My son's favorite food is shrimp, so I'm always looking for quick and simple ways to make it. In this recipe, sometimes I use garlic salt instead of minced garlic cloves and salt. -Julie Trani, Chesapeake, Virginia

- Cook rice according to package directions. Meanwhile, in a large skillet, cook the shrimp, garlic and salt in butter and oil for 1 minute. Add spinach. Cover and cook until shrimp turn pink and spinach is wilted. Stir in rice.

- Heat oil in a skillet over medium-high heat and cook shrimp until pink on all sides, 3 to 5 minutes. Reduce heat to low. Add shallot and garlic; cook until soft, about 5 minutes. Drizzle with olive oil and serve with lemon wedges.

EASY HOMEMADE SHRIMP FRIED RICE
This is a quick and easy shrimp fried rice recipe that my kids all love! This recipe is best warm and fresh, but will keep airtight in the refrigerator for up to 5 days or in the freezer for up to 4 months. Reheat gently, as desired.

Steps:
- Heat sesame oil and olive oil in a large nonstick skillet or wok over medium-high heat. Add shrimp and cook until they are bright pink on the outside and the meat is opaque, about 3 minutes, flipping halfway through.
- Remove shrimp from the skillet using a slotted spoon, allowing oils and cooking juices to remain in the skillet. Place shrimp on a plate and set aside.
- Add peas and carrots and corn to the skillet and cook, stirring intermittently, until vegetables begin to soften, about 2 minutes. Add garlic; cook and stir for 1 minute. Push vegetables to the side of the skillet, pour eggs into the other side, and cook to scramble, stirring as necessary, 3 to 4 minutes.
- Stir shrimp, rice, and green onions into the skillet. Drizzle evenly with soy sauce, season with salt and pepper, and stir to combine. Cook until shrimp is reheated through, about 2 minutes.

GARLIC-SHRIMP FRIED RICE

- In a small sauce pot, heat the vinegar, sugar and water until the sugar dissolves. Cook rice and stir in the mixture as soon as the rice has finished cooking. Fan the rice cool then put it in the refrigerator for 30 min. Oil a pan and add the sesame seeds while the pan is still hot and toast seeds. Add butter to a large pan and cook the carrots, green onions and white onion until the onions are translucent. Scramble the egg in a bowl and add it to the pan along with the shrimp. Scramble the egg and cook. Add the rice and garlic butter; cook for 3 min. stirring constantly. Add soy sauce, salt and pepper for taste. Cook for an additional 3 min.

- In a large saucepan, melt 3 tablespoons butter. Stir in flour until smooth; gradually add cream. Bring to a boil; cook and stir for 2 minutes or until thickened. Add 1 cup cheese, salt, mustard, dill and cayenne; stir until cheese is melted. Remove from the heat; stir in shrimp., Pat salmon dry; place in a greased 13x9-in. baking dish. Steps:
- Prepare rice according to the directions on the box.
- In a large skillet, melt butter over medium heat.
- Add garlic and cook for 3 minutes, or until lightly browned, stirring very frequently. Do not burn the garlic.
- Stir in the shrimp and cook for 1 minute, stirring frequently.
- Add prepared rice to the skillet and mix until well combined.
- Add cheese, milk, parsley, salt and pepper; mix and stir for 1 to 2 minutes, or until creamy and heated through.
- Remove from heat.

- Heat your wok over high heat. Add 1 tablespoon of oil to coat. Quickly stir-fry the shrimp until they're just cooked. They should be pink, but ever-so slightly translucent. Avoid overcooking them (you will be adding them back to the wok later). Transfer them to a bowl and set aside.
- Add ¼ cup oil to the wok and heat over medium-high heat. Add the ginger and fry until fragrant (the color will darken, but the ginger will not necessarily become crisp). Next, add the garlic. It should be lightly toasted; if it’s still white in color, it needs more cooking time. In total, it will take about 10 minutes time to cook the ginger and garlic.
- Next, turn the heat up to high and add the rice to the wok. Stir-fry the rice so the ginger/garlic mixture is evenly distributed. Spread the rice out in one layer so it can evenly toast. Occasionally stir-fry the rice and re-spread it. Next, season the rice with the soy sauce, Shaoxing wine, and white pepper. Continue to stir-fry for another 3-5 minutes.
- Next, pour the eggs evenly over the rice, and stir-fry quickly to distribute. The egg will coat the grains of rice, and you’ll have egg throughout instead of large clumps. If you’d prefer to pre-scramble the eggs and then stir them in at this step, you can do that too.

- First off is to get the rice cooked. If you're not using up left over rice, cook a fresh batch. I always use a rice cooker to steam the rice, but if you don't have one, try steaming rice in a bowl, in a steamer. This will take about 20 minutes or so.
- If you've followed any of our recipes before then you know what comes next......Get all your ingredients ready whilst you're waiting for the rice to cook.
- Wash,chop,shred whatever ingredients you have chosen and have them all laid out as in the photo ready for wok time.
