- Preheat the oven to 325 degrees F (165 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble.
- Place Cheddar cheese into the bottom of the prepared dish and sprinkle with flour. Toss together with your fingers to distribute evenly. Sprinkle bacon evenly over the cheese.
- Beat eggs, milk, salt, pepper, seasoned salt, dry mustard, onion powder, garlic powder, and paprika in a bowl. Pour over the bacon and cheese.
- Bake, uncovered, in the preheated oven until the center is set and the top has browned, about 45 minutes. Let stand for 5 minutes before cutting and serving.

- In a small saucepan, bring rice and 1-1/3 cups water to a boil. Reduce heat; cover and simmer for 30-35 minutes or until rice is tender and water is absorbed.
- Meanwhile, in a large bowl, combine flour, baking powder and salt; cut in butter until crumbly. Stir in enough remaining water to form a soft dough. On a floured surface, roll dough into a 12-in. x 8-in. rectangle. Press into a 13-in. x 9-in. x 2-in. baking dish coated with nonstick cooking spray. Bake at 400° for 13-15 minutes or until very lightly browned.
- For filling, in a large nonstick skillet, cook the beef, onion, green pepper and garlic over medium heat until meat is no longer pink; drain. Add water, taco seasoning and cooked rice. Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes or until thickened. Remove from the heat. Stir in eggs and cilantro. Spread over crust.
- Cover and bake for 15-17 minutes or until filling is set. Cut into squares. Top with cheese, lettuce and tomatoes. Serve with salsa and sour cream.

- In a skillet, cook sausage and onion until the sausage is browned and the onion is tender; drain.
- Remove from the heat; stir in 1 cup cheese, spinach and mushrooms.
- Transfer to a greased 9x13 baking dish.
- In a bowl beat eggs. Add cream and nutmeg; mix well. Pour over sausage mixture.

- Have your bacon cooked and crumbled and set aside.
- Place vegetable oil (or you can use bacon drippings) in a non-stick 12" skillet and heat over medium heat.
- Pour potatoes into pan and press down evenly.
- Fry about 10 minutes until underside is brown and crispy.
- As carefully as you can flip potatoes over.
- If you can't do this in one piece, try to do it in thirds or fourths, but try to keep them from falling apart.
- Press potatoes down in pan evenly.
- Make 5 to 6 two inch holes, or openings into the potatoes, evenly spaced.
- Drop an egg into each hole.
- You can add a little butter to each hole before dropping the eggs in, if you like.
- Sprinkle salt and pepper over all.
- Sprinkle bacon and then cheese evenly over top.
- Cover until eggs are set.
- Serve in pan with toast or bagels on the side and enjoy!

This is surprisingly good for a lower-fat recipe. I actually had reduced-sodium bacon, reduced fat sour cream and cheese (only because it was on sale), but I used regular condensed cream of mushroom soup. I will post this as written, but feel free to substitute with items that are not low-fat or non-fat. I used a non-fat cheddar because I didn't have the four cheese blend, but I must confess that regular cheese melts better, and I prefer the texture. I'm not familiar with the classic melts for cheese blend, but my guess is it melts like regular cheese. I wanted it for breakfast so I skipped refrigerating overnight, and it still tasted delicious.
