VEGAN GENERAL TSO'S CHICK'N

I adapted ChefDaddy's chicken recipe to make it vegan using store-bought plant-based nuggets. Make it kid-friendly by omitting the chiles and serving crushed red pepper on the side.

Vegan General Tso's Chick'n image

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Place frozen nuggets on a baking sheet.
  • Bake in the preheated oven for 7 minutes. Flip nuggets and continue to bake until heated through and crispy, 7 to 9 more minutes. Remove from the oven and keep warm.
  • While the nuggets are cooking, heat peanut oil in a wok or large skillet over high heat. Stir in white parts of green onions, red chiles, garlic, and orange zest. Cook, stirring, until chiles and garlic are fragrant, 1 to 2 minutes.
  • Add sugar, soy sauce, broth, vinegar, sesame oil, and ginger to the wok. Bring to a boil and cook until sauce is slightly thickened, about 3 minutes.
  • Whisk together water and cornstarch in a small bowl; stir into the sauce. Return to a boil and cook until thickened, about 1 minute. Remove and discard orange zest.
  • Stir nuggets into sauce to coat. Reduce heat to low; cook, stirring frequently, until nuggets are heated through, 2 to 3 minutes.
  • Serve nugget mixture over rice with broccoli. Sprinkle with sesame seeds and green parts of green onions.

2 teaspoons cornstarch
3 cups hot cooked brown rice
3 cups steamed broccoli
2 teaspoons toasted sesame seeds, or to taste

Steps:

  • For the chicken, mix the egg white with the potato flour in a bowl, then add the soy sauce, Shaohsing wine (or sherry) and the chicken. Turn the chicken over to coat it.
  • For the sauce, mix together the tomato purée, 2-3 tbsp water, potato flour, soy sauces, rice vinegar, sugar and Shaohsing wine and set this aside. Snip the chillies into 5cm lengths, discarding the seeds.
  • Heat the oil in a wok and cook the garlic, ginger and chillies over a medium heat until they're aromatic and beginning to soften, but not brown.
  • Mix the cornflour and plain flour for the coating with salt and pepper and tip into a broad shallow bowl. Working with one piece of chicken at a time, dip it in the flour mix and set the pieces onto a tray.
  • Pour enough oil into a deep pan to come 8cm up the sides. Heat until it reaches 200C (if you drop in a test piece of chicken, it should sizzle straight away). Carefully add half the chicken pieces and fry until they're crisp and golden - agitating the pieces to make sure they don't stick together - about 4 mins. Lift the pieces out with a slotted spoon onto a double layer of kitchen paper. Repeat with the rest of the chicken.
  • Heat the wok, add the sauce mixture to the garlic, ginger and chillies in there and cook, stirring, until the mixture bubbles and thickens. Add the chicken and half the spring onions and warm everything through. Serve with the sesame seeds and the rest of the spring onions scattered on top. This doesn't give you huge servings so it's best to offer another dish with it, as well as boiled rice.

1 tbsp groundnut oil
1 inch piece of ginger , peeled and very finely chopped
2 cloves garlic , finely chopped
1l groundnut oil
3 spring onions , finely chopped
3 tsp toasted sesame seeds

GENERAL TSO'S CHICKEN

General Tso's chicken is named for Tso Tsung-t'ang, a 19th-century general who is said to have enjoyed eating it. The Hunanese have a strong military tradition, and Tso is one of their best-known historical figures. But although many Chinese dishes are named after famous personages, there is no record of any dish named after Tso. The real roots of the recipe lie in the aftermath of the Chinese civil war, when the leadership of the defeated Nationalist Party fled to the island of Taiwan. They took with them many talented people, including a number of notable chefs, and foremost among them was Peng Chang-kuei. He created this dish in 1950s Taiwan, and brought it with him when he moved to the states in 1973, making it sweeter for American palates. This version is adapted from the original, hot and sour and lacking the sweetness of its Americanized counterpart.

