CREAM CHEESE DANISH COFFEECAKE
This recipe makes two large Danish. This is an old family recipe, perfect for holiday gatherings! Dust with confectioners' sugar before serving.

Steps:
- Combine 1 cup flour, sugar, yeast, and salt in the bowl of a stand mixer.
- Combine 1 cup milk and butter in a 2-quart saucepan over low heat; heat until very warm (120 to 130 degrees F (40 to 54 degrees C)), about 5 minutes.
- Beat milk-butter mixture gradually into flour mixture on low speed. Increase speed to medium; beat for 2 minutes, stopping occasionally to scrape the bowl with a spatula. Beat in 1 cup flour and egg, occasionally scraping the bowl. Switch to the dough hook attachment; mix in remaining 2 cups flour until a soft dough forms.
- Turn dough out on a lightly floured work surface. Knead until smooth and elastic, about 10 minutes. Shape into a ball. Transfer to a greased bowl. Turn over to coat top with grease. Cover and let rise in a warm place until doubled, about 1 hour.
- Punch down dough and turn out on a lightly floured surface. Divide into 2 pieces. Place each piece in a separate bowl. Cover and refrigerate, 2 hours to overnight.
- Combine cream cheese, confectioners' sugar, 1 egg, and lemon juice in the clean bowl of a stand mixer. Beat on low speed until evenly blended. Increase speed to medium; beat until fluffy, about 3 minutes.
- Grease 2 baking sheets. Roll 1 piece of dough into a 12x15-inch rectangle. Transfer to a baking sheet. Repeat with remaining dough.
- Spread cream cheese filling in a 4-inch strip down the center of each rectangle. Cut dough on both sides of the filling into 1-inch-wide strips. Fold strips alternately over the filling to create a braid. Cover braided dough and let rise in a warm, draft-free place until doubled, about 1 hour.
- Preheat oven to 375 degrees F (190 degrees C). Brush tops of braids with 2 tablespoons milk.
- Bake in the preheated oven until golden brown, about 20 minutes. Transfer to a wire rack to cool.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking pan or casserole dish.
- Combine sugar, flour and butter. Use a fork to cut butter in until mixture resembles coarse crumbs. Set aside 1/2 cup of this mixture to use as topping.
- To the remaining flour mixture, add cinnamon, cloves, baking soda and salt. Lightly stir in the buttermilk and egg. Pour batter into prepared pan. Sprinkle cake with reserved topping.
- Bake in preheated oven for 25 minutes, until a toothpick inserted into center of the cake comes out clean.

DANISH CRUMB CAKE
My Grandmother Christine (Danish) passed this recipe down - She called it her 'company's coming' cake because from the time she noticed someone coming down the road to the homestead (by horse & buggy!) to the time they sat down for coffee this cake would be ready to come out of the oven! It's easiest when you use a med bowl for the main bowl, and a separate bowl for the milk and vinegar, the eggs and vanilla, and a small cup for the soda water. Once you make this a couple of times, you get into a rhythm and it becomes faster to toss together for a quick treat!

- Grease and flour bottom of 9 x 13 in cake pan.
- Pre-heat oven to 350 degrees F.
- Cream together first 3 ingredients.
- Add the flour to this and crumb, setting aside 3/4 cup of crumbs for topping. (I find this part easiest to do by hand.)
- Add the vinegar to the milk, let curdle.
- Add the vanilla and eggs to the crumb mixture and stir to moisten.
- Add the milk mixture and stir.
- Dissolve baking soda in hot water, then add to batter and stir. Batter should be thin and slightly lumpy.
- Poor in cake pan.
- Sprinkle reserved crumbs over top of cake.
- Bake on center rack for 25 - 30 minute.
- Cut and serve warm or cold - I think it even tastes better the next day!

OLD-FASHIONED CRUMB CAKE
My dad grew up in the Bronx of the 1920s and was very fond of the yeasty crumb cakes found in many German-Jewish bakeries there. He calls the moist, tender cakes "crumb buns" and loves to eat them with a cup of coffee.

