again. The recipe is made in a 9x13-inch pan, but I find that it doesn't cook evenly that way. I prefer to double the recipe and make it in three 8 or 9-inch square pans. They are a very soft and fudgey brownie. They're best after being frozen and can even be eaten straight out of the freezer.

The Ultimate Cream Cheese Swirled Brownie image

Steps:

  • Preheat oven to 350°F Grease a 9x13-inch pan with Golden Flavour Crisco. Double this recipe to make three 9-inch pans.
  • For cream cheese batter, cream Crisco, cream cheese, and sugar in medium-size bowl until smooth. Beat in eggs, flour, and vanilla thoroughly.
  • For brownie, melt Crisco and chocolate in small saucepan over low heat; stir until smooth. Remove from heat and pour into a large mixing bowl.
  • Add sugar, eggs, and vanilla, beating well. Combine flour, baking powder, and salt; stir in to chocolate mixture.
  • Spread half of brownie batter in pan. Spread cream cheese layer evenly on top. Drop remaining chocolate batter over cheese mixture, spreading gently to cover. Swirl together gently with tip of a knife.
  • Bake for 25-30 minutes or until top springs back when lightly touched. Do not overbake. Cool.
  • Once the brownies have cooled in the pan a little while, you can cut them, but don't remove them from the pan yet! Let them sit for about 1 hour until they firm up. Then you can remove them from the pan without them getting all squished up. Also, these NEED to be frozen -- you can defrost them slightly or even eat them straight out of the freezer. But DO NOT keep them on the counter!

Steps:

  • In a small bowl, combine cream cheese, granulated sugar, egg whites, sour cream, 1 tablespoon of the flour, and 1 teaspoon of the vanilla.
  • Beat until smooth; set aside.
  • In another small bowl, stir together the remaining 1 1/4 cups flour, baking powder and walnuts; set aside.
  • In a large bowl, combine syrup, brown sugar, butter, egg, and the remaining 2 teaspoons vanilla.
  • Beat until smooth.
  • Add flour mixture; beat until dry ingredients are evenly moistened.
  • Pour two-thirds of the brownie batter into a lightly oiled 8-inch baking pan.
  • Spread to make level.
  • Pour cheese mixture from step 1 evenly over batter.
  • Drop remaining batter by spoonfuls over cheese mixture; swirl with a knife to blend batter slightly with cheese mixture.
  • Bake in a 350°F oven until a wooden pick inserted in center comes out clean (about 25 minutes; pierce brownie, not cheese mixture).
  • Let cool in a pan on a rack, then cut into 2-inch squares.
