FETA BURGERS
A Greek-inspired twist on burgers. Great with cole slaw or a kale salad. I devised this recipe when I had a bunch of mint, parsley, and feta cheese on hand.

Steps:
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Mix ground beef, feta cheese, minced onion, red bell pepper, mint, parsley, garlic powder, onion powder, seasoned salt, and black pepper together in a large bowl until evenly mixed; shape into 6 patties.
- Cook the burgers until they are beginning to firm, and are hot and slightly pink in the center, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).

GREEK LAMB-FETA BURGERS WITH CUCUMBER SAUCE
These grilled lamb burgers are served with slices of ripe tomatoes and red onion in pita bread with a fresh tasting cucumber sauce seasoned with fresh mint and garlic.

Steps:
- Set 4 whole garlic cloves in a small skillet over medium-high heat; toast until spotty brown, about 5 minutes. Peel, mince and set aside.
- Break up lamb in a medium bowl. Sprinkle roasted garlic, feta, oregano, salt and pepper over meat; stir with a fork to combine. Divide into 4 portions. Toss meat back and forth between cupped hands to form a ball. Pat with fingertips to flatten to about 4 inches wide. Refrigerate.
- Mix cucumber, sour cream, mint, vinegar, 1 minced clove of garlic, and salt and pepper to taste in a small bowl. Refrigerate sauce until ready to serve.
- Build a hot fire on one side of grill. Replace rack. When coals are covered with white ash, add burgers. Cover and cook, turning only once, until done, about 4 to 5 minutes per side for medium to medium-well burgers.
- Grill pitas until spotty brown and warm, a minute or so per side. Split crosswise. Spread a couple of tablespoons of sauce over 4 pita halves. Top each with an onion slice, a tomato slice and a burger. Spread a portion of the remaining sauce over each burger. Top with remaining pita halves.

- Preheat grill or grill pan. Spray with cooking spray.
- In a nonstick frying pan sprayed with cooking spray, cook mushrooms and onions over medium-high heat for 4 minutes, or until softened and browned. Remove from heat. Stir in feta.
- In a bowl, stir together beef, chives, oregano, barbecue sauce, breadcrumbs, garlic, and egg. Stir in onion mixture. Form into 5 patties.
- Grill patties over medium-high heat for 3 to 5 minutes per side, or until cooked through. Patties can also be placed on a baking sheet sprayed with cooking spray and baked in centre of preheated 450°F/230°C oven for 10 to 15 minutes, or until cooked through, turning once.

- Prepare Recipe #492963 set aside. In a medium bowl, combine ground beef, cheese, parsley, garlic, and pepper. Shape mixture into two 1/2-inch-thick patties.
- In a large nonstick skillet, cook patties over medium-high heat for 4 minutes per side or until desired doneness. I like mine medium to medium rare. Your choice, of course. Line cut sides of bun halves with spinach. Top with burgers, tomato slices, and sauce. If desired, garnish with red onion.

- Mix the chicken, bread crumbs, egg, lemon juice, sun-dried tomatoes, basil, oregano, salt, and pepper together in a bowl; form the mixture into 5 patties. Divide the feta cheese between the 5 patties; place a portion of the feta cheese atop each patty and fold the chicken mixture around the cheese so that the cheese is in the center.

- To make the burgers: combine the beef, feta, oregano, half of the grated garlic, and black pepper in a large mixing bowl. Use your hands to gently combine the ingredients. Form into four patties that are the same diameter as your rolls — the patties should be slightly thicker at the edges with a slight indentation in the middle. - Prepare the burger patties by combining all ingredients in a large bowl. Mix by hand then divide into four equal sections, roll each into a ball then press into a 5-inch round patty.
