Herring Canapés with Horseradish Cream image

Steps:

  • Remove 20 herring pieces and pat dry, removing any onion pieces. Place herring pieces on plate and refrigerate until assembly.
  • In a small bowl, combine cream cheese and horseradish, set aside. In another small bowl, toss diced potatoes with 1 Tbsp. fresh dill.
  • To assemble - spread a thin layer of horseradish mixture onto a slice of the bread. Next layer approximately 2 tsp. of the potato mixture and top with an even layer of herring (two pieces). Garnish with a small dollop of the cream cheese mixture in center of canapé, and top with a small amount of the fresh dill. Repeat with remaining nine slices. The canapés may be made in advance and kept delicately covered and chilled.

1 cup potato, cooked and diced in ¼" cubes (may used canned, drained and diced)
2 Tbsp fresh dill, snipped into small pieces with a scissors, divided
10 slices cocktail rye bread, 2" x 2" x ¼"

In Sweden various combinations of matjes herring - a type of herring cured in a spiced sweet-and-sour brine - are eaten with the first tender white potatoes of the season. Can be prepared in 45 minutes or less.

Steps:

  • In a saucepan cover potatoes with salted cold water by 1 inch and simmer until just tender, 10 to 15 minutes. Drain potatoes in a colander and cool completely. Cut potatoes crosswise into 1/4-inch-thick slices.
  • Rinse herring under cold water and pat dry with paper towels. Cut fillets diagonally into 1/2-inch-thick slices.
  • Arrange a herring slice on each potato slice. Top each canapé with about 1/2 teaspoon sour cream. Top half of canapés with egg and half with beet. Sprinkle canapés with scallion.

3/4 pound small boiling potatoes (preferably new)
3 pickled matjes herring fillets (about 6 ounces)
1/2 cup sour cream
1 hard-boiled large egg, chopped fine
1/4 cup chopped drained canned beets (about 1)
1 scallion (white and pale green parts only), chopped fine

Rose Beef Bites with Horseradish Cream image

Steps:

  • 1 Preheat the oven to 350°F. Slice the baguette into 18 thin circles. Brush both sides of each slice with melted butter. Place the baguette circles on a baking sheet and toast them in the oven for about 7-10 minutes, turning halfway through, until brown, then let cool.
  • 2 To make the horseradish cream, combine the crème fraîche or sour cream with the horseradish and season to taste. When the baguette circles have cooled, place a spoonful of horseradish cream on top of each one.
  • 3 Cut each slice of beef in half lengthwise, then roll it up to form a pretty rose spiral. Place a roll of beef on top of each baguette circle, then garnish with watercress leaves.

1 small baguette
2 tablespoons butter, melted
9 thin slices of rare roast beef
18 watercress leaves
For the horseradish cream
1/2 cup crème fraîhe or sour cream
1 tablespoon grated horseradish
salt and black pepper
