Steps:

  • Place ingredients in bread machine according to manufacturers directions.
  • Start machine on dough setting.
  • When dough cycle is complete, remove dough with floured hands and cut in half on floured surface.
  • Take each half of dough and roll to make a loaf about 12 inches long in the shape of French bread.
  • Place on greased baking sheet and cover with a towel.
  • Let rise until doubled, about 1 hour.
  • Preheat oven to 450°.
  • Bake for 15 to 20 minutes or until golden brown, turning pan around once halfway during baking.

Steps:

  • Add 3/4 cup water, salt, flour, parmesan cheese, garlic powder and yeast to bread machine pan in order suggested by manufacturer.
  • Select dough/manual cycle.
  • When cycle is complete, remove dough from machine to a lightly floured surface.
  • Roll dough into a 15x10 inch rectangle.
  • Beginning at long end, roll up tightly as for jelly roll.
  • Pinch seams and ends to seal.
  • Taper ends by gently rolling back and forth.
  • Place loaf, seam side down on a greased baking sheet sprinkled with cornmeal.
  • Lightly brush loaf with oil.
  • Cover and let rise in warm draft-free place until almost double in size, 10 to 15 minutes.
  • With a sharp knife, make 3 or 4 diagonal cuts about 1/4 inch deep across the top of loaf.
  • Lightly beat egg white and 1 tablespoon water; brush some of egg white mixture over top of loaf.
  • Bake at 375 for 20 minutes.
  • Brush again with remaining egg white mixture and sprinkle with sesame seeds.
  • Bake 5 to 10 minutes more or until done- bread should sound hollow when tapped.
  • Remove the bread from the baking sheet and cool on a wire rack.

Steps:

  • Using an electric mixer with a dough hook, combine the yeast, sugar and warm water and mix for 2 minutes to dissolve the yeast. Add the salt and flour. With the mixer on low, mix until the dough starts to come together. Increase the speed to medium-high and mix until the dough comes away from the sides of the bowl and crawls up to dough hook.
  • Grease a mixing bowl with the oil. Place the dough in the greased bowl and turn once. Cover the bowl with plastic wrap and place in a warm, draft free place until the dough doubles in size about 1 1/2 hours.
  • Remove the dough from the bowl and invert it onto a heavily floured surface. Divide the dough into 2 equal portions. Pat each portion into a large rectangle, about 3/4-inch thick. Roll up the dough, beginning with the short side and stopping after each full turn to press the edge of the roll firmly into the flat sheet of dough to seal. Press with your fingertips. Tuck and roll so that any seams disappear into the dough.
  • Sprinkle a baking sheet evenly with 2 tablespoons of the cornmeal. Place the loaves on the baking sheet, about 3 inches apart. Sprinkle with the remaining 2 tablespoons cornmeal. Cover the loaves with a cloth and let rise until double in size, about 1 hour.
  • Preheat the oven to 400 degrees F.
  • With a sharp knife, make diagonal slashes, about 1-inch apart, on the top of each loaf. With a pastry brush, brush the egg wash evenly over each loaf. Place a cup of hot water in an oven-proof container on the baking sheet with the loaves.
  • Bake for 45 minutes, or until the bread is golden brown. Remove from the oven and cool on a rack. Slice to serve.

Steps:

  • Place all ingredients except for the cornmeal, in the order listed into the bread pan fitted with the kneading paddle and secure in the Cuisinart Bread Maker. Press menu button to select the dough program. Press start to mix, knead and rise. For best mixing results, scrape the pan 10 to 15 minutes after the program has started.
  • When cycle is completed, remove dough and transfer to a lightly floured surface. Punch to deflate and let rest for 10 minutes.
  • Divide dough into two equal pieces. Shape each piece of dough into a long narrow baguette and place on a baking sheet that has been dusted with cornmeal. Cover loosely with plastic wrap and let rise 30 to 40 minutes. While baguettes rise, place a pan of hot water on the bottom rack of the oven and preheat to 425 degrees F.
  • Dust dough gently with additional flour. Make 4 diagonal slashes in each loaf about 1/4-inch deep using a serrated knife. Bake bread in preheated oven 25 to 30 minutes until browned and hollow sounding when tapped. Cool on a wire rack. Bread slices best when allowed to cool completely.

