Cake Doughnut Bread Pudding image

Steps:

  • Preheat oven to 350 degrees F.
  • In a food processor, combine butter and sugar briefly, just until it forms into a ball. Add eggs, heavy cream, cinnamon, and vanilla, and process until blended.
  • Lightly butter a 9 by 13-inch baking dish. Break up the doughnuts into 1-inch pieces and layer in the pan. Scatter the raisins over the top. Pour the egg mixture over the doughnuts; soak for 5 to 10 minutes. You will need to push doughnut pieces down during this time to ensure even coverage by egg mixture.
  • Cover with foil and bake for 35 to 40 minutes. Remove foil and bake for additional 10 minutes to brown the top. The doughnut bread pudding is done when the custard is set, but still soft.
  • Make the rum sauce: melt butter over medium heat in a saucepan, and take off the heat. Add confectioners' sugar to the melted butter and whisk to blend. Add rum, to taste. Pour the sauce over the bread pudding and allow to soak in.

Steps:

  • Position the oven rack at the center of the oven. Preheat the oven to 350 °F (180 °C).
  • Butter an 8 in (20 cm) diameter soufflé mould that has an 8 cups (2 litres) volume and sprinkle with sugar.
  • In a bowl, mix the milk, the egg yolks, brown sugar, the rum and vanilla. Add the bread and raisins. Let the mixture impregnate for 10 minutes.
  • In another bowl, beat the egg whites until there is a formation of firm peaks.
  • Using a spatula, little by little incorporate the meringue to the bread mixture while folding carefully. Pour into the mould.
  • Bake for about 1 hour, or until the center is firm and slightly humid.
  • Serve immediately. Decorate with pecans and coat with the sauce.
  • Rum Sauce :.
  • In a sauce pan, mix the brown sugar and flour.
  • Add the cream, milk, rum and vanilla.
  • Bring to a boil while whisking constantly. Let it become lukewarm while whisking a few times.

Don't pass up those day-old doughnuts in the grocery store. They make great bread pudding! Just about any kind of raised yeast doughnuts work except for jelly. Apple fritters are even good. I sometimes use a combination of cinnamon, glazed, sugared doughnuts and apple fritters for an interesting combination. You don't have to add any extra fat and very little (if any) extra sugar depending on taste.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a small glass baking dish.
  • Tear the donuts into bite-size pieces. Combine donut pieces and raisins in the prepared baking dish. In a medium bowl, use an electric mixer to blend together the eggs, evaporated milk, sugar, vanilla extract and almond extract. Mix in the cinnamon and nutmeg. Pour the milk mixture over the donuts in the dish, and press down lightly to help absorption. Let stand for 15 minutes, or cover and refrigerate overnight.
  • Place the baking dish inside a larger baking dish, and fill the outer dish with enough water to go about halfway up the sides. A dishcloth may also be placed under the bread dish, to prevent drying.
  • Bake for 35 to 40 minutes in the preheated oven, or until a knife inserted near the center comes out clean. Serve warm.

Glazed Donut Bread Pudding With Butter Rum Sauce image

Steps:

  • Preheat oven to 350°. Prepare a 13x9" baking dish with butter and flour.
  • Cube (or tear) the donuts and place them into a large bowl.
  • In another mixing bowl, combine the sweetened condensed milk, fruit cocktail with its juice, eggs, raisins, salt and cinnamon. Stir to mix well, then pour over the top of the torn up donuts. Cover, and place the soaking donuts into the refrigerator. Allow this so soak for about an hour, until the liquid is soaked up as much as possible into the donuts. Remove from refrigerator, and pour into the prepared baking dish.
  • Dot the top of the donuts with small butter chips.
  • Bake for about an hour, testing to make sure the center is cooked and jelled.
  • For the Butter Rum Sauce: Melt the butter and slowly stir in the powdered sugar until it is all blended in and smooth. Add rum to your liking (you could use a teaspoon of any type of extract and a couple Tbsp. of milk here, I'm sure, if you don't care for rum ... maple extract, or lemon extract, or something else, perhaps?) Heat thru 'til bubbly.
  • Pour the hot Butter Rum sauce over each individual serving of the bread pudding.

Steps:

  • Combine the corn starch and water in a small bowl and set aside.
  • In medium sauce pan whisk together the half-and-half, sugar, rum, and salt. Turn the heat on medium and stir almost continuously, I keep the whisk moving, giving 5 second breaks from time to time.
  • When the sauce just begins to boil, give the corn starch/water mixture a quick stir and quickly add it to the sauce. Remember to keep stirring!
  • The sauce should thicken within a few seconds.
  • Once it reaches the consistency of gravy, remove from heat and add the vanilla and butter, whisk quickly.
  • Pour the hot sauce over your favorite bread pudding, ice cream, pound cake, etc.
  • Pour over day old donuts, bake at 375° for 20 minutes for a quick brunch. Serve with coffee.
  • Pour over unbaked, canned biscuits, bake at 375° for 35 minutes for bread pudding. Serve this bread warm, alone or with vanilla ice cream.
