AUTHENTIC RUSSIAN SALAD 'OLIVYE'
This is a recipe my mom and grandmother use every time there's a family gathering or a special occasion. To make this a vegetarian dish just leave out the ham. Potatoes, carrots, and eggs do not have to be chilled completely after boiling. Dill can be substituted for parsley if desired.

Steps:
- Bring a large pot of water to a boil; add potatoes and carrot. Return mixture to a boil and add eggs; cook until potatoes are tender, 20 to 30 minutes. Drain and slightly cool mixture. Chop potatoes and carrot; peel and chop eggs.
- Mix potatoes, carrot, eggs, pickles, peas, ham, and parsley together in a large bowl; stir in mayonnaise until salad is evenly coated.

WARM RUSSIAN SALAD

- Put a very large saucepan of salted water on to boil. Cut the potatoes to marshmallow size, the carrots and celery into dice about two-thirds that size; and the French beans into 2cm/3⁄4in pieces.
- Add the vegetables in turn to the pan of boiling water, starting with the potatoes and ending with the peas. Cook until they are all just tender (neither crunchy, nor fondant). Drain and keep warm.
- Meanwhile, make the hollandaise. Put the egg yolks, vinegar and lemon juice into a blender and whizz for a few seconds. Melt the butter in a small saucepan over a lowish heat, then raise the temperature and bring the butter to a bubble. Leave the pan to one side for a minute to allow the milky residue to settle.
- With the blender going, slowly pour a thin stream of butter through the lid. Continue adding the golden liquid until the milky sediment appears (discard it). Remove the lid, season the sauce and whizz for a few more seconds. Replace the lid and keep the hollandaise in a warm place (but NOT over direct heat) for up to 30 minutes.
- Tip the warm vegetables into a large mixing bowl and add the gherkins and (optional) capers. Very, very gently stir in the sauce, using a soft plastic scraper. Serve as soon as possible.

- In a small saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Bring to a boil; cook and stir until gelatin is dissolved. Remove from the heat; set aside. , In another saucepan, heat whipping cream and sugar over medium heat until sugar is dissolved and mixture is lukewarm. Remove from the heat; stir in gelatin mixture until completely dissolved. Cover and refrigerate until slightly thickened, about 30 minutes., Stir in sour cream and vanilla. In each of four parfait glasses, place a scant 1/4 cupful of cream mixture; top each with a rounded tablespoonful of raspberries. Repeat layers. Top each with scant 1/4 cup of cream mixture. , Cover and refrigerate for 3 hours or until set. Just before serving, garnish with fresh raspberries and mint if desired.

Steps:
- Place the beets into a saucepan, cover with water, and bring to a boil. Reduce heat to medium, and boil gently until tender, about 20 minutes. Remove from the boiling water and let cool. Peel and dice the beets, and chill.
- Place the potatoes into a separate saucepan, add water to cover, and stir in salt. Boil the potato cubes until tender but not mushy, about 15 minutes. Drain the potatoes in a colander set in the sink, and chill.
- Bring a saucepan of water to a boil, reduce heat to medium, and stir in 1 to 2 more teaspoons of salt. Very gently lower the eggs into the boiling water, making sure they don't hit the bottom of the pan and crack; simmer for 15 minutes. Remove the eggs to a bowl filled with ice and ice water, and let the eggs chill until thoroughly cold. Peel and dice the eggs.
- Mix the chilled beets, potato cubes, and eggs together in a salad bowl, and gently stir in mayonnaise to taste.

- Mix together cream, sugar, and gelatin in a saucepan and heat gently until the gelatin is thoroughly dissolved.
- Cool until slightly thickened.
- Fold in sour cream and flavor with vanilla.
- Whisk until mixture is quite smooth.
- Pour mixture into a serving bowl or 3 cup metal mold.
- If you want to make individual servings, pour into six small 1/2 cup individual molds.
- Cover and chill until set, at least 4 hours.
- Unmold by dipping container in hot water until edges being to melt.
- Invert mold onto a serving dish and surround with fruit.

- Blini (Russian pancakes) Russian cuisine was heavily influenced by religious traditions. For example, the custom of baking pancakes has been preserved from the days of paganism: people used to bake pancakes, round, just like the sun.
- Pelmeni. It is impossible to imagine modern Russian cuisine without such a traditional dish as pelmeni, or dumplings. Many people debate about the origins of this dish as different countries around the world have their own adaptations of it.
- Beef Stroganoff. This famous Russian dish has a fascinating story. Under the Tsars, the Russian upper class was super-wealthy. They were particularly fond of Paris, often kept apartments there and communicated in French at home and social gatherings.
- Syrniki. This dish is my absolute favourite and the one I miss the most when I’m not home in Russia. It is yet another take on pancakes but they are made from quark (cottage cheese), eggs and flour.
- Kasha (Porridge) There are many different types of porridge in Russia, this is probably the most popular dish to have for breakfast in a Russian home.
- Borscht. Borscht is a beetroot soup that actually originated in Ukraine and was quickly adopted as a Russian speciality as well. This soup has dozens of ingredients and can take up to 3 hours to prepare.
- Okroshka. Soups are the most popular lunch meals across the country and this is another Russian favourite. Okroshka is a cold soup that originated in the Volga region.
- Pirozhki. These little baked or fried puff pastries are packed full of potatoes, meat, cabbage, or cheese. The stuffed pockets are popular all around Russia, Ukraine and Belarus.
- Shashlik. Shashlik is a Russian take on a kebab, and like any kebab, it consists of cubed meat and veggies grilled on skewers. This dish comes from the Caucasian Mountain tribesmen and became popular after the conquest of the Caucasus in the 19th century.
