- For the pastry cream: Soak the gelatin sheets in 2 cups of water until soft.
- Combine the egg yolks, sugar and 1/2 cup of the heavy cream in a medium saucepan. Bring to a rolling boil, constantly stirring so the yolks do not cook. Remove from the heat, add the gelatin and stir until dissolved. Let cool to room temperature.
- Add the remaining 1/2 cup heavy cream to the bowl of an electric mixer fitted with a whisk attachment and whip to soft peaks. Gently mix into the cooled yolk mixture and chill overnight.
- For the pate a choux: Preheat the oven to 425 degrees F and line 2 large baking sheets with parchment.
- Bring the butter, sugar, salt and 1 cup of water to a boil in a medium saucepan. Remove from the heat. Quickly stir in the flour with a wooden spoon. Return to medium-high heat, stirring constantly, until the mixture pulls away from the sides and a film forms on the bottom of the pan, about 3 minutes.
- Transfer the mixture to the bowl of an electric mixer fitted with a paddle attachment. Mix on low speed until slightly cooled, about 1 minute. Increase the speed to medium and add the 4 whole eggs, 1 at a time, until a soft peak forms when the batter is touched with your finger. If a peak does not form after the 4 eggs, lightly beat the remaining egg white and mix it into the batter a little at a time until it does.
- Transfer the pate a choux to a pastry bag fitted with a 5/8-inch plain tip. Pipe the dough into 2-inch rounds about 1 inch apart onto the prepared baking sheets. Gently smooth the pointed peaks with a moistened finger, rounding the tops to ensure even rising. Bake until puffed and golden brown, about 25 minutes. The profiteroles should feel light and airy. Transfer them to wire racks to cool completely.
- For the apple jam: Bring the sugar and 3 tablespoons of water to a boil in a large pot over medium-high heat, stirring to dissolve the sugar. Continue to cook, swirling the pan occasionally and brushing down the sides of the pan with a wet pastry brush, until the mixture turns a deep amber color, about 4 minutes. Add the apples, vanilla bean and scraped seeds, if using, and stir to coat. Some of the caramel will seize, but that¿s okay because it¿s just going to melt down again. Reduce the heat to medium and stir occasionally to help the apples cook evenly and dissolve any pieces of caramel.
- Continue to cook until the apples are translucent and softened (some apples will hold their shape, but should still be softened), and most of the liquid has evaporated, 20 to 25 minutes. Add the lemon juice and stir to combine. If desired, break up any remaining larger pieces of apple with a wooden spoon for a smoother consistency. Discard the vanilla bean and store the apple jam in a glass jar or container in the refrigerator for up to one month.
- To serve: Transfer the pastry cream and apple jam to 2 separate pastry bags. Snip off the ends and pipe equal parts pastry cream and apple jam into each profiterole.

- Add shortening and salt to boiling water, stir over medium heat until mixture boils again.
- Lower heat add flour all at once and stir vigorously until mixture leaves the sides of the pan.
- Remove from heat add 1 egg at a time beating in vigorously after each addition.
- Drop by tablespoonful onto ungreased baking pan.
- Bake 450'degrees F for 20 minutes reduce temperature to 350' degrees F.
- bake about 20 minutes longer.
- Remove and place on rack to cool.
- PASTRY CREAM: Place all ingredients in a saucepan.
- Over medium high beat, bring to a boil stirring constantly until thick.
- Allow to cool completely.

- Preheat oven to 450 degrees F (230 degrees C). In medium saucepan, combine shortening, salt and boiling water and heat until entire mixture boils. Reduce heat, add flour all at once and stir vigorously until mixture forms a ball. Remove from heat and add eggs, one at a time, beating thoroughly after each addition. Continue beating until mixture is thick and shiny and breaks from spoon.
- Pipe or spoon onto ungreased cookie sheet and bake 20 minutes, reduce heat to 350 degrees F (175 degrees C) and bake 20 minutes more, or until golden and sound hollow when tapped. Cool and fill.

Cream puffs are a family favorite, but I prefer them savory and not sweet, so this is my take on a unique appetizer that disappears quickly! Crab, chicken or other cooked meat could be used to replace ham.

- In a small bowl, beat the cream cheese, mayonnaise and milk until blended. Stir in the ham, cheese, pepper, chives, parsley and garlic. Cover and refrigerate until ready to use., In a large saucepan, bring the water, butter, seasoned salt, garlic powder and onion powder to a boil. Add flour all at once and stir until a smooth ball forms., Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. Stir in the cheese, parsley and chives., Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 400° for 20-25 minutes or until golden brown. Remove to wire racks. Immediately split puffs open; remove tops and set aside. Discard soft dough from inside. Cool puffs. , Just before serving, fill cream puffs with ham mixture. Sprinkle with additional parsley and chives.

- Spray a cookie sheet with Pam. 2 cookie sheets for minis. Place water in a saucepan. Cut the butter in. Sprinkle in salt ans sugar. Turn the burner to medium to melt butter. While water is heating, measure out flour and put in bowl. Add baking powder and stir with fork. When butter has melted, turn up heat and bring to a rolling boil. Turn the burner to low and dump in flour mixture all at once, stirring it in quickly with a wooden spoon. After a few minutes of vigorous stirring, the dough will clean the sides of the saucepan and begin to ball up. Pull the saucepan from the heat and turn off burner. Let the dough sit on a cold burner or counter to cool for 20 minutes. When the dough has cooled, break and egg and add it to dough. Beat it in with a wooden spoon. Continue to beat vigorously until egg is fully incorporated and dough is smooth. Add the remaining eggs, one at a time, beating after each addition until each egg is incorporated and the dough is smooth again. Test your dough by lifting out a spoonful and dropping it on top of the dough. If it stays on top and maintains its shape, it is ready to bake. If not, beat it some more until it does. Drop the dough by small spoonfuls onto the cookie sheets. 15 per tray. Bake at 400 degrees F for 30-35 minutes. Don't open the oven to peek! Finished cream puffs should feel firm to the touch and be golden brown. Cool puffs on the baking sheets, careful to keep them from drafts. Cut off the top third of each puff for the lid. Remove any filaments of dough inside the bottoms and fill the puffs with sweetened whipped cream, Emmy's Vanilla Custard, Great-Grandma's Chocolate Pudding, ice cream, or any flavor pie filling. Overfill a bit so the lids sit jauntily on top of the filling. Dust with powdered sugar and serve.
