Whole Wheat Banana Blueberry Muffins image

Steps:

  • Heat the oven to 375°F.
  • Grease or line with paper liners 12 large muffin cups or 24 small muffin cups.
  • In a large bowl, whisk together the eggs, applesauce, oil, brown sugar, vanilla and bananas.
  • Combine the flour, baking soda, and cinnamon.
  • Stir into the banana mixture until moistened.
  • Stir in the blueberries until evenly distributed.
  • Spoon batter into muffin tins.
  • Bake for 20 minutes in the heated oven or until the tops of the muffins spring back when pressed lightly. Do NOT overcook or else they will be too dry.
  • Cool before removing from tins.

BANANA MUFFINS, DIABETIC AND DELICIOUS

I met this muffin on the Christine Cushing Live show and had to try it. For my money this is the ultimate banana muffin when it comes to the health aspect and just plain good taste. This can be made with some chopped nuts in place of the blueberries (or a small amount in addition to the berries). The nuts will add fat but nuts are heart healthy fat, you know the good kind.

Banana Muffins, Diabetic and Delicious image

Steps:

  • Preheat oven to 350 degrees F.
  • Prepare a medium muffin tin by lining with muffin paper or brushing/spraying with oil.
  • Sift flour, baking soda and salt in a bowl and add oat bran, nutmeg and all spice.
  • Stir well to combine and set aside.
  • Mash banana in a bowl.
  • Add apple butter, vanilla, Splenda brown sugar, buttermilk and vegetable oil, stir to combine.
  • Pour the wet ingredients into the flour mixture.
  • Stir with a wooden spoon until just combined (some of the flour may still remain visible) but do not over mix or the muffins will be tough.
  • Fold in the blueberries.
  • Spoon batter evenly into prepared muffin tins.
  • Put in the middle rack of oven.
  • Bake until golden, about 18-23 minutes (or until a tester comes out clean).
  • Makes 12 medium muffins.

Steps:

  • Preheat oven to 400°F. Line 12 muffin cups with paper liners. Combine flour, sugar, oat bran, baking powder, and salt in medium bowl; whisk to blend.

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Grease a 12-cup muffin tin.
  • Blend flour, baking soda, salt, and baking powder together in a bowl. Make a well in the center; add eggs, maple syrup, applesauce, and coconut oil. Stir by hand until just combined. Add bananas, blueberries, and walnuts. Mix until just incorporated. Divide batter evenly into the prepared muffin tin.
