15-MINUTE LENTIL SOUP
This is a fast, hearty soup for dinner; vegetarians can use vegetable broth.

Steps:
- In a medium saucepan, heat oil over medium. Add onion, carrot, celery, and garlic; season with salt and pepper and cook, stirring occasionally, until onion softens, 3 to 5 minutes. Add broth; bring to a boil and cook 5 minutes. Add lentils and cook until soup thickens slightly, 3 to 5 minutes. Stir in vinegar and season with salt and pepper.

EASY LENTIL SOUP
The earthy flavor of the lentils is set off by the tartness of the tomatoes and a spoonful of wine vinegar, which is stirred in just before serving the soup.

- In a large pot or Dutch oven, heat oil over medium heat. Add carrots, celery, onion, 1 teaspoon salt, and 1/4 teaspoon pepper. Cook until onion is translucent, about 5 minutes. Add garlic, thyme, and bay leaf, and cook until vegetables begin to soften, 2 to 3 minutes longer.
- Add tomatoes with their liquid, breaking them up with a large spoon. Add water and lentils, and bring to a boil. Reduce heat, and simmer, partially covered, until lentils are tender, about 30 minutes. Just before serving, stir in vinegar.

EASY RED LENTIL SOUP

Steps:
- Boil red lentils and water for one hour.
- Chop celery, carrots and garlic.
- Add stock and water to pot of lentils.
- Add celery, carrots and garlic to pot of lentils.
- Bring to boil.
- Add tomato paste, cayenne pepper and salt.
- Cover and simmer for 45 minutes.
- Serve the thick, rich soup and enjoy!
- Add more or less stock and/or water depending on how thick/thin you like your soup.
EASY LENTIL SOUP!
I really like to make single-serving meals. This is by far one of the easiest, laziest recipes I have ever made. But it's delicious.

Steps:
- Soak lentils in water for at least two hours. You can soak them longer if you like them softer, but I prefer mine a little harder. Sometimes, I soak them while I'm away at work, and that's ok too.
- Drain lentils.
- Add together lentils, water, and Onion Soup Mix. Bring to a boil.
- When the water starts boiling, throw in the lentils.
- Simmer with a lid on for about 15 minutes, or until the rice is tender.
- Enjoy!
THE BEST LENTIL SOUP
Brown lentils are the star of this dish. To boost flavor, we used a classic mirepoix-onion, celery and carrot - as well as thyme, bay and oregano for an herby finish. We found the fresh lemon juice and parsley at the end brightened up the soup and added a nice pop of color.

- Heat the oil in a large heavy-bottom pot over medium-high heat. Add the carrot, onion, celery and 1 teaspoon salt and cook, stirring occasionally, until the vegetables are starting to caramelize and take on a dark brown color, 8 to 10 minutes (this step is important as it will add tons of flavor to your soup!).
- Stir in the tomato paste and garlic and cook, scraping up the brown bits, until the garlic is fragrant and slightly softened, 1 to 2 minutes. Add in the lentils, stock, 4 cups water, thyme, bay leaf, oregano, red pepper flakes, lemon zest, 2 teaspoons salt and a generous amount of black pepper and stir to combine. Bring to a boil then reduce the heat to low. Cover and cook until the lentils are softened with just a bit of bite, 25 to 30 minutes.
- Remove the bay leaf. Puree 2 1/2 cups of the soup in a blender until smooth then stir back into the pot. Stir in the lemon juice and parsley. Ladle into bowls and garnish with more parsley.

SIMPLE LENTIL SOUP
A very easy recipe for Lentil Soup

Steps:
- Heat up a large pan and add the oil or butter.
- Once the pan is hot enough add the Onion, Carrot and Celery which can be cut in whatever shape and size you choose.
- Cover with a lid and saute for 5 minutes.
- Add in your Lentils, checking packet to see if you need to rinse with cold water first.
- Add in the Ham stock, 2 liters at first keeping back 0.5 litres.
- Place the lid back on and bring to the boil then turn heat down and simmer for 40 minutes. Stirring every 10 minutes to stop soup sticking to the bottom of the pan.
- If soup becomes too thick add in the other 0.5 litres of stock.

- In a large slow cooker, add onions, celery, carrots, potatoes, corn, lentils, garlic powder, oregano, thyme, soy sauce, bay leaves, peppercorns and vegetable broth. No need to stir.

- Place a large pot over high heat with 4 cups of water. When the water comes to a boil, add the lentils, turn down to a simmer and cook for about 5 minutes. Drain the lentils, rinse and set aside.
- Place the pot back over medium high heat and coat with olive oil. Add the onion and carrots. Cook for about a minute until soft, then add the garlic and cook for another minute.
