EASY SLOW COOKER FRENCH DIP
This makes a delicious French dip sandwich, perfect for the working mom! Nobody, not even teetotalers, have been able to detect the presence of beer in this recipe, but it adds a wonderful flavor! French fries make a great side dish, and they are good for dipping, too.

Steps:
- Trim excess fat from the rump roast, and place in a slow cooker. Add the beef broth, onion soup and beer. Cook on Low setting for 7 hours.
- Preheat oven to 350 degrees F (175 degrees C).
- Split French rolls, and spread with butter. Bake 10 minutes, or until heated through.
- Slice the meat on the diagonal, and place on the rolls. Serve the sauce for dipping.

My Family loves French Dips so I created this super simple recipe I can throw together any time. The best part is the juice is created along with the roast.

- Place the beef roast into a slow cooker. Stir together the water and au jus mix; pour over the roast. Cover and cook on Low for 6 to 8 hours.
- Remove the roast from the slow cooker and shred or slice. Open the hoagie rolls and top with beef and provolone cheese. Serve with small bowls of the hot au jus from the slow cooker.

SLOW COOKER PHILLY STEAK SANDWICH MEAT
This makes a fantastic meat for Philly steak sandwiches. You can even use lower grade roasts and have this turn out. It also makes its own au jus if you like to dip as I do. To serve, sautee a sliced onion and sliced green pepper in a skillet. Put meat on a sub bun and top with onion and green pepper and Swiss or provolone cheese on top of that. Leave open-faced and broil until the cheese just starts to brown. The top of the bun will brown fast so don't broil that until the cheese has completely melted and just starts to show color.

- Spread onion and garlic into the bottom of a slow cooker; layer beef over onion and garlic. Sprinkle cumin, black pepper, chili powder, onion powder, garlic powder, paprika, thyme, marjoram, and basil over beef; top with bourbon, soy sauce, mustard, Worcestershire sauce, and hot sauce. CROCK POT: FRENCH DIP / PHILLY...
This beef is so very tender, and the seasoning make this absolutely delectable! I used "just a pinch" of each of the listed spices... but season to your taste. Next time I may try caramelizing the onions and green pepper to add even MORE flavor to the sandwich. Yum!!

- Now I have an oval crock pot...not sure of the size so you will have to judge if you have a smaller one.
- Put roast in crock pot...use a good coat of all the seasonings listed. Add lipton onion soup mix... Add a beer (I use a Bud)*** can use 2 if you like. Add 2 boxes of beef broth ***roast should be covered completely. Turn crock pot on low/med and go to work. Cook 4-6 hrs till falling apart. Could be longer according to how your crock cooks.
- Now I shred mine with a fork...Get a chunk to fill sandwich and shred. If you like bread can be toasted...use juice for a dip. YUM! Now this is the way I prefer... I get my chunk shredded then slice onion and bell pepper very very thin. Use some juice and saute on stove...add swiss cheese and toast then use juice to dip...EVEN MORE YUM!!!

- Put roast into crock pot. I seared my roast first to seal in all the juices. Add dry ingredients to the roast and rub all over meat.
- Add all the rest of the ingredients to completely cover the roast. If it's not completely submerged you can add beef stock.
- Cook on low for about 8 hours. Remove meat, let rest and then shred. Serve the juice in a small bowl to dip sandwich in.
- **Optional** About 30 minutes before roast it done, sauté mushrooms, onion and bell pepper and set aside until you are ready to build your sandwich.
- Preheat oven to 350. Brush rolls with melted butter and toast . Remove from oven and Build your sandwich, top with cheese return to oven until melty.
- Top with French's French Fried Onions and enjoy!

- Melt the butter in a frying pan, then add the roast and sear until brown on all sides. (If using IP, can use the “saute” setting.)
- Put the garlic cloves, onion and pepper chunks in a mini food processor and pulse to chop into small bits. Sprinkle them on the bottom of your slow cooker or Instant Pot. Add the seasonings, sauces and broth, then set the roast on top. Add fresh ground pepper.
- Cover and pressure cook for 50 minutes or slow cook for 8 hours. Release pressure, unplug and let the meat sit in the juices to soak it back up for at least 30 minutes. Slice the meat as thinly as you can and put it back in the juices.
- Saute thin-sliced onion in a bit of butter until very tender and starting to brown, then add mushrooms and a splash of juices from the meat and cover until the mushrooms are tender. Season to taste and add the bell pepper strips. Cook and stir just briefly until the peppers are tender. Toast the buns.
