GREEN BEANS IN SEASONED TOMATO SAUCE

My husband and I used to visit a Lebanese restaurant in DC and loved their dish called 'Loubieh Bel Zeit.' When we moved away we craved this dish, so I tried to re-create it and came up with the following recipe. My husband LOVES it and wants me to make it all of the time now.

Steps:

  • Bring a pot of lightly-salted water to a boil; stir in the green beans and return to a boil. Reduce the heat to medium, and cook the green beans until just tender, about 8 minutes. Drain.
  • Heat 2 tablespoons of olive oil in a large skillet over medium heat; cook and stir the onion, 1 clove of garlic, and parsley in the hot oil until the onion is translucent, about 5 minutes. Stir in the tomatoes, wine vinegar, and cumin; bring the mixture to a boil, reduce heat to medium-low, and simmer for 30 minutes to thicken the sauce. Transfer the sauce to a bowl.
  • In a clean skillet, heat 1 tablespoon of olive oil over medium-low heat; cook and stir 1 clove of chopped garlic in the hot oil until fragrant beginning to brown, 2 to 3 minutes. Return the cooked green beans to the skillet; cook and stir to reheat the beans and coat them with oil. Pour the sauce over the beans and stir to coat. Serve hot.

SEASONED BEANS AND TOMATOES

These spiced green beans are back on the menu at our family gatherings again. For years, Grandma Wasnock had serve them on Christmas Day. We forgot about the recipe until my aunt served this dish at her daughter's wedding. That's when we found out the recipe came from a homemade cookbook my aunt received at her wedding shower. -John Wasnock, Medina, New York

  • Bring a large pot of water to boil. Add salt and cook green beans just until slightly crunchy. THe should not be cooked to done as they will still continue to cook in tomato sauce.
  • Cooking time for green beans until desired doneness depends on the variety of green beans, so just check on them after 5 minutes and adjust accordingly. As an alternative you can steam cook them. More often than not I’ll do just that.
