GRILLED STUFFED PIZZA BURGERS
Two all-time favorite foods together in one terrific sandwich!

Steps:
- Heat gas or charcoal grill. In large bowl, mix ground beef and salt. Shape mixture into 12 thin patties, each about 4 inches in diameter.
- In small bowl, mix pepperoni, olives and 1/3 cup of the pizza sauce. Spoon rounded tablespoon pepperoni mixture onto center of 6 patties; spread slightly. Top with remaining patties; press edges together firmly to seal.
- Place patties on grill; cover grill. Cook with medium heat 8 to 12 minutes, turning once, until thermometer inserted in center of patties reads 160°F (avoid inserting in filling). During last 1 to 2 minutes of cooking time, top each patty with cheese and rounded teaspoon of remaining pizza sauce, and place buns, cut side down, on grill; cook until cheese is melted and buns are lightly toasted.
- To serve, place lettuce and patties in bottom halves of buns. Cover with top halves of buns.

STUFFED PIZZA BURGERS
This is my version of a pizza burger. Adding the pizza sauce to the meat keeps the burger moist and gives it a real pizza taste. My sauce is simple, no precooking needed (I like the fresh tomato taste). Hope you try it!

Steps:
- Make the pizza sauce:.
- Combine all ingredients in a large bowl. That's it!
- Make the Burgers:.
- Heat a medium size skillet over low/med. heat. Add olive oil and onion, cook stirring occasionally for 3 minutes. Add garlic, cook stirring 2 minutes. Remove from heat let cool.
- In a large bowl add ground beef, Italian sausage, cooled onion and garlic mix, 1/2 cup pizza sauce, Italian seasoning and adobo. Mix to combine (don't over mix).
- Form 12 even thin patties about 1/2 inch thick place on baking sheet in a single layer. Add a spoonful of the shredded mozzarella onto the center of 6 patties. Top each with another patty and seal the edges.
- Heat a large skillet over medium/high heat (or grill). Cook burgers, flipping once (do not press down on them while cooking) about 5 minutes per side for medium or until desired doneness.
- Toast the Rolls:.
- Split each roll in half. Spread desired amount of pizza sauce on each half of the roll then place on baking sheet split side up. Toast rolls in preheated 400 degree oven for 5 to 7 minutes or until lightly browned.

- In a large bowl, combine the first eight ingredients. Crumble turkey over mixture and mix well. Shape into 16 patties. Layer 1 tablespoon pizza sauce, pepperoni and cheese onto the center of each of eight patties. Top with remaining patties and press edges firmly to seal., On a greased grill rack, grill burgers, covered, over medium heat or broil 4 in. from the heat for 4-6 minutes on each side or until a thermometer reads 165° and juices run clear. Serve on buns with remaining pizza sauce.

GRILLED STUFFED CRUST PIZZA
The only downside of making pizza in the summer is having to crank up the oven. Unless you make it on the grill! And it doesn't have to be hard. Cooking the dough on a rimmed baking sheet keeps it from sticking. Slipping the pizza onto the grill grates at the end makes for an extra-crispy crust. While we were at it, we stuffed the crust with mozzarella - because we could.

- Pour the olive oil into an 11-by-17-inch rimmed baking sheet. Transfer the dough to the pan, turning to coat it with the oil. Cover loosely with plastic wrap and let rise in a warm place until the dough fills about two-thirds of the baking sheet, 1 1/2 to 2 hours.
- Slide your hands under the dough, lift and gently stretch it to fit the pan. (It's okay if it doesn't stretch to the corners.) For the final rise, loosely cover with plastic wrap and set aside until slightly puffy, 30 to 45 minutes.
- While the dough rises, preheat a grill for high heat - it needs to be 500 to 600 degrees F when covered.
- Stir the tomatoes, garlic, 1/2 teaspoon salt and a few grinds of pepper together in a medium bowl until combined.
- When the dough has risen, place the cheese sticks all the way around the edges, leaving a half-inch border. Fold the dough up and over the cheese sticks until they are totally enclosed, then gently pinch the dough to seal, creating a stuffed crust. Stretch and pull the dough gently to fill the edges of the baking sheet. Sprinkle 3 tablespoons of the Parmesan evenly over the dough, all the way to the edge. Then top with the sliced mozzarella, leaving the border exposed. Spoon the tomato mixture over the mozzarella, inside the border. Top with the pepperoni and remaining 3 tablespoons Parmesan.
- Put the pizza sheet directly on the grill grates, cover the grill and cook until the crust is lightly browned at the edges, about 15 minutes. Using a large metal spatula, slide the pizza directly onto the grill grates, cover and continue to cook until the crust is dark golden brown and the mozzarella is bubbly and lightly browned in spots, about 10 minutes more. Transfer to a cutting board and let sit for 10 minutes. Top with some basil leaves and cut into squares.
GRILLED CHEESE-STUFFED BURGERS
These individually wrapped burgers are great to take along to picnics, cookouts or camping trips. The cheese is already stuffed inside, so all you need are your buns and condiments.

- 1. Preheat a grill over high heat. Divide the meat into four 6-ounce balls. Press 4 small cubes of cheese into the center of each ball and flatten into a 1/2-inch-thick patty about 4 inches in diameter, making sure the cheese stays wrapped in the meat. Sprinkle both sides of the patties evenly with 1 teaspoon salt and 1/2 teaspoon pepper. Wrap each burger in a piece of nonstick aluminum foil, twisting any excess foil at each end so the burger is wrapped in a single layer of foil only. Mix the ketchup and Worcestershire together in a small bowl.
- 2. Grill the burgers for 5 minutes per side. Remove from the grill and carefully open up the foil packets, allowing the steam to escape. Place the opened foil packets back on the grill, add a spoonful of sauce to the top of each patty and continue to cook until the patty is cooked to at least medium to allow the cheese inside to fully melt, another 4 to 6 minutes.
- 3. On the bottom half of each bun, spread a bit of sauce and top with a lettuce leaf, onion slice and tomato slice. Top with a patty, another spoon of the remaining sauce and the top of the bun. Serve with chips or fries.
FETA-STUFFED HAMBURGERS
This is a great hamburger for the grill. Feta cheese gives it a rich and creamy taste.

- Preheat an outdoor grill for medium heat, and lightly oil the grate.
- Knead together the ground beef, Worcestershire sauce, parsley, salt, and pepper in a bowl. Form the mixture into 8 equal-sized balls; flatten to make thin patties. Place about 1/4 cup of feta cheese onto each of four of the patties. Top each of the patties with cheese with one of the patties without; press the edges together to seal the cheese into the center.
- Cook on the preheated grill until the burgers are cooked to your desired degree of doneness, 7 to 8 minutes per side for well done. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

- Thinly slice cheese.
- Make patties out of the hamburger.
- Season with salts and pepper to taste.
- Fry or grill burgers until mostly done.
- Empty the sauce into a large fry pan or sauce pan.
- Add the mostly cooked burgers to the sauce and simmer for 10 minutes or until done.
- Place pepperoni and a couple slices of mozzarella on top of the burgers and cover for 2 minutes or until the cheese is melted.

- In large bowl, mix beef, Italian seasoning, salt and pepper. Shape mixture into 8 patties, 4 1/2 inches in diameter and 1/4 inch thick. Press 1/4 cup of the cheese into a ball with hands; press flat into 3 1/2-inch-diameter patty. Repeat with remaining cheese. Place cheese patties on top of 4 beef patties; top with remaining beef patties. Pinch edges together to seal.
