Green Beans with Tomatoes image

Steps:

  • Add the bacon and onion to a large skillet over medium heat. Cook, stirring, until the bacon is beginning to crisp and the onions are golden, 5 to 7 minutes.
  • Increase the heat to medium high and add the green beans and tomato paste. Stir and allow to cook for a minute or two. Add the tomatoes, crushing them with your hands as you add them. Stir to combine. Season with salt, pepper and cayenne. Bring the mixture to a simmer and simmer until thickened and the beans are soft but still green, 5 to 7 minutes.

2 pounds green beans, trimmed and halved

Steps:

  • Cook beans in water, until tender.
  • In a fry, melt butter and add garlic salt, sugar, basil, salt and pepper.
  • Swish cherry tomato halves around until barely soft and heated, but not squishy.
  • Add the drained beans and mix well.
  • (TO SAVE TIME, you can use drained canned green beans instead of fresh green beans and canned stewed tomatoes instead of fresh cherry tomatoes. Just add the canned vegetables to the butter/basil mixture and heat through. I do this frequently and it works o).

Sauteed Green Beans with Tomatoes and Basil served with Parmesan Crisps image

Steps:

  • Cook the green beans in a large pot of boiling water until just crisp-tender, about 3 minutes. Drain and rinse in cold water. Drain well; set aside.
  • Melt the butter and oil in a heavy, large skillet over medium heat. Add the shallots and garlic and saute until tender, about 2 minutes. Add the tomatoes and cook until heated through, about 3 minutes. Add the beans and cook until the juices evaporate and the beans are almost tender, stirring often, about 10 minutes. Stir in the wine and basil. Simmer 2 minutes longer. Season with salt and pepper, to taste. Transfer to a serving bowl, and serve.
  • Preheat oven to 400 degrees F.
  • Pour a heaping tablespoon of Parmesan onto a silicone or parchment lined baking sheet and lightly pat down. A silicone baking sheet is highly recommended. Repeat with the remaining cheese, spacing the spoonfuls about a 1/2-inch apart.
  • Bake for 3 to 5 minutes or until golden and crisp. Cool.
  • Yield: 8 to 10 crisps

  • Add the onion slices and cook until just soft (5-6 minutes).
  • Add the tomatoes and cook about 6- 8 minutes until soft.

Steps:

  • Trim ends of beans;cut into 1 1/2 inch lengths.
  • In a large saucepan cook beans in lightly salted water for about 3 minutes; drain well.
  • In a large non stick skillet, heat oil and add onion, garlic and basil.
  • Cook for 2 minutes or until softened.
  • Add remaining ingredients, except beans, and cook for 3 minutes then add beans.
  • Simmer for an additional 5-10 minutes until tender, stirring often.
  • If necessary add more water to keep mixture moist.
  • TO freeze: label and freeze in freezer bags or freezer containers for up to 4 months.
  • To serve: defrost in fridge overnight and then reheat.
  • Serve as a side dish or as a pasta sauce and sprinkle with parmesan cheese if desired.

  • Bring a pot of lightly-salted water to a boil; stir in the green beans and return to a boil. Reduce the heat to medium, and cook the green beans until just tender, about 8 minutes. Drain.
  • Heat 2 tablespoons of olive oil in a large skillet over medium heat; cook and stir the onion, 1 clove of garlic, and parsley in the hot oil until the onion is translucent, about 5 minutes.   • Bring a large pot of salted water to a boil over high heat. Add the green beans and cook for 5 to 7 minutes, until tender. Drain immediately.
  • While the beans are cooking, heat the oil in a medium sauté pan or skillet over medium-high heat until the oil shimmers. Add the garlic slices, distributing them evenly. Cook for 4 to 5 minutes, until the slices become almost translucent and start to brown on the edges; be careful not to let the garlic burn.

Steps:

  • Cook the beans in a pan of boiling salted water for 6-8 mins until just tender. Drain and quickly cool under cold running water. Set aside.
  • Heat the oil in a large pan on the barbecue, then add the garlic and cook quickly until lightly browned. Add the beans, stir well, cover and leave to reheat. Meanwhile, cook the tomatoes on the grill bars until softened and slightly browned. Tip the beans into a serving bowl and top with the tomatoes. Sprinkle with a little sea salt and serve.
