GRANDMA'S BEANS
Steps:
- Rough chop the garlic, carrot, serrano and onion into small pieces. Heat the oil in a medium pot over medium-high heat. Add the chopped vegetables and 1 teaspoon cumin to the pot and cook until the onion starts to brown.
- Strain the beans and add them to the pot. Pour in enough water to just cover the beans. Cover and bring them to a boil. Stir, then cover again and lower to a simmer. Simmer the beans until they start to burst, around 1 hour.
- Uncover the pot and add the orange, squeezing the juice into the pot and then dropping the halves in. Stir in the remaining teaspoon cumin and the salt. Continue to simmer to allow the beans to thicken, about 45 minutes more. Add more cumin and salt to taste.
- Serve as a side dish, over rice, or on their own on a taco.

GRANDMA BECKY'S CALICO BEANS
My mom made up this recipe when I was little and it always reminds me of growing up. We make it for every family function and it travels well too if made in the crock pot.

- Cook the bacon, in a large skillet, until crisp. Remove to a paper towel-lined plate. Discard bacon grease (I freeze mine to use in other recipes, like THIS one.)
- Using the same skillet, cook ground beef and onion, over medium heat until beef is done and there is no longer any pink. Drain off excess fat. Combine the cooked beef and bacon with beans, brown sugar, ketchup, ketchup, water, apple cider vinegar, dry mustard, salt and liquid smoke. Spoon into the prepared baking dish.

- Using the Sauté function on the pressure cooker, sauté bacon until the fat has been rendered. Add onions and cook until the onions are transluscent. Add ground beef and cook until the ground beef is browned throughout. Remove excess fat by lifting and tilting the pot with a pot holder and blotting excess grease with a paper towel.
- Add ketchup, sugar, mustard, and vinegar to the pot and stir, then add beans and combine until well mixed.
- Lock Instant Pot lid into place, press cancel, and pressure cook at high pressure for 15 minutes. After pressure cooking, allow a natural pressure release for 5 minutes, then use a quick release to release any remaining pressure.
