GARDEN FRESH TOMATO SOUP
A quick and easy recipe for real homemade tomato soup like no other you've had before.

- In a stockpot, over medium heat, combine the tomatoes, onion, cloves and chicken broth. Bring to a boil, and gently boil for about 20 minutes to blend all of the flavors. Remove from heat and run the mixture through a food mill into a large bowl, or pan. Discard any stuff left over in the food mill.
- In the now empty stockpot, melt the butter over medium heat. Stir in the flour to make a roux, cooking until the roux is a medium brown. Gradually whisk in a bit of the tomato mixture, so that no lumps form, then stir in the rest. Season with sugar and salt, and adjust to taste.

CREAM OF FRESH TOMATO SOUP

- Heat the olive oil in a large, heavy-bottomed pot over medium-low heat. Add the onions and carrots and saute for about 10 minutes, until very tender. Add the garlic and cook for 1 minute. Add the tomatoes, sugar, tomato paste, basil, chicken stock, salt, and pepper and stir well. Bring the soup to a boil, lower the heat, and simmer, uncovered, for 30 to 40 minutes, until the tomatoes are very tender.
- Add the cream to the soup and process it through a food mill into a bowl, discarding only the dry pulp that's left. Reheat the soup over low heat just until hot and serve with julienned basil leaves and/or croutons.
FRESH TOMATO SOUP
We used orange tomatoes for their beautiful color, but red tomatoes make a soup that's just as delicious.

- In a large stockpot, heat the oil over medium-low heat. Add onion and garlic; cook, stirring occasionally, until onion is translucent and very tender, about 15 minutes. Stir in marjoram, tomatoes, and sugar; season with salt and pepper.
- Raise heat to medium-high, and bring to a boil. Reduce heat to medium, and simmer until liquid is reduced by one-quarter and has thickened slightly, 15 to 20 minutes. Remove from heat. Using a slotted spoon, remove marjoram sprigs. Let soup cool 10 minutes.
- Pass soup through a food mill set over a bowl to puree; discard solids. Season with salt and pepper. Serve garnished with marjoram sprigs if desired.
GARDEN-FRESH TOMATO SOUP

- In a large kettle, heat butter and olive oil over medium-high. Add onions and seasonings. Cook, stirring occasionally, until the onion is soft. Add the tomatoes and paste. Stir to blend. Simmer 10 minutes. , Place the flour in a small bowl and stir in 1/4 cup chicken broth. Stir into the tomato mixture. Add the remaining broth. Simmer 30 minutes, stirring frequently. , Allow mixture to cool and run through a sieve, food mill or food processor. Return the pureed mixture to the kettle. Add the sugar and cream. Heat through, stirring occasionally. , To prepare the croutons, rub the garlic over both sides of the bread. Brush with olive oil and place on a baking sheet. Bake at 350° for 10-12 minutes or until toasted. Turn and toast other side 2-3 minutes. Just before serving, top each bowl with one or two croutons.

- In a large saucepan, cook onion in butter until tender. Stir in flour to form a smooth paste. Gradually add water, stirring constantly until thickened. Add the tomatoes, parsley, salt, sugar, thyme, bay leaf and pepper; bring to a boil. , Reduce heat; cover and simmer for 20-30 minutes or until tomatoes are tender. Discard bay leaf.

FAUX-FRESH TOMATO SOUP
From the Sunset Low-Fat Cookbook, recipe is based on canned tomato purée. Top off with Herbed Cheese Croutons (recipe included). The deglazing (3 times) makes this one a bit time-consuming but gives the soup its good flavor. I prefer using the dried basil over the fresh in this recipe and a little chunkier than the usual smooth tomato soup.

- PREPARE CROUTONS AND SET ASIDE:.
- Slice 1 small French bread baguette (8 oz) crosswise into 1/4-in slices. Sprinkle slices with grated cheese then sprinkle lightly with dry basil and coarse salt. Place bread slices in a single layer on a large baking sheet. Bake in a 300° oven until toasted and golden brown (about 20 minutes). Serve croutons warm or at room temperature.
- MAKE SOUP:.
- In a 3-4 quart pan, combine oil, onion, carrot, and 1 cup of the the chicken broth. Bring to a boil over high heat; boil, uncovered, stirring occasionally, until liquid evaporates and vegetables begin to brown (about 10 minutes). To deglaze, add 3 tbsp water and stir to scrape browned bit free. Continue to cook, stirring occasionally, until mixture begins to brown again. Repeat deglazing and browning steps 2 more times, using 3 tbsp water each time; vegetable mixture should be golden brown.
- Add remaining 4 cups chicken broth. Stir to scrape browned bits free. Stir in tomato purée, basil, sugar, and white pepper. Bring to a boil over high heat; then reduce heat, cover, and simmer until vegetables are very tender to bite (about 20 min).
- Whirl mixture, a portion at a time, in a food processor or blender until smoothly puréed. Return to pan; bring to a simmer over medium heat.
- To serve, ladle into bowls and top each serving with 2 croutons. Pass remaining croutons.

- In a large saucepan heat olive oil over medium-high heat. Add onion and garlic and cook for approximately 5 minutes or until the onion is tender. Add flour and cook for 2 to 3 minutes, stirring constantly. Pour in chicken stock and bring to a light boil, stirring until thickened. Add tomatoes, thyme, and basil. Reduce the heat to a simmer and cook for 10 minutes. Stir in additional chicken stock if desired. Remove from heat and allow to cool slightly.
- Transfer soup in batches to a blender or food processor. Pulse until smooth. Pour soup into a large saucepan and season with kosher salt and white pepper to taste. Keep warm on low heat until ready to serve.
- Ladle soup into bowls. Garnish with lemon zest and drizzle with olive oil.

- Melt butter in a large heavy pot over medium heat. Add thyme, onion, and garlic. Cook until onion is completely soft and translucent, 10-12 minutes. Increase heat to medium-high; add tomato paste. Continue cooking, stirring often, until paste has begun to caramelize in spots, 5-6 minutes.
- Add tomatoes with juices, 1 teaspoon sugar, and 8 cups water to pot. Increase heat to high; bring to a simmer. Reduce heat to medium. Simmer until flavors meld and soup reduces to about 2 quarts (8 cups), 45-55 minutes. Remove soup from heat; let cool slightly. Discard thyme sprigs. Working in small batches, purée soup in a blender until smooth. Return to pot. DO AHEAD: Soup can be made 2 days ahead. Let cool slightly, cover, and chill. Rewarm before continuing.
- Stir in 1/4 cup cream. Simmer soup until flavors meld, 10-15 minutes longer. Season to taste with salt, pepper, and remaining 1 teaspoon sugar. Add more cream, if desired.
FRESH FIRE ROASTED TOMATO SOUP
Deliciously warm and comforting, but so simple! And it is low fat too. This is an adptation of a recipe I saw on the Fat Free Vegan Kitchen website. The author of the site mentions using the Muir Glenn brand of organic Fire Roasted Tomatoes, which is what I used when I made this. I believe this recipe is WW Core, if the sugar is not added

- Over medium heat, sauté the onion and celery in a medium non-stick saucepan sprayed with no stick cooking spray.
- When the onion is translucent, add the tomatoes, broth, oregano, rosemary.
- Simmer on very low heat for 10 minutes.
- Transfer soup to the blender, (work in batches if you need to) add the roasted garlic, and puree until fairly smooth.
- Add the parsley and salt and pepper to taste, and simmer for about 10 minutes to allow the flavors to blend.
- Taste the soup, and if it is too acidic, add a little sugar to taste.
- Serve with some chopped fresh basil.
