- Preheat oven to 375 degrees F (190 degrees C). Season pork with salt and pepper.
- Heat oil in an ovenproof skillet over high heat. Cook pork until browned on one side, 3 to 4 minutes. Turn over pork and transfer the skillet to the preheated oven. Cook until pork is browned and still slightly pink in the center, 20 to 25 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Transfer pork to a plate.

- Combine all ingredients in a small bowl.;
- Preheat grill to medium-high. Reserve 1/2 cup of the Maple-Horseradish Glaze and set aside. Brush pork chops on both sides with olive oil and season with salt. SWEET AND SPICY HORSERADISH SAUCE OR GLAZE
This is a perfect simple sauce on grilled or roasted chicken, pork chops or tenderloins, steaks, burgers, brisket, roasts, lamb, spiral hams, or even salmon. But it is so versatile. Add some acidity (either a juice such as oj, or a vinegar) and it makes a wonderful marinade. Rather than eggs - trying using this as a first coat and then finish in bread crumbs and bake. I have made this with chicken and pork and both come out perfect. But my favorite 2 ways is to use it just as a condiment drizzled over or served on the side; and secondly to use it as a glaze on your favorite recipes. Grilled pork tenderloin is wonderful like this. I have even used this as a spread on a grilled sandwich with turkey and havarti cheese. It is a simple 3 minute sauce.

- Jelly -- Add the apple and currant jelly to a small bowl and microwave 30 seconds on medium heat. This will loosen up the jelly and make it a bit easier to mix with the other ingredients.
- Sauce -- To the jelly, add the the horseradish (more or less to taste), shallot, thyme, red pepper flakes, salt and pepper to taste.
- Serve -- If you serve this as a sauce on the side, you can serve it either warm or cold. Otherwise, it can be made ahead and kept refrigerated. I don't keep mine more than 2-3 days however. I usually make what I need at that time. ENJOY!

- Preheat oven to 325 degrees F.
- Place tenderloins on meat rack in shallow roasting pan.
- Combine jelly and horseradish in microwavable dish or small saucepan. Heat high one minute in microwave or over low heat on stove top until jelly is melted; stir well.
- Brush half of mixture over tenderloins and roast for 30 minutes; then turn tenderloins over. Brush with the remaining jelly mixture and continue to roast another 30-40 minutes depending on thickness of tenderloins or until an instant meat thermometer register 160 degrees F.
- Transfer tenderloins to a cutting board; tent with foil. Let stand (rest) 10 minutes.
- Remove meat rack from pan and pour broth and wine into the pan. Place pan over stove burners; cook over medium high heat, stirring frequently and scraping up any browned bits, 4-5 minutes or until sauce is reduced to 1/2 cup. Strain sauce; season to taste with salt and pepper.

13-MINUTE BEEF TENDERLOIN WITH HORSERADISH SAUCE
Food TV's Bobby Flay gets this super-easy and company-worthy tenderloin cooked for him every year on his birthday by his wife, Kathy. You won't believe how easy it is! Note that this recipe is written for a gas oven; also note that prep time is 3 hours (at least) for marinating. You'll need the heavy-duty aluminum foil for this one.... no substitutions or it won't work!!

- Prepare a heavy baking dish that is as close to the size of the beef tenderloin as possible by making an aluminum foil "basket" for it to sit inches It is VERY important to use heavy duty aluminum foil. Place 2 or 3 pieces of foil in the dish and put the beef tenderloin on top of it, leaving enough hanging over the edges of the dish to really wrap up the meat.
- Season the tenderloin well with salt and pepper, and then "mash" the garlic over the entire tenderloin. Sprinkle the butter pieces evenly over the beef. Drizzle with Worcestershire and lime juice let marinate in the refrigerator for at least 3 hours, turning halfway through marination time. Bring the tenderloin back to room temperature before roasting.
- Adjust the oven rack to the highest position and preheat the broiler.
- Place the pan right underneath the broiler and broil for about 8 minutes. (It will look like the flames are burning or touching the meat, but that is fine).
- Carefully pull the pan out and turn the meat over. Broil for another 5 minutes or until cooked to desired doneness. (When the meat is done under the flame it will look like it is burned, but it's not).
- Wrap it up very tightly in the foil and let it sit and continue to cook inside the foil on the kitchen counter for about another 1 1/2 hours.
- Whisk together the sour cream and horseradish and season with salt and pepper. Remove the string binding the roast, slice the meat and serve with the horseradish sauce on the side.

ROAST PORK LOIN IN HORSERADISH CRUST

- To make the roast pork loin:
- Preheat oven to 425°F.
- In a heavy skillet cook bread crumbs in 1 tablespoon oil with salt and pepper to taste over moderate heat, stirring, until golden brown. Transfer bread crumbs to a bowl and toss well with horseradish.
- Pat pork dry and season with salt and pepper. In skillet heat remaining tablespoon oil over moderately high heat until hot but not smoking and brown pork on all sides, about 5 minutes. Transfer pork to a shallow baking pan and coat top and sides evenly with mustard. Press bread crumb mixture evenly onto mustard and roast pork in middle of oven until a meat thermometer inserted in center registers 155°F. for slightly pink meat (if bread crumbs begin to get too browned arrange a sheet of foil loosely over pork), 25 to 30 minutes. Transfer pork to a cutting board and let stand 5 minutes.
- Cut pork into 1/4-inch-thick slices and serve with cabbage and onions.
- To make the cabbage and onions:
- In a large heavy skillet heat oil over moderate heat until hot but not smoking and cook cabbage and onion, stirring, 10 minutes, or until just tender. Stir in water, vinegar, sugar, and salt and pepper to taste and simmer, stirring occasionally, until almost all liquid is evaporated and vegetables are tender, about 15 minutes. Serves 2.

Wonderful way to easily prepare a pork tenderloin. I found this in the local newspaper and it was described as "heart healthy". The sauce adds quite a kick! The recipe calls for unsalted stone ground mustard, but I had the regular stone ground mustard on hand and used that.

- Mix parsley, butter, and 3 tablespoons Dijon together in a small bowl. Combine green and pink peppercorns with salt in a small bowl.
- Place beef tenderloin on a rack set on top of a heavy, rimmed baking sheet. Rub butter mixture over the tenderloin, coating well. Pat peppercorn mixture into the butter. Cover and refrigerate for 3 to 24 hours.

- Preheat oven to 325 degrees F.
- Salt and pepper both sides of the butterflied pork tenderloin.
- Mix together the cheese, 1/2 cup dried cranberries, herbs, and garlic.
- Fill tenderloin and wrap.
- Secure with twine.
- Place in a roasting pan seam side down. Roast until the internal temperature reads 160 degrees F (45-60 minutes depending on tenderloin size).
- Remove from oven; place the tenderloin on a plate to rest. In the meantime make the glaze.
- GLAZE:.
- Pour all of the juice out of the roasting pan and into a saucepan. Place on stovetop on medium high heat and bring to a boil.
- Cook for about 2 minutes or until slightly reduced.
- Add all glaze ingredients except the butter. Bring to a boil.
- Remove from heat, add the butter, stir until dissolved and sauce is glossy.
- Remove the twine from the tenderloin. Place the tenderloin on a serving platter. Pour glaze over pork and serve.
