DELICIOUS MEXICAN CASSEROLE
Two of my hubby's friends were visiting and I was unprepared for dinner. I didn't have much in the fridge and had no time to run to the store. So I decided to whip up a tasty casserole, considering you can put almost anything into one. It was a big hit. Everybody LOVED it & there wasn't a bite to spare! It was manly enough for them, yet enjoyable for kids too.

Steps:
- Preheat oven to 350 degrees.
- Dice onions.
- Finely chop garlic.
- Prepare pasta & cook for 2.5 minutes less than directions call for.
- Drain black beans & wash in a colander.
- Dice avocados.
- Heat burner on medium.
- Saute onions, until soft & slightly yellow.
- Add ground beef, 2-3 chipotle peppers and garlic.
- Sprinkle cumin, coriander and salt & pepper.
- Continue stirring until browned.
- Add green chilis and black beans, then stir.
- Drain juice from tomatoes & add to pan,.
- Mix everything thoroughly together.
- Spoon pan into 9x11 baking dish.
- Layer with olives.
- Sprinkle both cheeses evenly.
- Cover baking dish with tin foil.
- Cook for 30 minute.
- Remove tin foil & allow to cool.
- Serve with avocados & sour cream.

Steps:
- In a large skillet over medium high heat, saute chicken in oil until cooked through and no longer pink inside. Add taco seasoning, beans, corn, salsa and a little water to prevent drying out. Cover skillet and simmer over medium low heat for 10 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Transfer chicken mixture to a 9x13 inch baking dish. Top with 1/2 cup of the cheese and crushed tortilla chips.
- Bake in the preheated oven for 15 minutes. Add remaining 1/2 cup cheese and bake until cheese is melted and bubbly.

This is a quick and easy recipe to toss together and the flavor is wonderful. Makes great leftovers for lunch the next day. I have been making this for years.

Steps:
- Heat oven to 375 degrees.
- Mix seasoning packet (in box) with water and butter in bowl.
- Add stuffing mix.
- Mix together.
- Set aside.
- Cook beef with garlic and chili powder till browned (drain).
- Add tomatoes and kidney beans to beef mixture.
- Mix together.
- Put 1/2 of stuffing mixture into a 2 quart baking dish.
- Put beef mixture on top of stuffing.
- Add 1 cup cheese.
- Top with remaining stuffing mixture.
- Add the rest of the cheese.
- Cover and bake for 45 minutes.

DELISH MEXICAN CASSEROLE
I saw a similar version on vegweb and decided to add some of my own touches. After tweaking the original recipe I came up with this one and my family & friends love it. It is great for potlucks and so far no one has complained. You can also adjust the heat or remove it altogether. Enjoy!!

Steps:
- Heat oil in a pan and saute onions for 2-3 minutes.
- Add cumin and saute for another 2 minutes.
- Drain SOME of the extra liquid from Rotel tomatoes and Black Beans.
- Add salsa, Rotel, and garlic.
- Let it all simmer for about 4 minutes.
- Add jalapenos and Sazon spice. Simmer for another minute.
- Then add beans and simmer for 4 more minutes.
- Let it cool down for 1/2 hour.
- Make sure you reserve some of that sauce/liquid.
- In a casserole dish or aluminum pan spread some the liquid so that your tortillas do not stick or burn.
- Next make a layer of tortillas (usually only 2 will fit side by side).
- The next layer will be the bean mixture.
- Then spread some of the cheese.
- Continue layering tortillas, bean mix, cheese until your last layer is tortillas.
- Then spread the remaining liquid from the bean mix so that your tortillas remain soft during baking and spread the remainder of the cheese on top.
- Bake at 350 degrees for 25 minutes.
- Let it cool for 10 minutes before cutting. Enjoy.

- 1. Preheat oven to 350°F. Grease a 13x9-inch baking dish, then scatter the crushed tortilla chips evenly on the bottom.
- 2. Combine the chicken, beans, corn, tomato sauce, salsa, onion, bell pepper, cilantro, garlic, salt and pepper in a bowl. Place half the mixture evenly in the baking dish. Combine the cheeses, then sprinkle half over the mixture.

EASY MEXICAN CASSEROLE
This is based on a recipe from the Allrecipes website submitted by AndreaLF63, which I made a few minor changes to suit our taste preferences such as adding a can of white corn and using canned diced tomatoes instead of fresh chopped tomatoes. But I look forward to making this again and trying some of the other changes that some of the reviewers suggested, like maybe adding some minced garlic or perhaps a diced jalapeno pepper or chopped bell pepper.

This goes together quickly and then bakes for about an hour. This recipe can be taylored to your own tastes quite simply. You can vary the flavors by using different chili powders, beans, cheese blends or Dorito flavors. It's easy to control the heat level by which Ro-tel you use. If you don't like it hot replace the jalapenos with mild green chilies.
