DADDY'S FAVORITE COBBLER
This recipe has been handed down in my husband's family for generations. Whenever we need an easy go to recipe for an outing, this is the one we choose. It has all the right elements to make it a crowd pleaser. Everyone in our family fights for the corner pieces because the butter makes a crispy edge that is amazing!

Steps:
- 1. Melt butter in 8 or 9 inch square baking dish. In medium size bowl, combine sugar, flour, baking powder, salt, and milk. Stir together until combined but do not overmix. Pour mixture over melted butter. DO NOT STIR. Place sliced peaches evenly over batter. DO NOT STIR.
- 2. Bake in 350 oven 45 - 50 minutes.

Steps:
- Preheat oven to 375 degrees F.
- Lightly butter a 9 by 9-inch baking dish.
- In a large bowl, mix together the apples, sugars, flour, cinnamon, vanilla, salt, nutmeg and lemon. Add the mixture to the prepared baking dish.
- Add all the topping ingredients to a medium bowl and combine well with a wooden spoon, to form a batter. Dollop the batter in various spots on top of the apple mixture. The batter will spread as it bakes. Put the cobbler in the oven and bake until the apples are tender and the crust is colored, about 30 minutes. Remove from the oven and serve with Ginger Whipped Cream.
- Add the cream and sugar to a medium bowl. Using a hand-held electric mixer, beat the cream until stiff peaks form, about 2 to 3 minutes. Fold in the ginger. Cover and chill up to 4 hours before serving.
DAD'S EASY CHERRY COBBLER
My dad made this for us as kids. He would put it in the oven as we sat down for dinner and the smell would entice us all to finish our plates, even on the dreaded stroganoff nights! It works great with any kind of pie filling, especially blueberry, as long as it is thick. Be sure to let the dessert rest before serving. The filling is akin to liquid magma when it first comes out of the oven!

- Preheat oven to 350 degrees.
- Empty pie filling into an 8x8 or 9x9 pan.
- Evenly sprinkle the cake mix over the pie filling. Don't worry about clumps.
- Drizzle the melted butter over the cake mix.
- Drizzle the milk over the cake mix.
- Put the pan in the oven and let it bake for 35 to 40 minutes until golden brown and bubbling on top.
- Let rest on the stovetop for about 10 minutes and then serve warm with a scoop of vanilla ice cream.

- Adjust oven rack to upper-middle position, and heat oven to 350 degrees.
- Put butter in an 8-inch square or 9-inch round pan; set in oven to melt. When butter has melted, remove pan from oven.
- Whisk flour, 3/4 cup of sugar, baking powder and salt in small bowl. Add milk; whisk to form a smooth batter. Pour batter into pan, then scatter fruit over batter. Sprinkle with remaining 1 Tb. of sugar.
- Bake until batter browns and fruit bubbles, 50 to 60 minutes. Serve warm or at room temperature with a dollop of whipped cream or a small scoop of vanilla ice cream, if desired.