FRENCH HOAGIE ROLLS

This is basically a standard French bread loaf recipe scaled up and modified for 4 hoagies, with my own observations and tips regarding making them suitable for eating sandwiches. The key point is that biting through the crust of a roll into a sandwich requires a crust that isn't tough.

Steps:

  • Combine yeast with tepid but not warm water and let sit until convinced the yeast isn't dead, 10 minutes maximum.
  • In a large bowl, combine most of the flour, oil and salt, add the water/yeast, and stir/add flour until the ball pulls away from the bowl.
  • Sprinkle flour over a kneading surface and over the ball, and knead for about 7 minutes.
  • Lightly oil a bowl and allow to rise until doubled, usually about 50-60 minutes if in a barely warm place.
  • Punch down the dough, divide into quarters, and shape into 4 hoagies roughly 6" x 3.5" or so. Allow to rise for 20 minutes.
  • Preheat the oven at 425, with a baking stone in the center rack and a ceramic dish on the bottom while the bread rises.
  • Transfer the rolls to the stone, return the stone to the center rack, and turn the heat down to 375.
  • For each of the first 4 minutes baking, toss a dash of water across the bottom of the ceramic dish to create steam.
  • The rolls should be medium brown and more than doubled in height within 29-30 minutes.

HEALTHY FRENCH BREAD LOAF (ABM / MACHINE)

This is a larger version of the other French Bread recipe I've posted - makes a 1 1/2lb loaf. It's a wonderfully open, light and delicious bread, and is actually slightly nicer than the smaller one I often make. It's egg-free, very low fat, sugar-free, and if using oil is dairy free, Kosher Pareve and suitable for vegetarians and vegans. I'm using this one more now that I have a new machine which makes larger and more conventional rectangular shaped loaves. It is based very heavily on a standard Panasonic machine recipe. I incorrectly listed this as suitable for diabetics, and most will be aware that white flour is more readily converted from complex to simple carbohydrates which will of course raise blood sugar levels.

Healthy French Bread Loaf (Abm / Machine) image

Steps:

  • The suggested Tsp of vinegar is an old bakers trick to help the loaf keep for longer and is used in place of the same amount of water. I use cider vinegar but white wine or clear rice vinegar would be fine. The loaf does taste better without it so if you can get through the bread within 24 hours or so then I recommend leaving it out.
  • Remove pan from bread machine and place on scales (electronic ones are strongly recommended), and zero the scales.
  • Add the vinegar to the pan if using it and the warm water to total 300g (essentially 300ml water weighs 300g).
  • Weigh in the rest of the ingredients, ideally using the flour to cover the water if you can. (The times when I use oil, I usually cut it back to around 2/3 tablespoon, but most people would probably prefer the full tablespoon as listed).
  • Transfer the pan back into the bread machine, select French bread cycle if available (or whole wheat cycle if not). My preference is for a dark/firm crust for this loaf. Start machine.
  • Remove when done and allow to cool on a wire rack.

SMALL ULTRA-LIGHT HEALTHY FRENCH BREAD LOAF (ABM) BREAD MACHINE

This carefully adapted bread machine recipe makes a superb, wonderfully light and open-textured French style loaf, but smaller than most - ideal for one or two people. This recipe is also much lower calorie and lower fat than most and is sugar-free, lactose-free and egg-free. The small size is perfect if, like me, you live alone and adore fresh baked bread but find most bread machine loaves are just too big unless you eat nothing but bread all day or you don't mind it a bit stale / defrosted. This is my favourite loaf and I make it a lot. A couple of things I've learned from the various modifications I've experimented with are: Don't use water COLD and straight from the tap if possible - do let it warm up to room temperature before using for this loaf. French loaves are made differently to other breads and this is quite important. I used to use filtered tap water, but found that any cheap bottled spring water makes sufficient improvements in taste that its worth using if you have it to hand. I almost always add Vitamin C Powder (you get it from Pharmacy) as it is a recognised major flour improver and additionally helps the bread keep fresh for longer. Original recipe called for 15g butter but I 've found this is vastly excessive unless you care for the buttery richness. I do in my scones and shortbread - not in my white bread. Have personally found that 9g of (firm) baking margarine gives wonderful taste and texture. Commercially, vegetable oil is used for French bread and I like it just fine with oil - at least for health purposes - it becomes more savoury too. 1/2 a tablespoon is plenty. If you are looking for a small, exceedingly healthy white loaf with wonderfully light and moist texture then do give this a run - I'm sure you'll be delighted!

