PERFECT SMASHED POTATOES
We've seen plenty of potato trends over the past few years: Retro hasselback potatoes made a comeback, buttery "melting" potatoes took over Pinterest soon after, and now smashed potatoes are the spuds of the moment. The idea is to simmer small potatoes until tender, then toss them with olive oil, flatten them and crisp them in the oven. It's simple - and insanely delicious. There are more than 35,000 #smashedpotatoes photos on Instagram, and many Food Network stars are obsessed, too. Here's how to make them like a pro.

- Put 1 3/4 pounds baby potatoes in a pot and cover with water. Add 2 bay leaves, 2 garlic cloves and a big pinch of salt; bring to a boil. Reduce to a simmer and cook until the potatoes are tender, 20 to 25 minutes. Drain, discarding the bay leaves and garlic. Toss the potatoes with 2 tablespoons olive oil, transfer to a baking sheet and smash with a spatula or measuring cup. Drizzle with more olive oil and season with salt and pepper. Broil, turning, until crisp and golden, 15 to 20 minutes.
SIMPLE GARLIC & FETA SMASHED POTATOES
This was a spur of the moment experiment. I had a craving for mashed potatoes, but I hate peeling them (they say that all the nutrients are in the skin anyway, so I like to leave them on) and was kinda bored with regular mashed potatoes. I checked the fridge and this is what happened. Every single time that I serve these potatoes, they are gone in record time. Please keep in mind that I am a "measure by eye" type, so the recipe may need to be adjusted to suit your tastes. Enjoy!

Steps:
- Boil the potatoes and garlic cloves together until potatoes are tender.
- Drain, retaining potatoes and garlic.
- Add mayo, milk and butter and "smash" the potato and garlic together with a hand masher. (I prefer the texture this way, but you can use a mixer if you prefer it that way.).
- When potatoes are the consistency that you like, add the feta cheese and mix well to distribute.
- Salt and pepper to taste.
- Enjoy.

- 1. Rinse the roast off with water... Cut 1 inch slits in the roast and place 1 to 2 cloves of the garlic in the hole. Place these cloves all throughout the roast so there is cloves every where in the roast. Place roast in large Oven Roasting Pan.
- 2. Take all the other spices and place on roast. Take the Potatos and Carrots and Onions and set in raosting pan.
- 3. Place the Pan in the oven and cook at 195 degrees for 6 hours. Sit back and enjoy the most wonderful Sunday meal ever.
FIREMAN BOB'S BROWN BUTTER SMOKED CHICKEN LASAGNA
I came up with the idea of this recipe when I saw a video, I said I bet I can bring a new lasagna recipe to the dinner table. This being the first recipe that I have posted in quite some time, My wish is that You all will enjoy my different take on a great classic

Steps:
- 1. In a large pot boil water seasoning with ample salt or to taste and cook spaghetti till aldente' DO NOT RINSE, take from boiling water and lay thin flat layers and sprinkle with parmesan cheese and place in Fridge and let cool for 30 minutes.
- 2. Cook mushrooms in brown butter till almost done, remove from heat and set aside... Place parsley, chives, and garlic in with the mushrooms.
- 3. Take Ricotta Cheese and stir in the eggs, and spinage till well combined and set aside.
- 4. Take the Smoked Chicken and shred and set aside.

- 6. Assembly of the lasagna in layers... First, brush your pan with the brown butter, sprinkle some parmesan cheese over the browned butter The second layer, take one of the thin layers of pasta and lay in the bottom of the pan, brush with brown butter The third layer is the mushroom mixture with more parmesan cheese sprinkled and brown butter brushed on. next spread some smoked chiken over and brush brown butter again. Next layer, spread a thin layer of the ricotta cheese and repeat the layers starting with brown butter and another layer of the thin spaghetti pasta repeat till all layers are complete and top with the bread crimbs
- 7. Place covered lasagna in a 350-degree oven for 35 minutes and then remove cover and bake for an additional 10 minutes or until the bread crumbs are golden brown
- 8. Sever with crusty bread and your choice of beverage.
FIREMAN BOB'S ROAST BEEF WITH A GARLIC CRUST

- 1. With a paper towel, wipe the Roast dry and place on wire rack in a deep roasting pan. Heat oil in a skillet, add garlic. Saute 2 minutes, pressing juice from garlic into oil, after, discard garlic. Mix in bread crumbs, parsley, salt, pepper, rosemary, thyme, and red pepper flakes. Combine all together and press mixture onto roast, coating well.
- 2. Roast at 205 degrees F. until meat thermometer registers 140 degrees for rare, ( 18 to 20 minutes per pound ). 160 degrees for medium ( 20 to 22 minutes per pound ). or 170 degrees for well done ( 22 to 24 minutes per pound ).
- 3. Remove Roast from oven. Allow Roast to stand 15 to 20 minutes before carving Garnish with parsley. ENJOY!

- 2. Stir in soup, water, and bouillon cubes. Cook and stir until blended.
