Steps:

  • Add the bacon to a large Dutch oven and cook over medium heat until light golden (not crisp). Drain off the excess fat.
  • Add the onions to the pot; cook until the bacon and onions are golden brown. Add the green beans and tomatoes, and season to taste with salt, black pepper and cayenne. Stir gently to combine.
  • Cover the pot, reduce the heat to low and simmer for 1 hour.

Steps:

  • Bring a large pot of salted water to a boil over medium heat and drop in the green beans; cook until slightly tender, but still crisp, 8 to 10 minutes. Immediately drain the green beans and plunge into ice water to stop the beans from cooking further. Drain the beans and place them in a shallow serving dish.
  • Heat the olive oil in a skillet over medium heat. Cook garlic in the oil for about 30 seconds. Remove the skillet from the heat. Stir in the olives, tomatoes, vinegar, oregano, salt, and pepper.   • Cook beans in water, until tender.
  • In a fry, melt butter and add garlic salt, sugar, basil, salt and pepper.
  • Swish cherry tomato halves around until barely soft and heated, but not squishy.
  • Add the drained beans and mix well.
  • (TO SAVE TIME, you can use drained canned green beans instead of fresh green beans and canned stewed tomatoes instead of fresh cherry tomatoes. Just add the canned vegetables to the butter/basil mixture and heat through. I do this frequently and it works o).

Steps:

Steps:

  • Trim ends of beans;cut into 1 1/2 inch lengths.
  • In a large saucepan cook beans in lightly salted water for about 3 minutes; drain well.
  • In a large non stick skillet, heat oil and add onion, garlic and basil.
  • Cook for 2 minutes or until softened.
  • Add remaining ingredients, except beans, and cook for 3 minutes then add beans.
  • Simmer for an additional 5-10 minutes until tender, stirring often.
  • If necessary add more water to keep mixture moist.
  • TO freeze: label and freeze in freezer bags or freezer containers for up to 4 months.
  • To serve: defrost in fridge overnight and then reheat.

Steps:

  • Preheat oven to 425°F. Chop enough fennel fronds to measure 1/2 cup. Trim fennel bulbs and cut in half vertically. Cut each bulb half ito 1/2-inch-wide wedges, leaving some ore attached to each wedge.
  • Heat oil in large ovenproof skillet over medium-high heat until very hot, about 3 minutes. Add fennel wedges in single layer; sprinkle with 1 teaspoon coarse salt. Cook until fennel begins to brown and soften, turning occasionally, 10 to 12 minutes. Add tomatoes, oregano, garlic, and crushed red pepper; sprinkle with 1 teaspoon coarse salt and 1 teaspoon pepper. Fold together gently.
  • Transfer skillet to oven. Bake fennel and tomatoes until soft, stirring occasionally, about 30 minutes. Mix in beans and 6 tablespoons chopped fennel fronds. Fresh Green Beans, Tomatoes, Bacon, Onion & Fennel image

Steps:

  • Bacon -- in a large saute pan, add the bacon on medium to medium high heat to let render and start crisping up. Cook about 3-4 minutes.
  • Vegetables -- Now right to the bacon and the drippings, add in the onion and fennel and cook another 5 minutes. Add in the beans and toss well so everything is combined. Now the tomatoes (NOTE: You can add a bit less tomatoes if you want) Personal taste. Stir well.
  • Season -- Now add some salt, pepper and the cider vinegar. At this point I also add about 1/4 cup chicken broth since we didn't add all the tomato liquid it gives a liquid for the beans to simmer inches.
  • Cook -- Simmer, on low heat. These are not meant to be crisp beans, soft and slow cooked. If the dish becomes a bit dry during cooking, I just add some more broth to keep the dish simmering. I simmer a good 20-30 minutes.
  • That is it -- just enjoy. Slow cooked bacon, onion and tomatoes in a chicken broth. They are so good.
  • NOTE: If you want -- cut down the recipe in half for a family of 4. No big deal. They are TRUE comfort food.
