MORTADELLA AND FIG FOCACCIANINI

"Mortadella is the underdog of deli meats-it's so flavorful, especially when you pair it with a sweet fig spread," says Jeff.

Steps:

  • Make the fig spread: Bring the figs, 1 cup water, the balsamic vinegar and sugar to a simmer in a small saucepan over medium-low heat. Simmer until the figs rehydrate and the liquid reduces and thickens, about 15 minutes. Let cool. Once cool, place in a food processor and puree until smooth, 20 to 30 seconds.
  • For the sandwich build: Preheat a griddle over medium-low heat or heat a panini press. Split 1 focaccia square in half. Place a thin layer of the fig spread on the inside of both halves. Place a couple slices of cheese on the bottom, then place one-quarter of the mortadella on top. Close the sandwich and lightly brush the outside of the sandwich with olive oil. Cook until golden and warm, about 4 minutes per side on a griddle or about 8 minutes total in a panini press. Repeat with the remaining ingredients.
  • Cut each sandwich into quarters to make 16 pieces.

2 cups dried figs, stems removed, halved
3/4 cup balsamic vinegar
1 teaspoon sugar
4 large squares focaccia (6 to 8 ounces each)
8 ounces sharp Italian cheese (such as Fontinella or asiago), sliced
1 pound mortadella, thinly sliced
Extra-virgin olive oil, for brushing

Close the sandwich with the top half of the baguette and cut into 4 or 6 pieces.

Steps:

  • Preheat a grill pan or outdoor grill over medium-high heat.
  • Lightly make diagonal cuts both ways on the salami and mortadella, making sure not to cut completely through each slice. Grill the salami until it begins to get crisp and render some fat, 2 to 3 minutes. Then flip and top with a slice or 2 of muenster to fit. Grill until the muenster melts, 2 to 3 minutes. Remove from the pan and slice into 4 pieces to fit 4 slider buns. Repeat the process with the mortadella.
  • Smear the buns with the mustard. Top 4 of the buns with 1 slice grilled salami and a few chips. Repeat with the mortadella and remaining buns. Serve to the kids but watch the adults try and eat them all.

One 3-ounce 1/4-inch-thick slice genoa salami
One 3-ounce 1/4-inch-thick slice mortadella
2 to 4 thick slices muenster
8 mini slider buns
1/2 cup yellow mustard
One 8 1/2-ounce bag kettle potato chips

Big Ol' Beer Brat Sub image

Steps:

  • Preheat a grill to medium high. Combine the beer, apples, onion, 1/2 teaspoon salt and 1/4 teaspoon pepper in a saucepan and bring to a simmer over medium heat. Add the brats and simmer, stirring occasionally, until cooked through, 10 to 15 minutes. Strain the brats, reserving 1 cup of the poaching liquid. Brown the poached brats on the grill, turning, 5 to 6 minutes.
  • Make the beer-cheese sauce: Combine the Velveeta, 3/4 cup of the reserved poaching liquid, the pickled jalapenos and mustard in a small saucepan over low heat. Cook, stirring constantly, until melted and combined. Add more poaching liquid if you want to thin the sauce. Keep warm.
  • Sandwich build: Split the baguette in half lengthwise and lightly toast on the grill. Halve the brats lengthwise and layer them on the baguette bottom. Top with the sauerkraut, a drizzle of the beer-cheese sauce and the baguette top. Cut into individual sandwiches and serve with the remaining beer-cheese sauce.

2 12-ounce cans lager or pilsner beer
3 Granny Smith apples, peeled, cored and sliced
1 onion, sliced
Kosher salt and freshly ground pepper
4 fresh bratwurst sausages
6 ounces Velveeta, cubed
1 tablespoon chopped pickled jalapenos
2 teaspoons dijon mustard
1 24-inch baguette
2 cups sauerkraut, drained