Small Ultra-Light Healthy French Bread Loaf (Abm) Bread Machine image

Steps:

  • Remove pan from Bread machine and place on a electronic kitchen scale, and zero scale.
  • Weigh 210ml (210ml water weighs 210g) and rest of ingredients carefully into the pan, in the order listed (if you have the time, do have a read through of the notes :).
  • Select French Loaf cycle (or Wholewheat/Wholemeal cycle if no French Loaf cycle available) and select crust/firmness if necessary required for your machine. (I feel that this loaf benefits from a fairly firm crust - as long as it's not burnt!).
  • Start Machine.

  • Time listed is for the actual baking part of my machine's French Bread cycle. They vary by manufacturer.
  • I took this recipe originally from a machine which had a 6-hour French loaf cycle but my machine makes a French loaf in 4 hours. My mum's does it in 2 3/4 hours. I've found that the results are pretty consistent regardless of machine, although you occasionally need to increase/decrease amount of yeast to marry the recipe to the 'rise' component of your machine's cycle.
  • My machine has an un-overrideable 20 minute pre-heat before it does anything whatsoever whenever I use this cycle, so I need to take the following precautions so that the yeast doesn't make contact with any liquid before kneading starts which I recommend to you:.
  • When pouring the water do try to pour gently trying to avoid slashing up sides.
  • When adding the flour, do try to cover the water completely if possible.
  • When adding the yeast, if necessary/inclined try making a dip (or 'well') in the top of the flour and carefully pouring the yeast into the dip/well.
  • If using yeast in sachet form it's worth measuring it onto a teaspoon first and holding some of the sachet (depending on sachet size).
  • Here in Europe most of our cooking is weight-based rather than volume based.
  • A set of electronic kitchen scales with 1 gram graduations can be quite cheap if you hunt around and more than any other cooking and baking they really come into their own when it comes to bread-making, although I usually still use spoon measures for salt and yeast, and for liquid oil when I use it. Gives bomb-proof results, every single time!

Steps:

  • Pulse flour, salt, and vinegar in a food processor to combine.
  • Stir together yeast and 1/3 cup water in a small bowl until yeast is dissolved, then let stand until foamy, about 5 minutes. (If mixture doesn't foam, discard and start over with new yeast.) With motor running, pour yeast mixture and remaining 1 1/3 cups warm water into flour mixture in processor, blending until dough forms a ball and pulls away from side of processor bowl, about 1 minute.
  • Cover processor feed tube and let dough rise until it fills bowl, about 1 hour. Pulse several times to deflate dough.
  • Generously oil bread pans with olive oil.
  • Turn out dough onto a work surface and divide in half (dough will be very soft). Press 1 half into a 10- by 8-inch rectangle and fold in the 2 short outer sides to meet in the middle, pinching edges together. Turn over (seam side down), then roll and stretch into a 15-inch-long irregular loaf. Put loaf, seam side up, in bread pan and turn to coat with oil, leaving loaf seam side down.
  • Repeat procedure with remaining dough. Let loaves rise, uncovered, in a warm draft-free place 30 minutes.
  • Put oven rack in upper third of oven, then put a large roasting pan with 1 inch of water in it on bottom of gas oven or on lowest rack of electric oven. Preheat oven to 450°F.
  • Make 3 shallow diagonal slashes down length of each loaf with razor. Bake loaves 30 minutes, then carefully remove pan of water from oven. Remove bread from pans and turn upside down on upper oven rack, then bake until golden and crusty all over, about 5 minutes more. Cool loaves on a rack.
