MAKE-AHEAD GARLIC TOAST
I love this because I always have leftover bread and it goes to waste most of the time. The best part is that you can pull out as many pieces as you want and bake them straight from the freezer!

Steps:
- Turn on broiler.
- Place bread in single layer on sheet of foil. (I use toasted oat bread or whole wheat).
- In small saucer or bowl, mix olive oil, margarine, Italian seasoning, garlic, and Parmesan.
- Brush or spoon mixture over each piece of bread.
- Sprinkle lightly with paprika.
- Place 4-6" under broiler.
- ***Watch Closely*** it can quickly go from browned to burnt if you're not paying attention. Cook 2-3 minutes & remove from oven when edges begin to brown.
- Sprinkle lightly with flaked sea salt (I use pink Australian salt, but if you don't have any, a light sprinkling of regular table salt will do).
- Serve!

ROASTED-GARLIC TOAST WITH TOMATO
Martha likes to use a rustic boule with a bit of rye in it for a denser, moister crumb. It toasts up beautifully without drying out and makes the ideal canvas for meltingly tender garlic confit, juicy Campari tomatoes, and fresh parsley.

Steps:
- Preheat oven to 425 degrees. Brush bread with oil; season with salt and pepper. Arrange on a baking sheet and bake until golden around edges but still soft in centers, about 10 minutes. Spread with garlic confit and top with tomatoes. Drizzle with oil, and sprinkle with salt and parsley.
GREEN GARLIC TOAST
Green garlic is harvested while still immature, before the bulb has a chance to fully develop the cloves we know so well. It looks a lot like a scallion, with a mild garlic flavor that's bright and fresh tasting. You can use both the white and green tender green parts of the stalk, trimming away any yellowing or woody parts near the top. In this recipe, minced raw green garlic is mixed with butter, Parmesan and chives, then used to top toast. It's pungent, herbal and sweet with a bite from the chile flakes. Serve these plain, or top with any number of embellishments - sliced avocado, sliced tomatoes, dollops of ricotta cheese, fillets of anchovies or sardines. They make an excellent nibble with drinks, or serve a large portion with a salad for a light lunch. If you're not using it immediately, the green garlic butter will freeze well for up to 3 months. And the piquant butter can also be used to cook eggs, or tossed with asparagus, pasta or rice.

- Mince the garlic. In a small bowl, mix together the garlic with the olive oil, dried oregano, and salt. Use a brush to brush the mixture on both sides of each slice of bread and place them onto a baking sheet. Try to pick up some of the minced garlic with the brush, as it tends to sink to the bottom. (If the oil runs out, depending on your size of bread, just add a splash more to the bowl with the garlic.)
