INCREDIBLE OAT BRAN MUFFINS, PLAIN, BLUEBERRY OR BANANA

I looked and I can't believe no one has posted this recipe here yet!! This is different from all the other recipes here, is not very dense and is not too sweet, allowing the wonderful bran flavor through. This came off the back of a quaker oat bran hot cereal box. Only 120 calories per muffin!

Incredible Oat Bran Muffins, Plain, Blueberry or Banana image

Steps:

  • *Blueberry or banana variations are at bottom.
  • Pre-heat oven to 425 degrees F. Line 12 medium muffin cups with paper baking cups.
  • Combine dry ingredients. Add milk, egg, honey, and oil; mix just until ingredients are moistened.
  • Fill muffin cups 3/4 full. Bake 14-17 minutes or until golden brown.
  • *NOTE: You can stir in 1/2 cup frozen blueberries or 1 medium ripe mashed banana for a fruity variation.
  • These are also great the next day cold if you seal them in a baggy or stick em in a container to keep em fresh.

2 cups oat bran hot cereal, uncooked (I use Quaker)
1/4 cup firmly packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 egg
1/4 cup honey (I haven't tried molasses yet) or 1/4 cup molasses (I haven't tried molasses yet)
2 tablespoons vegetable oil

When I want to make muffins in a hurry, this is the recipe I use. The oat bran cereal makes these easy to prepare, and the sweet dark molasses adds a rich flavor.

  • In a large bowl, combine cereal, brown sugar and baking powder. Combine egg, milk, molasses and oil; mix well. Add to dry ingredients and stir just until moistened., Fill greased or paper-lined muffin cups three-fourths full. Bake at 425° for 15-17 minutes or until muffins test done. Cool in the pan 10 minutes before removing to a wire rack.

  • Preheat oven to 400 degrees F (205 degrees C). Line or grease 12 muffin cups.
  • Blend together brown sugar, oat bran, flour, baking powder, soda, and salt. Add eggs, chilled applesauce, and vegetable oil. Mix until well-blended. Spoon batter into muffin cups. Let stand 10 minutes.

  • Directions:.
  • Mix dry ingredients together in a bowl and set aside. (You can prepare jars of those dry ingredients in advance to save time).
  • In another bowl, mix cereals, oatmeal, milk, yogourt, apple sauce, vanilla and molasses. Let stand 5 minutes.

I made these as I love muffins. I didn't have any oat bran, so used wheat instead, they are not overly sweet but surely do taste good regardless. A hot cup of tea and a muffin really hits the spot at this time of year. I got this recipe out of the Joy Of Vegan Baking. Because this makes 16 muffins, I made a dozen bite sized ones too. I didn't put jam in them, but topped them with some cinnamon sugar.

Jam Filled Oat Bran Muffins image

Steps:

  • Preheat oven to 425'F.
  • Lightly grease your muffin tin(s).
  • In a med. size bowl with a hand mixer whip up the water and the flax seed meal. In about a couple of minutes this should become a thick and creamy liquid.
  • In a large bowl combine the oat bran, flour, brown sugar, baking powder, cinnamon and salt. Set aside.
  • In a small bowl mix the flax seed mixture, milk and oil.
  • Stir in the walnuts if using and then add to the dry ingredients until just combined, don't over mix!
  • Fill your prepared muffin cups less then half full, then put a dab of your jam on top of the batter, then put more batter until the muffin cup is 2/3 full.
  • Bake for 15-20 minutes, depending on how your oven is. I used a skewer to test the side to see if it was done. I didn't put it down the middle as the jam is there.
  • Cool the muffins in the tin for about 3 minutes, then remove to a rack to a wire cool.
  • Bon Appetit!

Steps:

  • Preheat oven to 400 degrees F (200 degrees C) and spray or line 12 cup muffin pan.
  • Mix firsts 8 dry ingredients in a large bowl (flour, oat bran, baking soda, baking powder, salt, cinnamon, brown sugar, orange zest). Leave the dates until later.
  • In another bowl whisk together the wet ingredients (beaten egg, molasses, vanilla extract, oil, and milk).
  • Add the wet ingredients to the dry ingredients. Stir only until combined.
  • Gently stir in dates (these will drop to the bottom of the muffins as batter is quite thin)
