Steps:
- Put water and apples in pot.
- Bring to a boil.
- Reduce heat to low. Simmer approx 25 minutes, or until soft -- stirring occasinally.
- Slightly mash apples. Add sugar, cinnamon and all spice.
- Mix well, and let simmer about 5 more minutes.
- If you want a smoother texture sauce, pour into a blender, and Puree until desired texture.
10 MINUTE APPLE SAUCE
Steps:
- In a sealable microwave-safe container, combine apples with all other ingredients. Close lid, leaving one corner of lid open to allow steam to escape. Microwave on high for 10 minutes.
- Using a hand blender or potato masher, blend to desired consistency. Serve hot immediately or chill for later use.
THE BEST HOMEMADE APPLESAUCE
After tasting the pure apple flavor of this homemade sauce, you just might never go back to the store-bought kind. Supermarket applesauce can be loaded with added sweeteners and flavorings. We use only a little sugar, plus lemon juice, salt and cinnamon, providing a balanced flavor and the perfect amount of sweetness.

Steps:
- Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
- Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
- Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.

PERFECT, EASY APPLESAUCE
A farm-girl friend of mine taught me how to make applesauce about 10-years ago, and recent trips to a local orchard brought all her teaching back to me. This can be made with a food processor, but I love the way the Foley Food Mill separates out the peel and strains to sauce to the perfect consistency. I think it is a must have kitchen utensil that can be passed from generation to generation! I choose Empire apples because they have a perfect texture for sauce and the sweet-tart taste I love! (If not using the Foley Mill, I suggest peeling and coring before cooking. You won't have to pick out the peels later then. You can either use a food processor or just a potato masher depending on how chunky you like your sauce)

Steps:
- Use sectioned apple slicer to easily core and slice your apples (or do it by hand).
- Place apples, water and cinnamon sticks in a large, heavy pot.
- Cover and bring to a boil.
- Reduce heat and simmer for about 15 minutes or until the apples are soft.
- Remove cinnamon sticks and process in batches in the Foley Mill (check out ebay or Ace Hardware for Mills). Stir in remaining ingredients.
- Serve warm topped with butter! Or eat cold from the refrigerator! Or warm topped with cinnamon sugar pie crust pieces! Or freeze for later use! So much better than jarred sauce!
OLD-FASHIONED APPLESAUCE
We had all kinds of apple trees in the yard when I was growing up, so I don't know for sure which ones Mother liked best for applesauce. (Today I use Cortlands.) I do know that her applesauce was very white. The secret, she said, was to keep the apples in salt water while she peeled them so that they wouldn't darken. -Doris Natvig, Jesup, Iowa

Add sugar to taste and stir until dissolved. If you used a cinnamon stick, remove and discard. Mash apples with a potato masher until desired texture is reached. Serve warm or chilled.

EASY APPLESAUCE
Use fresh cooking apples for this for best results. Some examples are Cameo, Golden Delicious, Granny Smith, Jonathans, Gravensteins, etc. I like to use a mixture for more balanced flavor. You can add sweeteners and spices of your choice to this, but taste it first. The cider does add some sweetness and some apple varieties are more naturally sweet. TNT
