Steps:

  • Peel bananas and cut in half.
  • Sift flour, cornflour, baking powder and salt into bowl.
  • Mix to smooth batter with the milk.
  • Beat egg white until soft peaks form, fold lightly into batter.
  • Drop banana pieces into batter, then deep fry in hot oil until golden brown.
  • Remove and drain on absorbent paper.
  • Toss in sugar.
  • (frying time is approx) Serve hot with ice cream or whipped cream.

It's a popular Malaysian snack that's traditionally deep-fried, but here I am pan-frying it in a smidgen of butter or cooking oil. That works too and it's way healthier. ^_^ Children love it, too, as it's mildly sweet. Great as an afternoon snack with a mug of coffee or tea.

Mashed Banana Fritters image

Steps:

  • Mix the flours, baking powder, soda, salt and sugar in a bowl.
  • Stir it into the mashed banana with a fork. (Add the fourth tbs of flour if mixture is too soft.).
  • Heat a frying pan to medium-hot and add enough oil to coat the flat area. (Traditionally, this snack is deep-fried but I find it not all that necessary.).
  • Scoop a tablespoon of the banana mixture onto the pan when the oil is heated to medium hot (a soft sizzling sound when the batter touches it). Flatten the batter slightly.
  • Fry one side till medium brown and flip over to fry the other side.
  • Place cooked fritters on a few layers of kitchen paper. Best served warm but cooled is good, too. :).

Pisang Goreng (Fried Banana Fritters) image

Steps:

  • Mix the flour, water, baking powder, egg and salt and let sit for about 20 minutes.
  • (This is your batter.).
  • Dip the banana halves into the batter and deep fry them in the vegetable oil at 325 degrees F for about 5 minutes or so until the batter is golden brown.
  • Remove the bananas from the oil and allow them to drain.
  • Meanwhile mix the cream, brown sugar and butter together in a saucepan and cook over medium heat until the sugar has dissolved.
  • Add the rum and be sure the sauce doesn't boil.
  • Place some vanilla ice cream on a plate.
  • Place a banana over the ice cream and pour a generous amount of rum sauce over the dessert.
  • *Serve while the banana is still hot!

This is a trial an error recipe. You have to keep on trying to do it until you get the right texture and flavour. Once you master it you can do it with your eyes closed. But, it is worth trying since it is a really nice and tasty snack. The ingredients below are flexible. It's up to individual taste. If you like more bananas you have to add less flour and the fritters will be a softer. If you prefer the fritters to be more rounded and spongy use more flour. Either way the batter must look like cake batter before frying. I prefer more flour.

Steps:

  • Mix all ingredients and stir with the spoon or your fingers until the mixture becomes slightly thicker than a cake batter.
  • Heat oil in deep frying pan over medium flame. Using right hand finger tip, scoop about 1 tbs banana mixture into hot oil (Do it slowly and gently). Try to make it as rounded as possible.
  • Fry for 2 to 3 minutes before stir. Cook for another 3 to 5 minutes or until the colour turn slightly dark.

  • Peel bananas and cut crosswise into 1 1/2-inch pieces. In a bowl cover bananas with rum. Macerate bananas at room temperature 30 minutes.
  • While bananas are macerating, in a shallow bowl lightly beat egg. In a plastic bag finely crush cornflakes with a rolling pin and transfer to a large shallow bowl.
  • In a deep 12-inch skillet heat 1 inch oil over moderate heat until a deep-fat thermometer registers 375°F. While oil is heating, carefully remove bananas from rum, reserving rum for another use.
