EASY HOT WINGS
I was so tired of soggy skinned hot wings or too much vinegar in commercial hot wings, so I made this recipe up. I serve it with ranch dressing and sliced fresh veggies. Great to take to parties.

Steps:
- Cut wings into pieces discarding tips.
- Wash and pat dry with paper towels.
- Pre-heat cooking oil to 350 degrees.
- Slowly add 1/2 of the wing pieces to hot oil; fry until golden brown.
- In the meantime, in a large pan, melt the butter on a very low heat.
- Add bottled hot sauce and BBQ sauce.
- Keep sauce warm.
- Add the cooked wings to the sauce.
- Stir to coat.

- Preheat an outdoor or indoor grill to a high heat. Lightly grease the grill.
- Season wings with garlic powder and ground black pepper. Cook wings on the preheated grill until they are very crispy. Turn the wings frequently as they will burn easily.
- While the wings are grilling, in a large bowl, combine both hot sauces with garlic powder, Parmesan cheese and melted butter.

- Heat oil, either in deep fryer or deep skillet on top of stove.
- I cut that extra, short little wing piece off each chicken wing.
- Fry the wings in hot oil until the skin is crispy and chicken is done.
- Drain on paper towels.
- Get a large tupperware container, drop in enough wings to cover the bottom, pour desired amount of wing sauce over top, put on lid, and shake shake shake until well coated.
- Continue process until all your wings bathed in hot sauce.
- Serve with ranch or blue cheese dressing.
CLASSIC HOT WINGS

- Preheat the oven to 325 degrees F. Heat 3 inches of canola oil in a heavy pot to 375 degrees F.
- Add half the chicken wing parts to the oil and fry them until they're golden brown and fully cooked, 5 to 7 minutes. Remove and drain on paper towels. Repeat with the other half of the wing parts. In a saucepan, heat the cayenne sauce and butter over medium-low heat. Add the Worcestershire and hot sauce. Let it bubble up, and then turn off the heat. Place the wings in an ovenproof dish and pour the hot sauce over the top. Toss to coat, and then bake in the oven for 15 minutes.
- Serve with blue cheese dip, celery sticks... and your favorite cold, fizzy beverage.

- Pat wings very dry with paper towels. Toss wings, oil, 1 tsp. salt, and 1/2 tsp. pepper in a large bowl to coat.
- Melt butter in a small pot over medium-high heat. Remove from heat, stir in hot sauce, and set aside in a warm place.
- Prepare a grill for two zones, medium and medium-high, or heat a grill pan over medium. Working in batches if necessary, grill wings over medium heat, turning occasionally, until skin is starting to brown and fat is rendering, about 12 minutes. Move wings to medium-high zone of grill or increase heat under grill pan to medium-high. Cook wings, moving to a cooler section of grill or reducing heat if they start to burn, and brushing with about 1/4 cup hot sauce mixture during last minute of cooking, until cooked through, an instant-read thermometer inserted into the flesh but not touching the bone registers 165°F, and skin is crisp and lightly charred, 5-10 minutes.
- Pour remaining sauce into a large bowl, add grilled wings, and toss to coat. Season with salt and pepper and serve immediately.

- Mix brown sugar, mustard, and soy sauce together in a bowl. Measure 1/4 cup marinade for basting and transfer to a small bowl; cover and refrigerate.
- Place wings in a large resealable bag. Pour remaining marinade over wings, coating well. Seal and marinate wings at least 2 hours and up to overnight.
- Preheat oven to 375 degrees F (190 degrees C).

PAT'S FAMOUS HOT WINGS

- For the dipping sauce:
- In a small bowl, mash the blue cheese into the buttermilk and sour cream. Mix in the sugar and the apple cider vinegar, and season with salt and pepper, to taste.
- For the seasoning:
- Mix the dry rub, salt, and cayenne together in a small bowl.
- Preheat deep-fryer with peanut oil to 350 degrees F.
- For the wings:
- Add the wings to a large mixing bowl and season with the lemon-pepper seasoning and toss to coat. Allow to sit for a few minutes, so flavors can permeate into the chicken.
- Add the wings to the deep-fryer and fry until cooked through and golden and crisp, 12 to 15 minutes. You may need to do this in batches.
- Meanwhile, while wings are frying, melt butter in small saucepan over medium-low heat with the garlic. Transfer to a large bowl and whisk in the hot sauce, brown sugar, vinegar, and Worcestershire sauce until combined.
- Remove wings from fryer and drain on a paper towel lined sheet tray. Immediately sprinkle with the seasoning.
- Add fried wings to the large bowl of sauce and toss until well combined and wings are well coated. Serve immediately after tossing the wings with the sauce. Serve with the blue cheese dipping sauce and celery and carrot sticks.
HOT WINGS
Steps:
- Preheat a grill to medium-high.
- Season the wings with Cajun pepper. In a medium bowl, combine the chipotle pepper sauce with 1 tablespoon Cajun pepper, and honey, to taste. Place the wings on the grill and as you cook them, turn them and brush each time with the pepper sauce mixture. Make sure the wings cook long enough on each side so they get crispy around the edges.
- Remove the wings from the grill and brush again with the pepper sauce mixture before serving.
EASY HOT WINGS
I love hot wings, but not always so vinegary. I also love Flamin' Hot Funyuns. So, I combined them for an easy Hot Wing with a little twist of flavor. 2 Ingredients--Loads of flavor!

