TRADITIONAL GERMAN WARM POTATO SALAD

Is there anything better than freshly made potato salad? With sausages or pork, it's a dream! This recipe is from Bavaria, Germany, and my family makes this potato salad every year for Christmas eve.

Traditional German Warm Potato Salad image

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 30 to 40 minutes. Drain. Cool until easily handled, about 5 minutes. Peel while still warm. Cut into thin slices and put in a large bowl. Add onion.
  • Mix hot broth with vinegar, oil, salt, and sugar. Pour immediately over warm potatoes and onion; the potatoes need to still be warm so they can absorb the dressing better. Allow to stand for 5 minutes; season with salt and pepper. Sprinkle with chopped chives and serve warm.

Amish Potato Salad image

Steps:

  • Place the potatoes into a large pot, and fill with enough water to cover. Bring to a boil, and cook for about 20 minutes, or until easily pierced with a fork. Drain, and set aside to cool.
  • While the potatoes are cooking, whisk together 2 eggs, sugar, cornstarch, and salt in a saucepan. Stir in the vinegar, milk, and mustard. Cook over medium heat, stirring frequently, until thickened, about 10 minutes. Remove from heat, and stir in the butter. Refrigerate until cool, then stir in the mayonnaise.
  • Peel the potatoes if desired, and cut into medium dice. Place in a large bowl, and toss with the onion, celery, carrots, celery seed and hard-cooked eggs. Gently fold in the dressing. Refrigerate until serving. I personally like this to sit for at least a day before serving to let the flavors blend, but you may serve it as soon as it is chilled.

Our Family's Pennsylvania Dutch Potato Salad image

Steps:

  • Cook the 6 slices of bacon in fry pan until crisp, remove from pan and drain on paper towels before dicing. Reserve the bacon drippings in a small measure from these 6 slices. Then cook the remaining 2-4 slices until crisp, remove from pan and drain on paper towels but do not reserve this additional drainings.
  • Cook potatoes in boiling water until just tender -- do not overcook.
  • Cool potatoes slightly then peel and cut into medium sized chunks and place into a large bowl.
  • Add onions, celery, salt and pepper to potatoes and mix lightly (so you do not break up the potatoes).
  • Mix vinegar, sugar and water with cooled bacon drippings in the fry pan.
  • Heat mixture just to simmering - over a medium heat.
  • In another bowl, crack open egg and beat well with a whisk.
  • Very slowly, add the dressing mixture to the beaten egg, whisking constantly.
  • Pour dressing over potatoes and then add bacon and mix lightly.
  • Serve warm.

3 lbs medium red potatoes (about 18-20 potatoes)
1 cup onion, chopped (vidalia onion is preferred now)
1 cup celery, chopped
2 teaspoons salt

Steps:

  • Boil potatoes in jackets until soft.
  • Let potatoes cool and then peel and dice.
  • Add celery, onion, and sliced hard boiled eggs.
  • For the dressing:.
  • Fry bacon in skillet until crisp and brown.
  • Beat the eggs well and add sugar, spices, water/vinegar mixture. Mix well.

Steps:

  • Boil potatoes with skins on till done. You can put the eggs in the same water for about 12 min if you’d like also, if not cook separately. Let potatoes and eggs cool.
  • Cut the bacon and onion in small pieces and put in small pot, while the potatoes are cooking. Cook till almost done but not brown. Put in water, vinegar, sugar, and celery seed. Put lid on and simmer slow for about 20 minutes until onions almost fall apart. Let mixture cool.
  • Peel and slice the potatoes and slice the eggs. Put cool cooked mixture over the potatoes and put in refrigerator for about 1/2 hour so some of the potatoes can suck up some of the bacon and ingredients. Add about 1 cup of Kraft Mayo and mix. It’s ready to eat warm or cold but tastes a lot better the next day too.
