BACON-WRAPPED DATES STUFFED WITH CREAM CHEESE AND ALMONDS
Steps:
- Heat the oven to 400 degrees F.
- Stuff 1 piece of cheese and 1 almond into each date, then wrap one piece of bacon around each date and secure bacon with a toothpick if desired. Arrange dates, bacon seam down and 1 inch apart in a shallow baking pan.
- Bake 5 minutes, then turn dates over with tongs and bake until bacon is crisp, 5 to 6 minutes more. Drain on a paper towel or parchment. Serve immediately.

- 1. Line one or two jelly roll pans (any large shallow pan with sides will do) with aluminum foil. (If you want a little less oily product, place a cooling rack in the pan and when assembling the appetizers, place them on the rack.) Set aside until needed.
- 2. Cut bacon strips into halves or thirds crosswise (the pieces should be about 3-4 inches long to allow a small overlap when placed around the date). Place on plate and set aside Place about 2 to 4 Tbsp of smoked paprika on another small plate and set aside. Cut the Asiago cheese into sticks about 1/4 inch square by 1 inch long. Place on a separate plate and set aside.
- 3. Make your assembly line by starting with the box or container of pitted dates, then the Asiago cheese plate, then the bacon with the paprika plate nearby. Then a container of toothpicks to hold the bacon around the dates. And finally, the foil lined baking pans (with or without optional cooling racks.)
- 4. Stuff each date with a small stick of Asiago, take one piece of cut bacon and dip one side in the paprika, then wrap it (Paprika side in) around the date. Toothpick in place and put finished roll on baking pan. Continue in this method until all ingredients are used (or you run out of one of the ingredients.)
- 5. Bake at 400°F for 6-8 minutes, turn over and bake for 6-8 minutes more. When bacon is brown and crispy, remove from pan to paper towels to drain. Serve hot or warm for best flavor.
ASIAGO-STUFFED DATES WITH BACON AND SMOKED PAPRIKA

- Preheat oven to 425°F. Using small knife, make small cut in side of each date; remove pit. Insert 1 piece of cheese into each date. Brush bacon slices generously on 1 side with smoked paprika. Wrap each date with 1 piece of bacon, with paprika side against date. Secure bacon with toothpick. Arrange dates on rimmed baking sheet. Roast until bacon is browned on bottom, about 6 minutes. Turn dates; roast until bacon is cooked, about 6 minutes longer. Transfer to plate; cool slightly. Remove toothpicks.
BACON WRAPPED DATES STUFFED WITH MANCHEGO
Steps:
- Preheat the oven to 400 degrees F.
- Make an incision on one side of each date and insert a block of Manchego. Squeeze the date shut in your hand to secure. Wrap each date with a bacon strip and secure with a toothpick. Place all the dates on a sheet tray lined with a silicone mat or parchment paper. Roast the dates in the oven until the bacon on top is starting to crisp, 5 to 6 minutes. Turn the dates over and cook the other side until the bacon crisps.
- Remove the dates from the oven and brush both sides with maple syrup. Return the dates to the oven until they are really crackly and sticky, 1 to 2 minutes. Serve hot.
BACON-WRAPPED DATES WITH CHORIZO AND MANCHEGO
Steps:
- Preheat the oven to 350 degrees F.
- Make an incision lengthwise in each date, open and flatten. Insert a piece of cheese in the center of each date. Break each chorizo link into quarters. Form each piece of chorizo into a log and squish it inside the date onto the cheese. Close the date around the filling and squeeze to secure. Wrap each date with a bacon strip and secure with a toothpick. Repeat for the remaining dates, cheese, chorizo and bacon. Place the dates on a baking sheet and roast until the bacon starts to crisp, 7 to 8 minutes. Turn the dates over and roast for another 7 to 8 minutes.
- In a small bowl combine the syrup and vinegar.
- Remove the dates from the oven and brush both sides with the maple syrup mixture. Return the dates to the oven until they are really crackly and sticky, 1 to 2 minutes. Rest the stuffed dates for 1 minute. Remove the toothpicks and serve.
BACON-WRAPPED DATES
A bacon-wrapped date is sweet, smoky, squidgy and crisp, all in one bite-size package. The trick is getting the bacon to cook before the date burns, and you can do that by starting in a cold oven so that the bacon slowly renders its fat and evenly crisps. While this appetizer was en vogue in the 1970s and 1980s, it has never gone out of style. In fact, it dates back to Victorian England, when bacon-wrapped oysters or prunes (also known as angels or devils on horseback) were eaten before or after a meal. ("Horseback" referred to their being served on toast.) Sometimes the prunes were soaked in tea or liqueur, and stuffed with chutney, cheese, or nuts. You can do the same if you like.

- Using scissors, cut each slice of bacon in half crosswise at a diagonal, like cutting ribbon. (This will help secure the bacon to the date.) Starting at the straight end of the bacon, roll the bacon around the dates. Tuck the point under the wrapped bacon to secure. Place seam side down on a baking sheet.
- Place in the oven, and heat the oven to 400 degrees. Cook for 10 minutes, then flip and cook until golden brown all over, another 5 to 15 minutes, depending on the thickness of your bacon.
- Season with black pepper (if desired), then transfer to a paper towel-lined plate to crisp and cool slightly.