- Cut off wing tips. I save them for stewing later for chicken broth. You can cut the wings into half then if you want. Fry wings in hot oil. No seasoning, no batter, no dredging. Fry until crispy and done.
- Meanwhile, take Funyuns and put in large zip lock bag and crush with rolling pin. I approximated 8 oz. bag. They have 99 cent bags and then BIG bags. You might like to munch on the Funyuns with the wings.
- When wings are done, dump on paper towel lined pan for just a few seconds. Place fried wings into bag with crushed Funyuns. Shake to coat well. Remove and serve. Even good cold.

BEST HOT WINGS
I found this on another website as a Hooter's Clone. It really is the best I have ever tasted and a frequent request from my guests. The Franks Red Hot makes the difference. Oh, and heat the sauce over VERY LOW heat or it will seperate. If you let the wings sit for a bit they will become moist an you can do the second breading without the egg wash. Enjoy!

- Combine breading in a bowl or gallon sized ziplock bag, coat chicken with flour mixture. Then dip floured chicken briefly in beaten egg (add a little bit of water to thin slightly) and again dredge in flour. Set aside.
- Gently melt butter in pan, add Franks Red Hot, pepper and garlic powder. Be careful to keep the heat medium to medium low, and do not boil or butter will separate and the mixture will not stay blended. (If that happens, whisk it real quick and carry on anyway).
- Fry chicken in a single layer (9-10 drumettes at a time) in deep fryer at 375°F for 12 - 13 minutes (so they are nice and crispy). Drain briefly in fry basket.
- Pour half of the sauce into a glass container with a tight fitting lid. Dump in the chicken, put on the lid and carefully shake, coating the entire wing with sauce. Remove from container and set on a plate. The breading will absorb the sauce within a minute or so. Serve with celery sticks and either Ranch or Blue Cheese dressing.
- (Note: When tripling the recipe, only double the sauce and breading. There will be plenty).

- Line a plate with paper towels and have ready. Cut off the very end tips of the chicken wings and discard. Cut the wings in half where the joint bones meet. Make sure the wings are dry. In a bowl, combine the flour, salt and some pepper; add the wing pieces and toss to coat.
- In a large cast-iron skillet or a small stockpot, heat the oil to 350 degrees F on a deep-fat thermometer. Shake off any excess coating from the wings and drop the pieces into the hot oil. Cook for 6 to 8 minutes. With a slotted spoon, remove the wings from the pan to a bowl. Toss with 1/2 cup of the sauce of your choice until evenly coated. Serve immediately.
- Wearing gloves to protect your hands from the chile's volatile oils, remove most of the charred skin and all the seeds from the habanero. In a small saucepan, combine the chile, molasses, honey, ketjap manis, vinegar, tamarind and garlic, and bring just to a boil over high heat.
- Remove from the heat and let cool slightly. Add the ketchup and Dijon mustard to the syrup and pour into a blender and puree, or use an immersion blender to puree right in the pan. Stored in an airtight container, the syrup will last up to 2 months in the refrigerator. Put 1/2 cup of the sauce in a bowl, add the hot fried wings and toss until evenly coated.
- Combine the cornstarch and 1/4 cup water in a small bowl and stir to make a slurry.
- In a large saute pan over medium heat, add the canola oil. Add the green onions, ginger, garlic and black beans, and saute quickly for a couple of minutes. Add the water and cornstarch mixture, vinegar and honey. Stir until the cornstarch starts to thicken the sauce, a minute or two. Add the sesame oil and red pepper flakes if using. Put the sauce in a bowl, add the hot fried wings and toss until evenly coated. Serve hot, sprinkled with the sesame seeds.
- In a saute pan over medium heat, add the olive oil. Add the garlic, ginger, orange juice and 1/4 cup water and bring to a simmer. Add the preserved lemon or lemon zest, honey, orange blossom water, turmeric, cayenne pepper, cinnamon and coriander. Cook until the sauce is reduced a bit, another 3 to 4 minutes. Season with salt and pepper. Put the sauce in a bowl, add the hot fried wings and toss until evenly coated. Serve hot, sprinkled with the parsley and cilantro, with the olives and almonds alongside.

- Put the chicken wings, buttermilk and 1/2 tsp salt in a bowl and toss together to coat. Cover and leave in the fridge overnight.
- Heat oven to 200C/180C fan/ gas 6. Put all the ingredients for the spice mix in another large mixing bowl with a pinch of salt and mix well. Remove the wings from the fridge and, one at a time, roll them in the spice mix. Once fully coated, tip onto a baking tray lined with baking parchment, and roast for 35 mins. Meanwhile, mix the ingredients for the glaze together.
- Once the wings have browned, remove them from the oven and generously brush with the glaze. Reduce oven to 180C/160C fan/ gas 4, put the wings back in and cook for a further 15 mins or until the glaze has gone sticky and is starting to caramelise. Remove the wings from the oven and rest for a minute or so. Serve with a blue cheese dip, if you like.

EXTRA CRISPY HOT WINGS
I personally like my Hot Wings deep fried and extra crispy. I came up with this recipe after getting tired of the same ol' messy wings with goopy skin. Substitute with your favorite wing sauce, but I always preferred the tangy taste and slight kick of Crystal Hot Sauce. I usually mix Crystal Hot Sauce with a bit of Crystal Extra Hot or Tabasco.

- Take thawed chicken wing portions and place in ziplock bag.
- Pour hot sauce on wings for desired flavor and heat.
- Shake to coat chicken entirely.
- Marinate for at least 2 hours in the refrigerator.
- Beat eggs in a medium sized bowl.
- Pour flour into the spare ziplock bag.
- Mix Old Bay seasoning thoroughly with flour.
- Add cayenne pepper (red pepper) for extra heat.
