- Combine all ingredients in a mixing bowl and blend with a wooden spoon until the herbs are evenly incorporated. Serve with toasted bagels.
HERB AND CHEESE SCONES
Steps:
- Make the White Soda Bread with Herbs dough. Stamp into scones, brush with egg wash and dip into grated cheddar cheese. Bake for 20 minutes in a 450 degree oven.
- Preheat oven to 450 degrees.
- In a mixing bowl sift together 1 pound flour, 1/2 teaspoon salt and 1/2 teaspoon baking soda. Make a well in the center. Pour most of the milk into the well. Using one hand, mix in the flour from sides of the bowl, adding more milk if necessary. The dough should be softish, not too wet and sticky. When it all comes together, turn the dough onto a well-floured counter. Wash and dry hands. Knead lightly for 1 second, just to tidy it up, flip over. Pat dough into a round about 11/2 inches deep and cut a cross into dough over the sides of the bread to let the fairies out. Bake in preheated 450 degree oven for 15 minutes, then turn down the oven to 400 degrees for another 30 minutes or until cooked. If in doubt, tap the bottom of the bread, it should sound hollow.
- Add fresh herbs to dry ingredients of white soda bread dough and proceed making dough as above. Shape into loaf or scones and bake as for soda bread. If making scones bake for 20 minutes in a 450 degree oven.
CHEESE AND CHIVE SCONES
A delicious low-calorie, low-fat version of the Classic Cheese and Chive Scones with healthy low-fat alternatives in the inclusion of the low-fat soft cheese and the skimmed milk. If you wish, you can also use reduced-fat cheddar, but this will seriously compromise the flavour in a way that the other two low fat alternatives do not. Adapted from Parragon's 'Low Fat'.

- Preheat the oven to 200ºC/400ºF.
- Sift the flour, mustard, cayenne and salt in a mixing bowl.
- Add the soft cheese to the mixture and mix together until well-combined.
- Stir in the snipped chives.
- Make a well in the centre of the ingredients and gradually pour in 31/2 fluid ounces of milk, stirring as you pour, until the mixture forms a soft dough.
- Turn the dough onto a floured surface and knead lightly.
- Roll out until 3/4 inch thick and use a 2 inch plain pastry cutter to produce as many rounds as you can.
- Transfer the rounds to a baking sheet.
- Re-knead the dough trimmings together and roll out again. Stamp out more rounds. You should be able to make 10 scones in total.
- Brush the scones with the remaining milk and sprinkle with the grated cheese.
- Bake in the oven for 15-20 minutes until the scones have risen and are golden.
- Transfer the scones to a wire rack to cool.
- Serve the scones with a low-fat soft cheese, garnished with chives.
- Chef's Note: For sweet scones, omit the mustard, cayenne pepper, chives and grated cheese. Replace the flavoured soft cheese with plain low-fat soft cheese. Add 23/4 ounces currants, sultanas or berries and 1 ounce caster sugar. Serve with low-fat soft cheese and fruit spread.
CHEDDAR-CHIVE SCONES
Steps:
- Preheat oven to 400°F.
- Whisk together flour, baking powder, sugar, and salt. Add chives and Cheddar, tossing to combine. Stir in cream with a fork until a sticky dough forms.
- Turn dough out onto a lightly floured surface and knead 8 times with floured hands. Halve dough and form each half into a 7-inch round. Brush tops of rounds with additional cream and cut each into 8 wedges.
- Arrange wedges about 1/2 inch apart on an ungreased large baking sheet and bake in middle of oven until golden brown, about 20 minutes. Cool on a rack.

- Preheat oven to 220°C Line a baking tray with non-stick baking paper.
- Sift flour into a large bowl. Add salt, cayenne pepper and pepper. Mix well to combine. Add butter. Using your fingertips, rub butter into flour mixture until mixture resembles fine breadcrumbs.
- Add herbs and cheese to flour mixture. Stir well to combine. Add milk. Mix with a flat-bladed knife until a soft dough forms. Knead lightly on a floured surface. Pat dough into a 2cm-thick round. Using a 5cm cutter, cut into 12 rounds. Place rounds close together on a baking tray.
- Bake for 12 minutes, or until golden and well-risen. Set aside on baking tray to cool slightly.
- Combine sour cream, chives and salt and pepper in a small bowl. Halve scones. Top 12 halves with shaved ham and chive cream. Sandwich together with remaining scone halves. Serve.

- Preheat oven to 350°F.
- If using small brioches, cut off tops (about 1 inch). On baking sheet arrange tops and bottoms of brioche, cut side up, or slices from loaf in one layer. Toast brioche in middle of oven until golden.
- While brioche is toasting, in a bowl lightly whisk together eggs, chives, and tarragon. In a non-stick skillet heat butter over moderate heat until foam subsides and cook bell pepper, stirring, until softened. Add eggs and cook, stirring, until just cooked through, about 3 minutes. Stir in sour cream and pepper and salt to taste and cook, stirring, until just heated through.
- Divide brioche and eggs between 2 plates and top with Chive Sour Cream.
