CILANTRO LIME GRILLED TOFU

Flavorful tofu, perfect for summer grilling. This is my absolute favorite way to eat tofu. The marinade is delicious and extremely flavorful. Serve with grilled vegetables or in a tortilla.

Cilantro Lime Grilled Tofu image

Steps:

  • Place the block of tofu onto a plate and place another plate on top. Set a 3 to 5 pound weight on top (a container filled with water works well). Press the tofu for 20 to 30 minutes, then drain off and discard the accumulated liquid. Slice the tofu lengthwise into 4 thick slabs or cut into cubes and thread on skewers. Place tofu pieces or skewers on a plate.
  • Whisk together the lime juice, olive oil, cilantro, garlic, chili powder, cayenne pepper, salt, and black pepper in a bowl. Brush the tofu with the marinade. Cover the plate with plastic wrap, and marinate tofu in the refrigerator for 2 hours or overnight.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate. Grill the tofu until almost blackened in spots, brushing occasionally with the marinade, about 10 to 15 minutes.

Steps:

  • Preheat a grill for cooking over medium-high heat. Brush grill grates with some oil.
  • Brush the halloumi with some of the olive oil.
  • Combine the zaatar, caraway seeds, oregano and pepper in a small bowl. Mix until combined, then sprinkle over all sides of the halloumi.
  • Grill on each side until charred, 1 to 2 minutes. Transfer to a serving platter, drizzle with olive oil and garnish with chopped parsley and lemon wedges.

Steps:

  • Slice tofu in half lengthwise, then cut each half into two long strips, approximately 1/2-inch thick.
  • Mix remaining ingredients in a small bowl.
  • Lay tofu strips in a shallow pan and pour marinade over, turning tofu to coat. Marinade for at least 1 hour, or as long as overnight.
  • Heat oil in grill or nonstick pan over high heat. Sear tofu on each side until browned and heated through, approximately 2-3 minutes per side.

Grilled Seafood with Linguine image

Steps:

  • Preheat a grill to medium heat.
  • Bring a large pot of water to a boil and generously season with salt. Cook the pasta 1 to 2 minutes less than the package directions. Reserve 1/4 cup of the pasta water, then drain and set aside.
  • Meanwhile, use a paper towel to pat dry the shrimp and scallops. Season with salt and pepper on both sides and brush with the olive oil. Grill just until grill marks appear, about 1 minute per side (they will be undercooked); reserve. Grill the lemon halves until softened and grill marked, 5 to 8 minutes; reserve.
  • Place a large saucepan on the grill (this can also be done inside on the stove). Heat the marinara sauce until hot, then add the capers and lemon zest and juice. Add the clams and cover. Cook until the clams begin to open, about 5 minutes. Add the pasta and reserved pasta water to the sauce and toss to coat. Add the parsley and reserved shrimp and scallops and continue to toss until the pasta is evenly coated, the shrimp and scallops are cooked through and all the clams are open, about 1 minute. Serve with the grilled lemon halves.

Steps:

  • Cut tofu into slices 2"long by 1/2" wide.
  • Combine remaining ingredients in a small pot and bring to to a boil.
  • Simmer for 5 min, remove from heat and pour over tofu. Marinade in glass bowl for several hours or preferably overnight.
  • Pour off marinade and bake tofu slices for 15 minutes in 350 degree oven, basting with remaining marinade each five minutes.
  • Serve over rice, or mix with noodles and remaining marinade.

Got this low fat, tasty main vegetarian recipe from a grocery store in Los Angeles. Presentation is beautiful, and it tastes as good as it looks. Try to marinate the tofu for as long as you can. Prep time includes minimal marinade time.

Grilled Tofu with Grapefruit and Avocado Salsa image

Steps:

  • Drain the tofu packages and remove the tofu.
  • Slice the blocks horizontally so they are half their original height.
  • Cut the rectangles diagonally into 2 triangles each.
  • Set them on paper towels to drain while you prepare the marinade.
  • Halve one grapefruit and one orange and squeeze 1/2 cup of juice from each.
  • Stir in 1 Tbs of olive oil.
  • Dob the tops of the tofu with more paper towels.
  • Arrange the tofu in a single layer in a large dish.
  • Season with the cayenne pepper and 1/8 tsp salt.
  • Mix the marinade well and pour it over the tofu.
  • Cover with plastic wrap and allow to marinate over night or for at least several hours, turning once.
  • Make the salsa now if you have time.
  • Peel the remaining grapefruit and oranges.
  • Use a paring knife to remove the outer membrane.
  • Work over a bowl to catch the juices, and cut between the membranes to release the segments.
  • Repeat with the oranges.
  • Halve each fruit segment.
  • Add the diced bell pepper, red onion, and cilantro.
  • Season with remaining 1/8 tsp of salt.
  • Cover and refrigerate.
  • When you're ready to cook the tofu, heat a grill pan over high heat and add 1 tsp olive oil (or use a non-stick frying pan).
  • Add the tofu and marinade and cook about 3 minutes on each side, turning gently with tongs or a spatula.
  • Remove the tofu and add the spinach to the pan.
  • Stir it around briefly so it just wilts, about 1-2 minutes.
  • Arrange spinach in the center of 4 plates.
  • Lay 2 triangles of tofu on top.
  • Spoon grapefruit salsa around the tofu and garnish with fresh avocado chunks.

Steps:

  • Preheat an outdoor grill for medium heat.
  • Fold an 18-inch wide piece of aluminum foil so it is square.
  • Place onions, mushrooms, and garlic in the middle of the foil. Arrange butter pieces on top of vegetables and drizzle with steak seasoning. Bring 4 corners of the foil together in the center, and crimp any open spaces to seal packet.
  • Place the foil packet on the preheated grill and cook until vegetables are tender, about 45 minutes. Remove from grill, open packet carefully, and serve.
