Steps:
- Preheat the oven to 425 degrees F. Spray a 9-by-13-inch baking pan with canola oil spray. Sprinkle the fish with the salt and place it in the pan.
- Combine the coconut milk, cilantro, ginger, garam masala, garlic and jalapeno in a blender and pulse until fairly smooth. Pour the mixture over the fish. Bake until the fish is just opaque in the center, about 15 minutes. Garnish with more cilantro and serve with the rice.

- In a shallow bowl, mix flour, salt, pepper and 1/4 teaspoon cumin. Dip fillets in flour mixture to coat both sides; shake off excess., In a large nonstick skillet, heat oil over medium heat. Add fillets; cook, uncovered, 3-4 minutes on each side or until fish flakes easily with a fork. Remove and keep warm., To the same pan, add broth, cilantro, lime zest, lime juice and remaining cumin; bring to a boil. Reduce heat; simmer, uncovered, 2-3 minutes or until slightly thickened. Serve with tilapia.

GINGER LIME TILAPIA
My husband won't eat fish unless its Tilapia, so I've had to find ways to make it interesting. This is my favorite variation I've done so far. I generally serve this with fresh snow peas or green beans splashed with teriyaki sauce.

Steps:
- Mix together the lime zest, ginger, paprika, garlic powder, red pepper flakes, salt and pepper.
- Sprinkle mixture on both sides of each tilapia filet.
- Heat olive oil in a pan. Add the fish filets to the pan and cook on medium-high for 4 minutes on each side.
- Sprinkle finished filets with lime juice.
GINGER CILANTRO TILAPIA
Steps:
- Heat the oven to 475°F. Pat the fish dry, season lightly with salt and pepper, and lay in a 9x9-inch or 8x8-inch ceramic or glass baking dish. Put the garlic, grated ginger, chopped jalapeño, and cilantro in a small food processor with the white wine, soy sauce, and sesame oil. Whir until blended. (Alternately, you can finely chop or mash the aromatics in a mortar and pestle, then whisk together with the liquid ingredients.) Pour the sauce over the fish, rubbing it in a little. Bake for 8 to 10 minutes, or until the fish flakes easily and is cooked through. It will be very moist and even a little gelatinous, still. Serve immediately over brown rice or orzo, garnished with the additional scallions and cilantro.

- Heat the oven to 475 degrees.
- Pat the fish dry and season lightly with salt and pepper. Place in a glass baking dish.
- Place in a small food processor the jalapeno, garlic and ginger along with the soy sauce, white wine, sesame oil and cilantro. Process until blended.
- Pour the sauce over the fish, spreading and slightly pressing the solid ingredients down into the fish. Bake for about 8 minutes or until the fish flakes easily and is cooked through.
- Remove the tilapia with a spatula and divide between two plates. Drizzle the fish with the marinade juices left in the pan. Serve with jasmine or brown rice.

- Preheat oven to 375.
- Coat the bottom of a baking dish with olive oil.
- Place the tilapia fillets in the pan.
- Sprinkle desired amount of garlic salt, cajun seasoning, and pepper over tilapia pieces.
- Press several sprigs of cilantro on top of each piece.
- Bake tilapia for 8 to 12 minutes.
- Enjoy alone or with lemon!
