ROASTED GARBANZO BEANS/CHICKPEAS

These are addictive little snacks. Crunchy and flavorful BUT actually good for you too! The spicier you get these the better imho! Plus, spicy foods are supposed to increase your metabolism! A reviewer said these made their mouth dry- Guess they might also increase my water intake! :) Make sure to get them good and dry before baking and they will cook more quickly.

Roasted Garbanzo Beans/Chickpeas image

Steps:

  • Drain garbanzo's in a strainer and rinse well with cool water. Shake to help remove water. Let sit to drain while proceeding.
  • Cover a rimmed cookie sheet or shallow casserole dish with cooking spray. Pour garbanzos on the foil and spread them into a single layer. Take a few sheets of paper towel and gently press over the top of the beans just to remove any extra liquid- speeds cooking time too.
  • Spray top of beans with cooking spray and sprinkle seasonings over the beans. Shake pan to help distribute the seasoning and make sure the beans are all in a single layer.
  • Place pan in an oven and set to 350 F- no need to preheat. Use lowest rack on oven and return every 15-20 minutes or so to shake the pan so nothing burns. Be gentle or they may spill over the sides. Cook until beans are browned and crispy. About 45 minutes.
  • Remove from oven and pour into a plastic bowl with tight fitting lid to cool. Careful they are HOT to the touch!
  • Snack away! Keep these stored in the bowl for best freshness or in a ziploc bag.

Steps:

  • Heat oil in a pot over medium-high heat. Saute onion until translucent, about 5 minutes. Add garlic, ginger, and anise; stir. Add chickpeas, tomato sauce, water, chile powder, garam masala, salt, cumin, coriander, turmeric, and clove. Reduce heat to medium-low and simmer, covered, until chickpeas start to soften, 5 to 7 minutes.
  • Mash some of the chickpeas directly in the pot to give the sauce a chunkier consistency. Cover and continue simmering, stirring occasionally, until flavors come together, about 15 minutes. Remove star anise pieces and clove before serving.

  • Sauté onions, add garlic and ginger in ghee.
  • Fry for about 5 minutes.
  • Add tomatoes, and cumin, coriander, turmeric and chili powders, and salt to taste.

I took a Cooks illustrated recipe for tomatoes and combined it with ideas from other recipes on this site for garbanzo beans. Adding the smoked Spanish paprika added a subtle but exotic complexity. This is wonderful as a main dish for vegetarians (without the anchovies), as a base for grilled fish, or add sausage for meat-lovers - Please do not be afraid of the anchovies: they aren't 'identifiable' in this dish but do add to the overall flavor. Small portions would work well in a tapas selection. I recommend using grape tomatoes in this recipe.

Spanish Garbanzo Beans and Tomatoes image

Steps:

  • Heat the olive oil
  • Chop the onion
  • Chop the anchovy fillets.
  • Mince the garlic.
  • Halve the grape tomatoes.
  • Saute the onion in the olive oil until soft and starting to take on color.
  • Add the garlic, anchovy fillets and tomato halves and stir until tomatoes start to soften.
  • Add the garbanzo beans and rest of the ingredients.

  • Heat the vegetable oil in a large pot over medium heat. Stir in the cumin and ground red chilies, and cook for a few seconds until the spices are fragrant. Add the serrano chiles, onions, garbanzo beans, lemon juice, and water; season to taste with salt. Bring to a boil over high heat, then reduce heat to medium-low, and simmer until the vegetables are tender and most of the liquid has evaporated, about 15 minutes. Sprinkle with ginger, tomatoes, and cilantro to serve.

Great, healthier substitute for chips! I love the crunch, Very helpful with those crunchy food cravings that often accompany the early stages of trying to eat better. The spices can be altered to your own tastes. You can go as simple as salt, or prepare the curry-style mix I use here. (Thanks Kari!) The spice list I give makes enough for --3 batches.

Crunchy Garbanzo Beans image

Steps:

  • Pre-heat oven to 350 degrees Fahrenheit.
  • Drain and raise beans.
  • Dry beans as much as possible (I roll them around in a linen towel). The dryer the beans are, the faster they will crisp up.
  • In a tupperware container, combine all spices and toss to mix.
  • Put beans into a bowl large enough to easily mix.
  • Pour ~2 tbsp of olive oil on them. Toss to evenly distribute the oil.
  • Shake some of the spice mixture over the beans. Toss.
  • Repeat until the beans are covered to your liking. (I usually add spice just two times. This leaves me with enough spice for about 3 batches (or 6 cans) of beans.)
  • Spread beans into a single layer on a cookie sheet (preferably one with a lip).
  • Bake for ~60 minutes.
  • Shake/Stir the beans every 20 minutes or so.
  • Allow to cool before sealing in a bag or container or they will go a bit soft again.
