- Stir first 4 ingredients in small bowl until sugar dissolves.
- Thread pineapple pieces onto 6 skewers, dividing equally.
- Prepare bbq and oil the rack (medium heat - make sure bbq is thoroughly cleaned from previous use).
- Grill pineapple until brown, basting with tequila mixture and turning occasionally, about 10 minutes total.
- Remove pineapple from skewers; serve hot or warm.

GRILLED PINEAPPLE WITH TEQUILA-BROWN SUGAR GLAZE
I have used dark rum instead of the Tequila with equally good results. I also microwave the pineapple for 2 minutes, then marinade it in the glaze. This is great with vanilla ice cream over the top! Prep time includes marinating. Adapted from Bon Appetit magazine, July 1997.

GRILLED TEQUILA LIME PINEAPPLE CHUNKS
Steps:
- Soak 1 dozen small bamboo skewers in cold water. Cut off top and bottom poles of pineapple. Stand it upright on the cutting board and cut off rind, using a sharp knife and smooth downward motions. Remove any remaining eyes with the tip of a paring knife. Cut in quarters lengthwise and cut out and discard woody core. Cut flesh into 1 or 1 1/2-inch chunks.
- In a medium bowl, combine tequila, lime juice and sugar. Add pineapple chunks and toss to coat. Let marinate 30 minutes at room temperature. Preheat grill to medium high. Drain pineapple chunks and divide among skewers. Brush grill well, wipe with oiled paper towel and place skewers on grill at an angle. Cook a total of 68 minutes, turning frequently, until outside is lightly caramelized. Remove from grill, let cool slightly and serve 2 skewers in each bowl of Watermelon Granita.
GRILLED POUND CAKE WITH TEQUILA-SOAKED PINEAPPLE
Steps:
- Preheat a gas grill to medium-high heat, or prepare a medium-hot fire in a charcoal grill.
- In a small saucepan, whisk together the brown sugar, tequila and 1/4 cup water. Set the pan on the grill (or a side burner on medium-high heat) and cook, stirring, until the sugar is dissolved and the mixture comes to a boil. Remove from the heat and let stand until cool.
- Put the pineapple slices in a baking dish and pour the cooled syrup over them, tossing gently to coat. Let stand at least 5 minutes and up to 30 minutes.
- Whip the heavy cream in a bowl to the soft-peak stage. Refrigerate until ready to use.
- Spread the butter on both sides of each pound cake slice and grill, turning once, until light golden, about 1 minute per side. Drain the pineapple, reserving the syrup, and grill, turning once, until grill marks appear, about 1 minute per side.
- To assemble, place each pound cake slice on a dessert plate and top with 2 pineapple rings. Drizzle a little of the tequila syrup over each plate, top with a dollop of whipped cream and garnish with a mint sprig and some chopped mint.
PINEAPPLE KEBABS
This is an Indian inspired kebab recipe that's quick, easy, and oh so tasty! Best used with chicken, although beef or shrimp may work well also. If grilling meat kebabs only, skewers may be prepared ahead and soaked in marinade to be brought along to potluck BBQ dinners, picnics, etc.

- If using wooden kebab skewers, soak in water to prevent burning while grilling.
- Cube chicken.
- Mix all Marinade ingredients.
- Add chicken to marinade. Refridgerate for at least 2 hours, but the longer the better.
- Skewer the meat. If using veggies as well, skewer a mix of veggies and meat on each skewer.
- Grill 10-15 minutes while basting kebabs with remaining marinade.

- Thread pineapple onto skewers (if using wooden skewers, soak in water for at least 30 minutes before threading pineapple on). Mix together brown sugar, butter, cinnamon, vanilla, and honey. Place skewered pineapple on a large plate or pan. Using a spoon or a brush, thoroughly glaze each piece of pineapple with the brown sugar mixture.
- Place skewers on a grill, preheated to a medium-high temperature. Cook for 5-10 minutes on each side, or just until the sugar-glaze starts to caramelize.
- Serve warm.
