FUN-DO FONDUE

Fondues are a hit at our gatherings. The younger crowd dips bread cubes, and the adults like apples and pears. Celery, cucumbers and bell peppers work, too. -Judy Batson, Tampa, Florida

Steps:

  • In a small bowl, combine the first 5 ingredients; toss to combine. In a saucepan, combine cream, broth and honey; bring just to a boil, stirring occasionally. Reduce heat to medium-low. Add 1/2 cup cheese mixture; stir constantly until almost completely melted. Continue adding cheese, 1/2 cup at a time, allowing cheese to almost melt completely between additions. Continue stirring until thickened and smooth. Stir in lemon juice., Transfer mixture to a heated fondue pot; keep fondue bubbling gently. Serve with bread, pears and vegetables for dipping. If fondue becomes too thick, stir in a little additional broth.

Steps:

  • Preheat the oven to 375 degrees F.
  • Put the marshmallows in a 10-inch cast-iron skillet or other ovenproof saucepan or skillet; they can be slightly layered on top of each other. Place a sheet of aluminum foil on top to cover the skillet. Bake on the middle shelf of the oven for about 15 minutes.
  • Remove the skillet from the oven, remove the foil and raise the oven temperature to low broil. Put the skillet back in the oven and broil until the marshmallows are toasted and browned, 1 to 2 minutes. (Do not walk away from the oven. The marshmallows can burn fast.)
  • Wrap the handle of the skillet with an oven mitt or thick kitchen towel (the handle is extremely hot), then serve the marshmallows alongside the bar condiments, letting your guests build their own creations with the cookies, graham crackers, nuts, sauces and fruit.

Two 10-ounce bags marshmallows
A variety of cookies, such as chocolate chip, peanut butter, snickerdoodles, etc.
Graham crackers and chocolate graham crackers
A variety of chopped unsalted nuts, such as cashews, pistachios, pecans and walnuts
Chocolate sauce
Caramel sauce
Blueberries
Sliced strawberries

LIGHTER CHOCOLATE FONDUE (OR GANACHE)

This is an amazingly dark, rich and sinful fondue with a lot less fat. Make sure to use the best quality chocolate you can get your hands on, since that is your main flavor here. I have listed the things we like to dip in our fondue; other ideas are cherries, dried apricots, walnut halves, marshmallows or anything else that sounds good to you! This could also be used as a ganache. I always wondered if I could make a lower fat ganache without whipping cream, and here it is (and surprisingly, it takes almost the same)! Use to frost cupcakes or fill cakes. Slightly adapted recipe from Ellie Krieger's Healthy Appetite on Food Network.

Steps:

  • Cut angel food cake into bite size wedges.
  • Peel and cut banana into one inch chunks. Core and slice the pear or apple.
  • Place the bananas, pears and strawberries on a serving platter. Squeeze orange wedge over banana and pear (or apple) and mix gently.
  • In a medium saucepan, whisk together cocoa powder and sugar. Slowly pour in evaporated milk, all the while whisking, to make a paste.
  • Place the saucepan over low to medium heat and cook, stirring constantly, until chocolate base is simmering.
  • Remove pot from heat and whisk in vanilla and chocolate. Keep stirring until chocolate is completely melted. The mixture will be quite thick.
  • Transfer chocolate to a fondue pot to keep warm. If you do not have a fondue pot, try serving the fondue in a warmed ceramic bowl.
  • Dip fruit in chocolate. Spoon chocolate over angel food cake (it is too delicate for dipping) and enjoy!
  • Store leftovers in the refrigerator. Rewarm by microwaving 35-45 seconds, stirring every 10 seconds.

1/2 angel food cake
1 banana
1 pears or 1 apple
1 (16 ounce) container strawberries, hulled
1 teaspoon orange juice (1 wedge for squeezing)
1/2 cup unsweetened cocoa powder, natural (for baking)
1/3 cup sugar
1/2 cup fat-free evaporated milk (or low fat)
1 teaspoon vanilla extract
2 ounces dark chocolate, 60 to 70 percent cocoa solids, chips or finely chopped

Steps:

  • Thoroughly wash and dry strawberries and apples. Cut apples and banana into 3/4-inch-thick slices. Arrange all fruits and nuts on a plate. To make chocolate sauce, whisk together cocoa, sugar, and Splenda in a medium-sized bowl. Slowly pour in milk to make a paste. Mix together to remove lumps. Transfer to a medium-sized saucepan and bring to a low boil over low heat, stirring constantly. Remove from heat and stir in vanilla. Transfer chocolate sauce to fondue pot. Place pot over candle or canned heat burner. Slide fruit pieces onto fondue fork or toothpick and dip into sauce. For nuts, spoon sauce onto a plate and dip nuts in sauce by hand.

Dipping foods
1 pint fresh strawberries
1 red apple, cored and sliced
1 green apple, cored and sliced
1 banana
1/4 cup jumbo cashews
1/4 cup Brazil nuts
Light chocolate sauce
1/2 cup unsweetened cocoa powder
1/4 cup sugar
2 tablespoons Splenda Granular
1/2 cup skim evaporated milk
1 1/2 teaspoons vanilla extract

10 BEST FONDUE RECIPES - THE SPRUCE EATS

  • Cheddar Beer Fondue. Fans of beer and cheese dip will love this fragrant beer and cheddar fondue. Instead of the classic brandy that gives traditional fondue its texture, add a mild beer like lager, kölsch, or bock.
  • Cheese Fondue with Cognac or Brandy. This classic Swiss fondue pairs perfectly with snowy days. This traditional recipe calls for Kirschwasser, a cherry-based brandy.
  • Easy Chocolate Fondue. Use either high-quality semisweet chocolate chips, chopped chocolate bars, or chocolate melting discs for this simple chocolate fondue.
  • French Onion Soup Fondue. With a flavor profile similar to French onion soup, this warming fondue tastes fresh and exciting. Gruyere cheese has the same melty texture as your favorite soup topper.
  • Vegan Mushroom Fondue. Lovers of plant-based cheese get their fondue fun, too. Nutritional yeast, soy sauce, and miso give this vegan fondue its signature cheesy flavor, while mushrooms add an umami element.

7 COOKING TIPS FOR MAKING LOW-FAT FONDUE – SHEKNOWS

From sheknows.com
  • Use lower fat cheeses. The most important part of a good fondue is obviously the cheese. Regular fat cheeses contain about 9 grams of fat per ounce (much of it saturated) while lower fat cheeses have about 5 grams of fat per ounce.
  • Add texture with a bean puree. Another way to make a thick, rich fondue without adding more cheese is to add a white bean puree using great northern, cannellini or navy beans.
  • Flavor with wine. Adding wine, beer or another liquor will give the fondue another layer of taste without a lot of calories and will help balance out the other flavors.
  • Season with herbs and spices. Herbs and spices like rosemary, thyme, sage, curry, chili powder and saffron will deepen the flavor of your fondue without adding fat or calories.
  • Fire it up. If you love pepper jack cheese or simply the fire from chilies, add pureed peppers, like roasted red bell peppers or poblanos or chipotle in adobo sauce.
