HOMEMADE CANADIAN BACON
Been wanting to start making my own and saving it here for safe keeping. I haven't tried this yet. Update: I have made this now after reading Wing Man's review. I have made it several times over the last year or so and it is great. I just never updated.

Steps:
- Bring all ingredients except loin to a boil for 10 minutes.
- Trim fat from loin.
- Cool the brine to 38 degrees F and strain if desired.
- Add loin and put a plate on top to keep submerged.
- Cover,Put in fridge and let sit 7 days turning once at 4 days.
- Remove and rinse in cold water. Soak for 45 minutes in cool water.
- Get smoker to 225 Degrees F. Use a good hardwood of choice.
- For breakfast bacon cook to 145 degrees F.
- For finished bacon cook to 155-160 degrees F.
- Cut to desired thickness. 1/4" for me.
- Keeps in fridge same as commercial bacon.
- Keeps in freezer longer if left unsliced.

ROASTED CANADIAN BACON

Steps:
- Put oven rack in middle position and preheat oven to 400°F.
- Boil cider in a 1-quart saucepan until reduced to about 1/2 cup, 10 to 12 minutes.
- Heat butter in a 1 1/2- to 2-quart flameproof casserole over moderate heat until foam subsides. Add onion, apples, thyme, salt, and pepper and cook, stirring, until onion is softened, about 5 minutes. Nestle bacon in apple mixture.
- Pour cider over bacon and roast, uncovered, until heated through and beginning to brown, about 20 minutes.
ORANGE-GLAZED CANADIAN BACON
Steps:
- In an 11x7-in. baking pan coated with cooking spray, arrange bacon in two rows, overlapping the slices., In a small saucepan, combine the orange juice, 4 tablespoons brown sugar, mustard, cardamom and pepper until blended. Bring to a boil over medium heat, stirring frequently. Boil for 1 minute. Pour over bacon; arrange bay leaves on top., Bake, uncovered, at 325° for 20-25 minutes. Discard bay leaves and all but 1/4 cup pan juices. Sprinkle remaining brown sugar over bacon. , Broil 4 in. from the heat for 3-5 minutes or until bacon is glazed and bubbly. Serve immediately.

BAKED CANADIAN-STYLE BACON

- Preheat oven to 325°. Place bacon in a greased 11x7-in. baking dish. In a bowl, combine brown sugar, pineapple juice and mustard. Pour over the bacon. Cover and bake 25-30 minutes or until heated through.

Haven't tried this one yet, but hopefully soon. Been almost 3 years finally tried it and if I could give this recipe a 5 star rating I would.

Steps:
- Curing:.
- Trim fat from pork loin.
- Mix Morton Tender Quick and sugar.
- Rub mixture into the loin.
- Place loin in "food grade" plastic bag; tie open end.
- Refrigerate and allow to cure for 3-5 days. Remove from cure.
- Soak loin in cool water for 30 minutes; pat dry.
- Refrigerate uncovered to dry slightly before cooking.
- Cooking:.
- Cut into 1/8 inch thick slices. Preheat skillet; brush with oil. Fry over low heat, turning to brown evenly, about 8 - 10 minutes.

CANADIAN-BACON STRATA
This savory breakfast pudding looks a little like a pizza when it comes out of the oven. It can be prepared the night before through step 2 and baked the next morning.

- Butter a 2-quart shallow baking dish (oval or square); set aside. In dish, alternately arrange, cut side down, muffin halves and Canadian bacon. Sprinkle with cheddar and Parmesan cheeses. Set aside.
- In a large bowl, whisk together eggs, milk, mustard, 1/2 teaspoon salt, a pinch of pepper, and hot sauce until combined. Pour over muffins and bacon; cover tightly with plastic wrap. Refrigerate at least 2 hours and up to overnight.
- Preheat oven to 350 degrees. Place baking dish on a rimmed baking sheet; remove plastic wrap. Bake until puffed and set in the center (see note below), about 1 hour and 30 minutes. (Tent loosely with foil if strata starts to brown too quickly.) Let stand 10 minutes before cutting and serving.

- Mix all ingredients together in a small pot, except the pork loin, over medium low heat until dissolved. Once it's dissolved, let it cool a bit. Use your meat injector and inject the brine about every 1 inch or so, from the top, about halfway down. Place the meat in the brine, and top with a saucer to keep it from floating up out of the brine.Brine in your fridge for 12-14 days.
- After 12-14 days, you'll want to test the salt level: Remove the loin and slice of a piece and fry it up. If it's too salty, soak it in filtered water for a few hours. Test it again. With the mixture above, it was perfect without soaking, but you should test it to be on the safe side.
- If you like what you taste, it's time to smoke it. Fire up your smoker, however you do your smoker, and smoke the loin at 225° for about 1.5 hours, or until the internal temperature reaches 145°. Remove from the heat.That's it! Enjoy!
