BROILED ZUCCHINI AND POTATOES WITH PARMESAN CRUST

Steps:
- Bring a medium pot of water to a boil over high heat. Add the potatoes and cook until just tender, about 8 to 10 minutes. Drain the potatoes and let cool. When cool, cut the potatoes in half.
- Place a medium saute pan over medium heat. Add the butter, garlic, thyme and rosemary and let cook until the butter melts, about 2 minutes. Meanwhile, season the cut sides of the zucchini and potatoes with salt and pepper. Carefully place the zucchini and potatoes cut side down in the melted butter. Let them cook until golden brown, about 12 to 15 minutes.
- Preheat the broiler. Line a baking sheet with foil. Place the browed zucchini and potatoes on the baking sheet cut side up. Sprinkle the tops with the Parmesan. Place in the broiler until the cheese is golden brown, about 4 minutes. Transfer to a plate and serve.
ZUCCHINI AND POTATO BAKE
This is a very easy and delicious dish that I like to make as a side dish for my summer barbecues.

- Preheat oven to 400 degrees F (200 degrees C).
- In a medium baking pan, toss together the zucchini, potatoes, red bell pepper, garlic, bread crumbs, and olive oil. Season with paprika, salt, and pepper.
- Bake 1 hour in the preheated oven, stirring occasionally, until potatoes are tender and lightly brown.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain and reserve.
- Fill a medium sauce pan with lightly salted water. Add zucchini and bring to a boil; boil for 10 minutes or until tender.
- In a large skillet, saute garlic in oil and hot pepper flakes. Add drained zucchini and parsley, then mix all together and simmer for 5 to 10 minutes. Toss with pasta; then add cheese and salt and pepper to taste, and serve.

- In a 6-quart kettle bring 5 quarts water to a boil. Peel potato and cut into 1/2-inch dice. Add potato and salt to boiling water and boil 2 minutes. Add zucchini and pasta and boil until pasta is al dente.
- Drain pasta and vegetables in a colander, reserving 1/2 cup cooking liquid, and in a bowl toss pasta and vegetables with oil, basil or parsley, reserved cooking liquid, and Parmesan. Season with additional salt and pepper.

- Bring a large pot of well salted water to boiling.
- In a large skillet warm 2 tablespoons of oil over high heat. Add half the zucchini, season with salt, and cook, without moving it, until dark golden, about 2 to 3 minutes. Transfer the zucchini to a paper towel lined plate. Add another 2 tablespoons of oil to the skillet and repeat with the remaining zucchini. Add 2 Tablespoons of water to the pan and remove from heat.
- Cook the pasta according to the package instructions until 2 minutes shy of al dente; drain.
- In the same skillet, melt 3 tablespoons of butter over medium heat. Add the garlic and cook 2 to 3 minutes. Toss in the penne and zucchini, and cook until the pasta is al dente, about 2 or 3minutes, adding more water if the sauce is dry. Toss in 1/4 cup of the parmesan and the remaining tablespoon of butter, add the mint and season to taste with salt and pepper.
- Divide the pasta among four bowls and finish each with a drizzle of oil and a it of cheese.

- Cook pasta in a large pan of boiling water 7-10 minutes, or until al dente. Drain and keep warm.
- Place zucchini in a steamer basket over boiling water. Cover pan and steam 4-5 minutes, or until just tender.
- Combine cornflour and water in a bowl.
- Stir in next 4 ingredients.
- Melt butter in a heavy nonstick pan over medium heat.
- Stir in cream mixture and cook 3-4 minutes, stirring until mixture begins to thicken. Stir in shallots and zucchini.
- Serve sauce over warm pasta.