- Make dough:
- Stir together yeast, 1/4 cup warm milk, and 1 tablespoon sugar in bowl of mixer until yeast is dissolved, then let stand until foamy, about 5 minutes. (If mixture doesn't foam, discard and start over with new yeast.)
- Stir together lemon juice and remaining 3/4 cup milk and let stand until curdled, 1 to 2 minutes.
- Add 3 3/4 cups flour to yeast mixture along with salt, eggs, vanilla, and remaining 1/2 cup sugar and mix at low speed until just combined. Add curdled milk and beat at medium speed until a dough forms. Add butter, 1 piece at a time, beating, then continue to beat until dough is silky and elastic, 5 to 8 minutes. (Dough will be very sticky.) Sprinkle with remaining 2 tablespoons flour and cover bowl with a clean kitchen towel (not terry cloth). Let dough rise in a draft-free place at warm room temperature until doubled in bulk, 1 1/2 to 2 hours.
- Make topping:
- Pulse together topping ingredients in a food processor until many large clumps form. Transfer to a bowl and chill, covered, until ready to use.
- Form and bake cake:
- Butter a 13- by 9-inch baking dish or pan.
- Stir dough several times with a rubber scraper to release air, then spread evenly in baking dish.
- Sprinkle dough with half of topping, then cover dish with kitchen towel and let dough rise again in a draft-free place at warm room temperature until almost doubled in bulk, 1 to 1 1/2 hours.
- Put oven rack in middle of oven and preheat oven to 350°F.
- Sprinkle remaining topping over top of cake and bake until topping is golden, 55 to 60 minutes. Cool cake in pan on a rack until barely warm, then cut into squares.
CRUMBIEST CRUMB CAKE
This is a combination of several crumb cake recipes that I tweaked and tested until I came up with this great one. My family thinks that this one is the best. It starts with a cake mix of course and is rich and cinamony and wonderful warm with a hot cup of coffee.

- Grease and flour a 13 x 9 pan.
- Mix cake mix, water, softened butter and eggs on low for 30 seconds until moistened.
- Beat at medium speed for 4 minutes.
- Pour into prepared pan.
- Bake for 20 minutes.
- Prepare topping.
- After 20 minuntes take cake out of oven.
- Sprinkle topping evenly over cake.
- Bake for 25 minutes or until golden brown.

- To Make the Dough: In the bowl of a stand mixer, combine flour, white sugar, yeast, salt (put it on the opposite side from the yeast), cardamom, and softened butter. Using the dough hook, mix until they are combined, then slowly pour in the milk, water, egg, and vanilla. Continue mixing on low until the dough is combined and cohesive, then turn the mixer up to medium and allow it to knead for 5 minutes. The dough will be soft, but should form a cohesive ball.
- Oil your hands and a clean bowl, and shape the dough into a bowl then place it in the bowl. Cover it with a sheet of plastic wrap and let it rise in a warm place for 1-2 hours, or until it has double in size. Place the dough in the refrigerator until it is completely chilled.
- To Make a Butter Block: Generously sprinkle a piece of parchment paper with flour, the place the butter on it. Sprinkle the top of the butter with more flour, then place another piece of parchment on top of it. Using a rolling pin, smash and roll the butter into a sheet until it measures 6”x12”. Return it to the refrigerator until it cold but still pliable. Do not keep in the refrigerator until it is completely hard, or it will shatter into chunks when you roll it into the dough.
- To Laminate the Dough: On a generously floured surface, roll the dough into a rectangle about 7”x18”. Cut the butter block in half, and place one half in the center of the dough. Fold one end over the butter, place the other half of the butter block on top of it, then fold the other third of the dough over the top of the butter. Pinch the edges of the dough to seal in the butter, then roll it out into a rectangle about 12”x8”. Fold it into thirds again, then wrap it in plastic wrap and place it back in the refrigerator for about 30 minutes to chill it all again, then repeat the folding and rolling three more times for a total of 4 folds. The dough is now read to be shaped, or can be kept in the refrigerator overnight at this point.
