GLAD THAI DINGS

A pure joy when I bring these out. Little meatball with a taste that's original. From Book titled Eat shrink & be Merry. My boys love them I omit the red pepper flakes. I add broccoli and serve over rice or rice noodles.

Glad Thai Dings image

Steps:

  • Preheat oven 400°F Spray a cookie sheet with cooking spray and set aside.
  • To make meatballs, combine all the meatball ingredients in a large bowl and mix using your hands works best. Form mixture into approximately 40 1-1 1/2 inch balls. place on cookie sheet.
  • Bake for 18-20 minute until cooked through and nicely browned on the outside.
  • While meatball are cooking prepare the sauce. In a deep, nonstick skillet whisk together all sauce ingredients. heat over med-high heat, stirring constantly, until sauce boils. Reduce heat to medium and cook uncovered, for 3 min, stirring often, Sauce will thicken a bit.
  • add cooked meatballs to sauce and mix well. Serve hot.

1 1/2 lbs ground beef
1/4 cup hoisin sauce
1/4 cup breadcrumbs, unseasoned
3 tablespoons finely minced green onions
1 tablespoon minced fresh cilantro
1 free-range egg
2 teaspoons garlic
1 teaspoon gingerroot
1 teaspoon toasted sesame oil
1 cup coconut milk
1/3 cup hoisin sauce
2 tablespoons peanut butter
2 tablespoons minced fresh cilantro or 2 tablespoons basil
1 tablespoon grated gingerroot
1 teaspoon lemon zest
1/8 teaspoon crushed red pepper flakes

STICKY BANANA RICE

This recipe was inspired by the description of the food in a book titled The Airmen and the Headhunters, in which American airmen during WWII were downed in the jungles of Bornea. They survived only by the kindness and generosity of the Dayaks, native Borneans of the inland jungle. This is very sweet, so it makes a good dessert.

Steps:

  • Boil the rice according to the directions on the box or bag.
  • Stir in the cream of coconut, bananas, and shredded coconut.

3/4 cup white rice
1/2 cup cream of coconut (found in Hispanic food aisle)
2 bananas, sliced
2 -3 tablespoons shredded coconut

Steps:

  • CHOCOLATE COOKIE CRUMB CRUST: Combine chocolate cookie crumbs with melted butter and cinnamon.
  • Toss and mix well.
  • Press into the bottom and partially up the sides of a 9 inch springform pan.
  • Preheat the oven to 325 degrees F.
  • CHEESE FILLING: Put the cream cheese in a mixing bowl and beat until light and soft.
  • Add 3/4 cup of the sugar and mix well.
  • Stir in the creme de menthe, creme de cacao, flour and salt.
  • Beat until the mixture is blended well.
  • Add the egg yolks and sour cream, and beat until the batter is smooth and blended.
  • In a different bowl, combine the egg whites and 1/4 cup remaining sugar and beat until the whites stand in soft peaks.
  • Fold the beaten whites into the cream-cheese mixture.
  • Pour the batter into the crust and bake for about 1 hour, or until the cake has puffed and trembles just slightly when shaken.
  • A wooden skewer inserted in the cake should come out almost clean, with just a trace of batter or moist crumbs on it.
  • Don't overbake; it will settle and firm somewhat as it cools.
  • Don't worry if the cake cracks as it bakes.
  • Remove and cool.
  • Refrigerate if standing more than 4 hours.
  • Garnish the top with grated chocolate.
  • ENJOY!

ROBYN'S ITALIAN BAKED WING DINGS

I cook these for a main dish or as an appetizer when I am entertaining. My measurements can be adjusted because I don't usually measure the ingredients. These tend to stick to the pan, so be careful when flipping.

Robyn's Italian Baked Wing Dings image

Steps:

  • Preheat oven to 425 degrees.
  • In a bowl, mix thawed wing dings with the above ingredients.
  • Line a baking sheet with foil and spray thoroughly with a non-stick cooking spray.
  • Align the wing dings on the baking sheet and bake for 45 minutes or until done, flipping half-way through. (I cook my wings this long or longer because I like the skin to be crispy instead of gummy).
  • Note: When flipping and removing, use tongs and pick them up carefully. The wings will stick and you don't want half of your meat stuck to the foil.

Steps:

  • Combine ingredients from syrup to garlic powder, mixing well.
  • Bring to a boil and cook over medium heat for about 6 minutes.
  • Cut wings in half at joint, place in shallow foil lined baking dish.
  • Pour marinade over chicken wings.
  • Cover and marinade over night.
  • Brush wings with marinade before baking.
  • Bake at 400 degrees for 45-60 minutes. Spoon sauce over wings now and again.
  • Serve hot with sauce.
