Grilled Sweet Potato Fries with Honey-Mustard-Mint Dipping Sauce image

Steps:

  • Whisk together the Dijon mustard, whole-grain mustard, honey and mint in a bowl, and season with salt and pepper. Let sit at room temperature while you prepare the fries.
  • Put the sweet potatoes in a large pot, cover with water and add 1 tablespoon salt. Bring to a boil and cook until a paring knife inserted into the center of the potatoes meets with some resistance, 10 to 15 minutes depending on size. When cool enough to handle, cut each sweet potato into 6 wedges.
  • Heat a gas or charcoal grill to medium-high. Brush the potato wedges with oil and season with salt and pepper. Grill until slightly charred and cooked through, 2 to 3 minutes per side. Remove to a platter and serve with the dipping sauce.

  • 1. Preheat the grill to medium-high.2. Scrub the potato skins and blot dry with paper towels.3. When ready to cook, oil the grill grate. Place the sweet potatoes on the hot grate and grill, turning often with tongs, until very well browned and squeezably soft, 30 to 50 minutes.4. Meanwhile, prepare the sauce. Combine the soy sauce, sake, sugar, scallions, garlic, and sesame seeds in a small bowl and whisk until blended and the sugar is dissolved. Spoon the sauce into 4 small bowls or ramekins.5. Serve the sweet potatoes with bowls of sauce. To eat out of hand, simply dip the potatoes in the sauce and eat away. To serve as a side dish, cut open the potatoes and spoon the sauce over them.Serves 4

Sweet Potato Wedges with Sesame-Soy Dipping Sauce image

Steps:

  • Make the dipping sauce: Stir together soy sauce, vinegar, and sesame oil in a small bowl. Set aside.
  • Make the sweet potato wedges: Preheat oven to 500 degrees. Toss sweet potatoes with oil and salt in a large bowl. Arrange in a single layer on a baking sheet. Roast, turning once, until tender and slightly browned, about 20 minutes. Transfer to serving dish; immediately sprinkle with sesame seeds. Serve with dipping sauce.

This recipe originally came from Quick Cooking. The time it takes to cook can vary a lot depending upon the heat of the fire, the size of the potato, or how you package it up. When we are in a hurry, I have even cut the potato into chunks and divided it up between four pieces of foil. It is super easy, healthy, and goes well with pork chops or Recipe#267975. When we go camping this is often on our menu. Sometimes I have put the honey on before grilling, and I think that is okay, too.

  • Cut two pieces of heavy duty foil, about 18 X 12 inches; place a potato half onto each piece of foil.
  • Spread cut side with butter.
  • Sprinkle with salt and pepper.
  • Fold foil over potatoes and seal tightly.
  • Grill covered, over medium hot heat for 50 minutes, or until tender, turning once.
  • To serve, fluff potatoes with a fork and drizzle with honey.

  • Preheat the oven to 400ºF. Scrub the sweet potatoes, pierce with a fork a few times and set them on your oven rack. Bake them for 40-45 minutes or until they are cooked enough so that if you push your thumb in firmly, you can make an impression. Baking time will differ depending on the size of the potato but you can always adjust later with more or less time on the grill, to get the desired result.
  • Let the potatoes cool until you can handle them. (At this point you can store the partially cooked sweet potatoes wrapped in foil or plastic in the fridge for up to 24 hours) Slice each potato in half lengthwise, then cut each half into wedges, lengthwise. (6-8 wedges per potato)
  • Preheat the grill to medium-high. Place the potato wedges, skin-side down, on a large tray or platter. Brush the cut sides generously with olive oil. Arrange them on the hot grill, cut side down, and cook, with the grill cover down, for four to six minutes per side, flipping them over to the other cut side half way through. Leave them to cook until they get nice grill marks and are cooked to your desired consistency. The longer you cook them, the more tender and sweet they will be, with more crisp browned parts.
