Steps:
- Preheat the oven to 400˚F (200˚C).
- In a large bowl, add half of the black beans and mash well (a few chunks are fine).
- Add the mushrooms, broccoli, remaining black beans, red onion, garlic, dill, paprika, red pepper flakes, rosemary, salt, pepper, and liquid smoke.
- Mix thoroughly, then mash until the mixture is well-combined.
- Add the bread crumbs and eggs and mix until thoroughly combined.
- Grease a 13x18-inch (33x45 cm) baking sheet with olive oil.
- Transfer the veggie burger mixture to the pan. Using a spatula and your hands, form the mixture into a rectangle that is roughly the size of the slider buns.
- Bake for 40 minutes, or until firm and browned, flipping halfway through.
- Make the avocado dressing: add the avocado, jalapeño, Greek yogurt, garlic, lime juice, olive oil, salt, pepper, and water to a blender, and blend until smooth.
- Keeping the slider buns attached, cut in half lengthwise with a serrated knife. Remove the top half and set aside.
- When veggie burger is done baking, remove from oven and place on top of bottom half of slider buns.
- Spread the avocado dressing over the veggie burger, then top with the tomatoes and lettuce.
- Cover with the top slider buns, and cut into 12 sliders.
- Enjoy!

Steps:
- Place the mushrooms in a medium bowl or baking dish. Mix the olive oil, soy sauce, vinegar, Worcestershire sauce and 1 tablespoon of the Dijon in a small bowl or measuring cup. Pour the marinade over the mushrooms, flipping to make sure each is coated. Let marinate for 30 minutes at room temperature.
- While the mushrooms are marinating, prepare a grill or grill pan for medium-high heat. Lightly oil the grill grates with olive oil, then place the shallots on the grill and grill on both sides until they are softened, charred around the edges and have grill marks, 2 to 3 minutes per side. Remove the shallots to a plate or work surface.
- Next add the split rolls to the grill, cut-side down. Grill, in batches if necessary, until they have grill marks, 45 to 60 seconds, then remove to a platter or work surface.
- Place the mushrooms stem-side down on the grill. Cook until the mushrooms start to develop grill marks and soften and brown all over the bottom, 4 to 6 minutes. Flip the mushrooms and cook until browned and softened on the bottom, 4 to 6 minutes. Flip again (to stem side down), turn off the heat, add the cheese, if using and cover (use a large metal bowl or aluminum foil on a grill pan) until the cheese is melted, 1 to 2 minutes.
- While the mushrooms cook and cheese melts, mix the remaining 2 tablespoons Dijon and the mayonnaise together. Dividing evenly, spread the mixture on both toasted halves of the rolls. Add the grilled shallots to the top half of the rolls, and the tomatoes and lettuce to the bottom halves. Transfer your mushrooms to the rolls, dividing evenly. Close the sandwiches, using a toothpick to secure if desired.
SLIDERS
Steps:
- Build a charcoal fire or heat a gas grill.
- Place the ground beef in a large bowl and add the mustard, olive oil, thyme, garlic, salt, and pepper. Mix gently with a fork to combine, taking care not to compress the ingredients. Shape the meat into 12 (2-inch) patties of equal size and thickness.
- When the grill is medium-hot, brush the grill grate with oil to keep the sliders from sticking. Place the sliders on the grill and cook for 4 minutes. Turn the sliders over with a spatula and cook for another 4 to 6 minutes, until medium-rare, or cook longer if you prefer the sliders more well done. For the last 2 minutes of cooking time, place 1/2-ounce Gruyere on the top of each burger and close the grill lid. Remove the sliders to a platter and cover with foil.
- Slice the buns in half crosswise and toast the halves cut side down on the grill.
- Divide the baby arugula among the 12 bottom buns, top each with a slider, and finish with a slice of tomato and red onion. Cover with the top of the bun and serve hot with ketchup.
GRILLED VEGGIE SLIDERS
Steps:
- 1. Place the tomatoes, zucchini, pepper and onion into a large bowl. Add half the dressing and toss to coat. 2. Lightly oil a grilling platter or vegetable basket. Place the vegetables onto the platter. 3. Grill the vegetables for 15 minutes or until tender, turning them over once halfway through the grilling time. Remove the vegetables to a large bowl. Add the remaining dressing and toss to coat. Stir in the cheese. 4. Split the rolls and grill until toasted. Divide the vegetable mixture among the rolls. Recipe Note: We recommend a grilling platter or vegetable basket for this recipe because its smaller openings keep the vegetables from falling through. Alternate Preparation: You can also use a grill pan for this recipe. Lightly oil a grill pan and heat over medium heat. Add the vegetables in batches and grill until tender, turning them over once halfway through the grilling time.
