The green sauce in this recipe is similar to pesto, but lacks cheese and has a bigger punch of acidity. The mild flavor of pistachios enhances the natural sweetness of the lightly charred beans, though the more traditional pine nut would also work well for this dish.

- Pulse 1 cup fresh basil, 1/4 cup each fresh parsley and pistachios and 1 scallion in a food processor. Pulse in 3 tablespoons olive oil, 2 teaspoons red wine vinegar and a pinch each of salt and pepper. Cook 1 1/4 pounds green beans in olive oil in a large nonstick skillet over medium-high heat until browned, 7 to 8 minutes. Add a splash of water and a pinch of salt and pepper. Cook, tossing, until crisp-tender, 1 to 2 minutes. Toss with the sauce.

- Melt 2 tablespoons butter in a skillet over medium-high heat. Add 8 ounces trimmed green beans and 4 carrots (cut into sticks); season with salt and pepper. Add 1/2 cup chicken broth; reduce the heat to medium, cover and simmer until tender, 6 minutes. Add 1/4 cup chopped chives, 1 tablespoon chopped tarragon, 2 teaspoons white wine vinegar and 1 teaspoon sugar. Cook 3 more minutes.
HERBED GRAPE TOMATOES
I found this recipe in a Weight Watchers magazine. I changed it up a bit because I didn't have fresh herbs. Was still delicious. If you use the fresh herbs use 1 tablespoon. The original also had 1 tablespoon fresh parsley and not the dried cilantro that I used.

- Preheat oven to 425 degrees.
- Combine all ingredients in a large bowl and tranfer to a large rimmed baking sheet.
- Bake at 425 degrees for 13 minutes or until tomato skins pop and tomatoes begin to lose their shape. Can stir after 8 minutes, but I didn't.

- Add enough water to barely cover beans.
- Add salt and pepper and bring to a boil.

- Remove cover and increase heat to thicken the liquid (about 3 minutes).
- Serve warm or cool.

- In a medium bowl combine tomatoes, fresh basil, fresh oregano, green onions, garlic, salt, and pepper.
- Let stand at room temperature for 30 minutes to 2 hours.
- In a medium saucepan combine undrained red or kidney beans and undrained great northern or navy beans.
- Bring to a boil; reduce heat- Cover and simmer for 2 minutes or till heated through- Drain.
- To serve, toss warm beans with tomato mixture.
- Sprinkle cheese over bean mixture.
- If desired, garnish with fresh basil.
- Serve warm.