Steps:

  • Make the sauce by combining all the ingredients in a small bowl. Set aside.
  • To prepare the chicken, unfold the chicken thighs and lay them on a cutting board. Remove as much of the sinew as possible. (If some parts are very thick, cut them in half horizontally.) Slice a few shallow crosshatches into the meat. Cut each thigh into roughly 1/4-inch slices and place in a large bowl. Add the soy sauces and egg yolk and mix well. Stir in the potato flour and 2 teaspoons peanut oil and set aside. Using scissors, snip the chilies into 3/4-inch pieces, discarding the seeds. Set aside.
  • Pour 3 1/2 cups peanut oil into a large wok, or enough oil to rise 1 1/2 inches from the bottom. Set over high heat until the oil reaches 350 to 400 degrees. Add half the chicken and fry until crisp and deep gold, 3 to 4 minutes. Using a slotted spoon, transfer the chicken to a plate. Repeat with the second batch. Pour the oil into a heatproof container and wipe the wok clean.
  • Place the wok over high heat. Add 2 tablespoons peanut oil. When hot, add the chilies and stir-fry for a few seconds, until they just start to change color. Add the ginger and garlic and stir-fry for a few seconds longer, until fragrant. Add the sauce, stirring as it thickens. Return the chicken to the wok and stir vigorously to coat. Remove from the heat, stir in the sesame oil and top with scallions. Serve with rice.

1 tablespoon double-concentrate tomato paste, mixed with 1 tablespoon water

General Tso's Vegan

Steps:

  • 1. In a small bowl, whisk together all the sauce ingredients and set aside.
  • 2. In a medium-sized bowl, whisk all the dry ingredients for the batter together, then whisk in the soy milk and soy sauce.
  • 3. Tear the seitan into bite-sized pieces, then mix in with the batter.
  • 4. Heat 2 Tbs. peanut oil in a wok over medium-high heat then add the battered seitan. Fry the seitan, stirring constantly and separating the individual pieces, until it's nice and brown and crispy. This may take 8-10 minutes. Then remove the seitan from the wok and set aside.
  • 5. Add the remaining 1 Tbs. of oil to the wok, then add the broccoli and onion. Stir-fry for a few minutes. Don't let the broccoli get too soft; it should still retain its color. Add the ginger and cook for another 30 seconds. Add the sauce and cook for another 3 minutes or so until it thickens. When the sauce is almost thick enough, turn the heat to low and stir in the seitan for about a minute.
  • 6. Serve over rice, or over soba or udon noodles.

12 oz seitan (use drained weight if packed in water)
1/2 lb broccoli, chopped (fresh is best; frozen is ok)
1/2 small-to-medium onion, chopped, not too finely
1 tsp minced fresh ginger
3 Tbsp peanut oil (a bit less if using a non-stick pan)
BATTER FOR THE SEITAN:
1/4 c all-purpose flour, rice flour, or spelt flour
2 Tbsp cornstarch
1 tsp egg replacer (such as energ-g)
1/4 tsp baking powder
1/4 c plain unsweetened soy milk
1 Tbsp soy sauce
FOR THE SAUCE:
1/4 c soy sauce
2 Tbsp rice vinegar
3 Tbsp vegetable broth
3 Tbsp sugar or 2 1/4 tbs. agave nectar
2 tsp cornstarch

  • I like to saute the vegetables first and then add them back in at the end, that way they have a nice texture to them and don’t get too mushy with everything else--but feel free to cook the vegetables as you please.
  • In a large nonstick pot over medium high heat, add the sliced garlic if using, cook 1-3 minutes until fragrant and translucent, adding water or broth as needed (of course you may cook with oil if you prefer). Then add your veggies. For me, I sauteed the broccolini for about 5 minutes but NOT the red bell pepper because I prefer my red bell peppers crunchy, not soft. I put a lid on for part of those 5 minutes to give the broccolini a little steaming action. Cook according to your preferences. Either way, take your cooked veggies out of the pot and place them in a bowl and cover either with a small plate or aluminum foil.
  • While your veggies are cooking, rehydrate the soy curls by placing them in a medium bowl and adding vegetable broth or water just so the top soy curls are floating just a little, for me, about 1 ¾ cups broth for 8 oz soy curls. It should absorb all the water in about 6-8 minutes, but if it doesn’t, drain off the water well before cooking them.
  • Saute the minced or grated ginger and garlic next over medium high heat for about 1-2 minutes or until fragrant in your large nonstick pot. Remember to add just a little water or broth to keep them from sticking.
