FANTASTIC MARINADE FOR GRILLED SHRIMP

To say this marinade is fantastic is an under statement --- the amounts listed enough for up to 4 pounds of shrimp and this also works well with lobster tails too --- if you are threading the shrimp on wooden skewers make certain to soak them for a minimum of 30 minutes in cold water before using, do not marinade the shrimp for more than 1 hour or the vinegar will start "cook" the shrimp, the hot sauce is only optional add in for extra heat.

Steps:

  • In a large bowl whisk together all ingredients (except garlic) until well blended, adjusting the seasoned salt, cayenne and hot sauce to taste.
  • Add in the garlic pieces.
  • Add in the uncooked shrimp to the bowl and toss to coat with the marinade.
  • Cover and refrigerate NO MORE than 1 hour.
  • Remove the shrimp and discard marinade.
  • Grill over medium heat until no longer pink (cooking time will vary depending on the size of the shrimp).

Spicy Grilled Shrimp image

Steps:

  • Whisk first 8 ingredients in small bowl.
  • Thread 6 shrimp onto each of six 10- to 12-inch-long metal skewers. Place skewers in 15x10x2-inch glass baking dish. Spoon all but 1/4 cup marinade over shrimp; turn to coat. Cover and chill shrimp and reserved 1/4 cup marinade at least 30 minutes and up to 2 hours.
  • Prepare barbecue (medium-high heat). Grill shrimp with some marinade still clinging until just opaque in center, about 2 1/2 minutes per side. Arrange skewers on platter. Spoon reserved 1/4 cup marinade over and serve.

Steps:

  • Combine olive oil, ketchup, balsamic vinegar, garlic, cilantro, paprika, salt, and cayenne pepper in a large bowl. Add shrimp and coat well. Chill in the refrigerator for 30 minutes to 1 hour.

My 2 and 4 year-olds love it and eat more shrimp than their parents! It is also a big hit with company, and easy to prepare. I make this with frozen or fresh shrimp and use my indoor electric grill if the weather is not good for outside grilling. Try it with a salad, baked potato, and garlic bread. You will not be disappointed!!!

Steps:

  • In a large bowl, stir together the garlic, olive oil, tomato sauce, and red wine vinegar. Season with basil, salt, and cayenne pepper. Add shrimp to the bowl, and stir until evenly coated. Cover, and refrigerate for 30 minutes to 1 hour, stirring once or twice.
  • Preheat grill for medium heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
  • Lightly oil grill grate. Cook shrimp on preheated grill for 2 to 3 minutes per side, or until opaque.
