- For salsa, in a small bowl, combine peaches, cucumber, 2 tablespoons preserves, onion, mint and 1/4 teaspoon salt., Sprinkle chicken with pepper and remaining salt. On a lightly oiled grill rack, grill chicken, covered, over medium heat 5 minutes. Turn; grill 7-9 minutes longer or until a thermometer reads 165°, brushing tops occasionally with remaining preserves. Serve with salsa.

- Heat gas or charcoal grill. In small bowl, mix cucumber, 2 tablespoons of the preserves, the mint, salt, onion and peach; set aside.
- Carefully spray grill rack with cooking spray. Place chicken on grill. Cover grill; cook over medium heat 10 to 15 minutes, turning and brushing 2 or 3 times with remaining peach preserves, until juice of chicken is clear when center of thickest part is cut (170°F). Discard any remaining preserves. Serve chicken with salsa.

GRILLED CHICKEN BREASTS WITH SPICY PEACH GLAZE
Steps:
- Combine the peach preserves, olive oil, soy sauce, mustard, garlic and jalapeno in a medium bowl and season with salt and pepper. Reserve 1/2 cup.
- Preheat the grill. Brush the chicken with olive oil and season with salt and pepper. Place the chicken skin-side down and cook until golden brown, 6 to 7 minutes. Turn over and continue cooking for 5 to 6 minutes. Brush both sides with the peach glaze and continue cooking until done, an additional 4 to 5 minutes.
- Place the peach halves cut side down on the grill and grill for 2 minutes. Turn over, brush with the reserved 1/2 cup of peach glaze and grill until the peaches are soft, 3 to 4 more minutes.

- Place a chicken breast between a layer of parchment paper or plastic wrap and use a mallet, rolling pin or the flat side of a heavy knife to pound to a thickness of about 1/2 inch. Repeat with remaining breasts.
- Season chicken with salt, pepper and paprika. Place in a bowl and toss with lime zest, garlic and oil. Cover and marinate at room temperature for 30 minutes or overnight in the refrigerator.
- Meanwhile, prepare the sauce: In a blender, combine cilantro, parsley, oil, jalapeños, garlic, salt and lime juice. Blend until smooth, adding 1 or 2 tablespoons water if necessary to blend. Taste and add more salt and/or lime juice if needed.
- Heat the grill to medium-high or heat up the broiler or a grill pan. Grill or broil until chicken is lightly browned at the edges and just cooked through, 2 to 4 minutes per side.
- In a medium bowl, toss cucumbers with a pinch of salt. Let sit for 5 minutes. Right before serving, toss cucumbers with sauce and serve alongside chicken, drizzling chicken with any leftover sauce from the bottom of the cucumber bowl, and a little olive oil.

- Combine Spicy Peach Glaze ingredients in a medium bowl and season with salt and pepper to taste. I like to use an emulsion blender to make the glaze smooth. Reserve 1/2 cup.
- Preheat grill. Brush the chicken with olive oil and season with salt and pepper to taste. Place skin-side down and cook for 6 to 7 minutes, until golden brown. Turn over and continue cooking for 5 to 6 minutes. Brush both sides with the peach glaze and continue cooking an additional 4 to 5 minutes.

I came across the salsa on the Foodnetwork and modified it to use with chicken instead of scallops. The salsa gives the chicken a fresh flavor while not completely overwhelming the grilled flavor of the chicken.

- In a marinating container (large tupperware) soak the chicken in a saltwater brine for 2 hours. Be sure to cover the chicken completely.
- In a bowl, combine the cucumber, pineapple, cilantro, red onion, lime juice, lime zest, jalapeno, salt and crushed red pepper. Taste and adjust the seasoning to your flavor. Be careful as the crushed red peppers sit it will get hotter.
- In another bowl strain the juice from the salsa (don't worry as the salsa sits it will juice up again) and put the juice aside for now. Cover the salsa and refrigerate until ready to serve.
- Drain the brine from the marinating container and add the juice from the salsa to the chicken in the marinating container. Let set for at least 2 to 3 hours.
- Preheat your grill to 350 degrees.
- Remove the chicken from the salsa juices and salt and pepper both sides of the chicken before grilling.
- Grill the chicken for 15 to 20 minutes on each side. Turning the chicken ¼ turn half way through on each side to give yourself those nice diamond grill marks.
- Remove the chicken from the grill and let chicken set for 5 to 10 minutes.
- Serve breasts whole or sliced with the salsa garnishing the top. Put the remaining salsa in a bowl and put it on the table as extra garnishing.
