Steps:

• In a mixing glass or tumbler, combine grapefruit juice and syrup. Place ice in a highball glass; add juice mixture. Top with club soda.

• First, pour 50ml of the orange juice into each glass.
• Very slowly top up each glass with 100ml champagne.

• First, make the cordial. Tip the sugar and 75ml water into a saucepan set over a medium heat. Bring to a simmer, then add the lemon zest and juice, rhubarb and ginger. Cook until the rhubarb starts to break down and collapse, about 5-10 mins. Pour into a heatproof jug through a fine mesh sieve and set aside to cool. (You will make enough cordial for two drinks.)
• Pour the gin into an ice-filled coupe glass, then stir in 50ml of the cordial. Top up with sparkling wine. Twist the strip of rhubarb around a finger to curl, if using, then drop into the drink to garnish.

• Fill 8 glasses with a mixture made up of strawberries, kiwi fruit and pineapple rings. Fill the glasses with equal amounts of chilled sparkling apple juice, chilled tropical fruit juice and chilled soda water. Serve immediately.

• In a cocktail shaker, vigorously "dry shake" (in bartender's parlance, shake without ice) the gin, peach nectar, lemon juice, egg white, and simple syrup to emulsify. Add crushed ice and shake athletically for 20 seconds. Strain into a fizz (highball) glass or other decorative glass. Serve immediately.
• If you are concerned about consuming raw egg whites, buy already-pasteurized egg whites at your grocery store.
