FAT CAKE

Decadent and refreshing cake! This moist cake is incredible! The combination of pineapple and walnuts in the cake, paired with a coconut cream cheese frosting is perfect! My husband doesn't have a sweet tooth and even he goes crazy over this. It's called "Fat Cake" for a reason...sinful but oh, so good!

Steps:

  • In a large mixing bowl, beat eggs, sugar and vanilla until fluffy.
  • Combine the flour, baking soda, baking powder and salt; add to egg mixture alternately with pineapple.
  • Stir in walnuts.
  • Pour into a greased 13"x9"x2" baking pan.
  • Bake at 350F for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
  • Frosting:.
  • In a small mixing bowl, beat the cream cheese, butter and powdered sugar until smooth. Frost cake. Sprinkle with coconut. Store in the refrigerator.

Steps:

  • Preheat oven to 350 degrees. Spray 2 round cake pans with non-stick cooking spray and sprinkle with flour. Sift together all the dry ingredients in a large mixing bowl. In a small bowl, mix applesauce, milk, vanilla, coffee, prunes, chocolate, almond extract and egg whites. Fold into the dry ingredients. Bake for 40 minutes.

My Big Fat Bumpy Life Cake image

Steps:

  • Preheat oven to 350 degrees F.
  • Grease a 12-cup bundt pan with nonstick cooking spray and set aside. Measure out 1/3 cup of the sweetened condensed milk for using in the cake. Reserve the rest for the icing.
  • Combine flour, baking soda, salt, and cinnamon together in a medium bowl. Set aside. In the bowl of an electric mixer, combine the shortening, sugar, brown sugar, eggs, 1/3 cup sweetened condensed milk, and vanilla; beat at medium speed until creamy and fluffy. Add buttermilk and cocoa powder and beat until blended. Add flour mixture and beat on low to blend. Then increase the speed to medium and beat for 5 minutes. Stir in hot water with a spoon until just blended. Pour batter into prepared bundt pan and bake for 35 to 50 minutes, until a toothpick inserted in the center comes out clean. Cool for 5 minutes in the pan and then remove to a serving plate, fluted side up. Cool cake for 20 minutes.
  • Combine icing ingredients in the bowl of an electric mixer and beat at a medium speed until smooth. Stir the ingredients for the drizzle together until combined and set aside. Frost the warm cake with the icing and allow the hole in the middle to fill if you like. Sprinkle the marshmallows and pecans evenly over the icing. Combine the cocoa and vegetable oil. Decorate the cake with the chocolate drizzle. Serve warm or at room temperature.

  • Add entire can of diet cola, and mix well.
  • Bake as directed on package. That's it!
  • Tastes great plain, or with a light dusting of confectioner's sugar. Also wonderful with a spoonful of Cool-Whip Free.
  • Other combinations that I have tried and enjoyed are yellow cake mix/Fresca (regular or Peach flavor) or 7-up, chocolate cake mix/Dr. Pepper, and white cake mix/7-up.
  • Estimated Calorie Content: Going by my package of cake mix (2100 calories per TOTAL BOX OF MIX), divide that by 24 cupcakes (the normal amount a standard mix will make), and each cupcake comes out to just under 90 calories each! Just remember, this is without frosting or Cool Whip, etc.

  • Add 2 tablespoons flour ( from 370 g (13.1 oz)), yeast, 2 tablespoons sugar ( from 80 g (2.8 oz)) to lukewarm water. Using a spoon stir well and let the mixture stand for 10 minutes.
  • Meanwhile combine the remaining sugar, flour, nutmeg and salt in a bowl. After 10 minutes pour the the yeast mixture to the flour - salt mixture. Using a hand mixer with dough hooks or your hands mix well and knead until you have a smooth dough. Grease the bowl by just moving the dough to one side of the bowl. Do the same to the other side. Pour a few drops of oil on the dough, so that it will not dry out. Cover with cling film and then with kitchen towel. Put the dough in a warm place and let it rise for 30 minutes or until it has doubled in size.
  • In a skillet heat approximately 1 liter sunflower oil at medium high heat. Pour a small amount of oil to your hands and oil them. Take a bit of the dough with your finger tips and deep fry them. Repeat the process until you have used up all the dough.Put the fat cakes on a cooling rack/ cutting board lined with paper towels to remove the excess fat. I served my fat cakes with homemade tomato sauce dip, but they also taste amazing like that.
