MAKEOVER PINEAPPLE CASSEROLE

Steps:

  • Drain pineapple, reserving 1 cup juice; set pineapple and juice aside. In a large bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in egg whites. Stir in flour, then reserved pineapple and juice. Gently fold in bread cubes. , Spoon into a 2-qt. baking dish coated with cooking spray. Bake, uncovered, at 350° for 35-40 minutes or until top is lightly golden. Serve warm.

  • 1. Mix first 4 ingredients,just enough to combine ... put in casserole dish pour melted butter over top, sprinkle crushed RITZ on top of everything.
  • 2. Bake @ 425 F for 25 minutes. ENJOY!!

2 c med or sharp grated cheddar cheese

Steps:

  • 1. Lightly grease a 9 x13 x 2 baking dish. Place pineapple in dish. Combine Splenda with flour and sprinkle over pineapple.
  • 2. Sprinkle with cheese. Combine crushed Ritz crackers and melted butter. Sprinkle over the cheese.
  • 3. Bake at 350 degrees until hot and bubbly and cheese is melted.

1 - 20 oz. can pineapple chunks or tidbits
1/4 - cup splenda
5 - tablespoons all-purpose flour
1-1/2 -cups shredded cheese - mild or sharp.
3/4 - cup crushed ritz crackers
1/2 - cup melted butter

This wonderful pie is just too good for words! I think it's the sour cream that adds so much richness without overpowering. I got this recipe from a junior high school cook I work with. She brought this pie to a get together and I JUST HAD to have the recipe! So smooth, creamy and sweet, it does not taste diabetic! I love this pie!
