Even though our children are grown, my husband and I remain busy. So we rely on speedy recipes that call for everyday ingredients. This peppery treatment really wakes up green beans. - Cook beans according to package directions. Meanwhile, in a skillet, cook bacon, onion and green pepper over medium heat until bacon is crisp and vegetables are tender. Remove with a slotted spoon., Stir the flour, brown sugar, Worcestershire sauce, salt, pepper and mustard into the drippings until blended. Stir in tomatoes. Bring to a boil; cook and stir for 2 minutes or until thickened. Drain beans and add to skillet. Stir in bacon mixture.

- Place beans in a 6-qt. stockpot; add water to cover. Bring to a boil. Cook, covered, 8-10 minutes or until crisp-tender. Drain and immediately place in ice water. Drain and pat dry., In a small bowl, whisk oil, lemon juice, vinegar, salt, garlic powder, mustard and pepper. Drizzle over beans. Add onion; toss to coat. Refrigerate, covered, at least 1 hour. Just before serving, stir in tomatoes and cheese.

Steps:
- 1. If using fresh green beans, blanch and chill in ice water. Frozen green beans, thaw, rinse with warm water.
- 2. Add diced tomatoes, mix in sliced olives.
- 3. Mix ingredients together, add balsamic vinaigrette. Toss lightly. Salt and pepper to taste. Top with feta cheese and serve!
SCALLOPED CREOLE GREEN BEANS
This is the best green bean dish I have ever had! The mixture of onion, bell pepper, celery, tomatoes, and cheese blends so nicely with the green beans. I got the recipe from an friend's mother over 20 years ago and she got the recipe from her mother who had a local cooking show in the southwest Louisana/ southeast Texas area. You can taste the southern Creole influence in this dish. You won't be disappointed!

Steps:
- Preheat oven to 350 degrees.
- Fry bacon until crisp and set aside. Saute onion, celery, and bell pepper in bacon drippings until transparent.
- Transfer onion mixture to a medium sauce pan and add tomatoes, salt, pepper, and sugar. Cook, covered over low heat for 1 hour. (yes--1 hour!).
- Add cheese to sauce mixture and stir until melted.
- Place green beans in casserole dish, crumble bacon over beans, and pour sauce over top.
- Bake, uncovered for 1 hour.

Steps:
- Melt butter in a medium sauce pan over high heat.
- Add bacon and ham and cook, stirring for 2 minutes.
- Add onions and cook, stirring until soft, about 4 minutes.
- Add tomatoes and their juice and cook, stirring for 4 minutes.
- Add 2 cups of the water, salt, pepper and beans.
- Reduce heat to medium and cook, stirring occasionally, until beans begin to soften, about 20 minutes.
- Add remaining 1 cup water and cook until beans are very tender, about 10 minutes.

- Bring a large pot with lightly salted water to a boil over high heat. Add beans and cook, uncovered, until soft but still firm to the bite, 7 to 10 minutes. Check often so beans don't overcook.

- Snap off the end(s) of the green beans and wash well (if they are fresh). If the beans are really long, you can cut/snap them in half. Frozen bean will be ready to use.
- Heat enough water in a pot to just cover the beans and bring to a boil. When boiling, toss in the beans. Cover and simmer for 5 minutes then add about ½ tsp of salt. Check to see if they are ready, but you may need to continue cooking for another 1 to 5 minutes. The size of the beans will determine how long they need to cook (mine were ready in about 8 mins).
- If you want to cool them quickly, or you might have cooked them longer than you wanted to, run them under cold water. If not, just drain and put into a bowl.
- Add the sliced garlic (if using). If not using garlic, you can add a strong wine vinegar. In Italy, it's either with garlic or vinegar, but not both (according to my mother). Drizzle the extra virgin olive oil over the beans. Add the red wine vinegar if you didn't add garlic, and finally, salt if necessary (it will almost definitely need more salt).
